Chocolate Sandwich Cookies II

This was my first time making cookies from cake mix. I am not much of a fan apparently but the boys in my family loved them so I rated them with 3 stars instead of the 2 I would have given this recipe. The cookie had a gritty texture from the cake mix. They were so soft they seemed unbaked. I would call these snack cakes not cookies. Sort of like the cheap little Debbie things you can buy at the store. I added peanut butter to the filling and it was super yummy. These are a cool treat to pack in the kids lunches. If you like snack cakes make this reipe.

Blackberry Peach Pie

This was excellent! I didn't have fresh peaches so I substituted canned. My family all most consumed the entire pie in one sitting. I will make it again with real peaches. My husband said,"I am buying fresh blackberries again if this is what happens to them. I don't care how much they were."

Famous Butter Chicken

This recipe was fantastic!! I took the tips from the other reviewers and my kids could not get enough. The only thing I did different was to use breast strips instead of full breasts cut in half.

LOL!!I pulled off a couple of shopping bags worth of grapefruits just yesterday(being a grape grower I think we need to change the name of grapefruit!!), squeezed them and made vodka "Salty Dogs". Yummo!

Fragrant Chicken Curry

Loved it! Chose this recipe to try because of the coconut milk - and then discovered I didn't have any when I was well into making it. Used half milk and half half-and-half and that worked just fine. Topped with toasted coconut, raisins, toasted almond slivers, chutney, and chopped green onions. Served with rice and very lightly candied carrots. Delicious meal!

Skinny Fries

Yeah, you must use olive oil. I started making these sometime back to cut down on "bad" fats. Cheap, fast and easy side too! I was trying to clone the garlic fries at Raider games. Try fresh finely minced garlic and finely minced fresh rosemary, S & P, paprika... whatever turns your crank. Even a topping of parmesan cheese.

Indian Chicken Curry II

I loved this, but will not put in any of the lemon juice at the end the next time I make it. It was all I tasted. The recipe itself is fantastic - spicy and complex. As good, if not better than the indian restaurant near my place. With the cayenne pepper I thought it was spiced just about right, but I do like my indian food hot. As mentioned, serving 4 people with this recipe is pushing it. Maybe 2 small kids and 2 adults, but 4 adults - no way.

Roast Chicken with Rosemary

I haven't made this recipe per se. However, this is the way I was taught by my Mother. Exactly the way that PINTSIZELINDA described. To a "T"! Indeed, we had it just last night. I taught my wife and she does at least as good a job as I. Being of Armenian decent I made my family's rice pilaf recipe with carrots vichey and broccolli and Mid-East/Med/Greek salad and soudough loaf with olive oil and balsamic. Let me tell you... life doesn't get any better than that. Cheap to with chicken bought at $.67/pound. $10.00 spent on dinner for 2-8 people is unreal.

Cinnamon Sugar Tortilla Delight

Yummy and right out of the old, old 4-H cookbook #1. But really Jen G, repeat after me. Fat is still fat as far as calories go. 13.2 grams of fat @ 9 calories per gram is just shy of 119 calories. Butter flavored spread is the same as butter except it doesn't taste very good. It just qualifies as low fat but still it's a lot of calories. Also would be good with low fat cream cheese.

Best Toffee Ever - Super Easy

This really was very easy to make. It was my first attempt at toffee and I was a little nervous, but it turned out great. As tempting as it is to keep stirring it, it really does make a big difference to just let it simmer...the bubbles will stir itself. Very tasty!

Peppermint Meringues

These are really yummy. Besides the 1.5 hour baking time, they're super easy to make. I doubled the recipe and it gave me about 70 meringues. I didn't follow the one inch apart rule...they don't expand when you bake them, so I just put them as close as possible to save room on the cookie sheet. I used my coffee grinder to crush the peppermint candies (I used the little round ones because that's what I had on hand) and it turned into a pretty pink powder that I dusted on top. they make great little holiday treats.

Sparkling Holiday Jam

This stuff is wonderful - and it really does sparkle! Made a batch this morn in about an hour - so easy. Used frozen strawberries (full bag: 40 oz) and fresh cranberries. Had about 3/4 cup of seedless puree of raspberries and added that too. Also added about 1/4 c lemon juice and 2 cups short of the full 5# of sugar. Great texture.

Slow Cooker Beef Stroganoff I

I followed some of the reviewer's suggestions by doubling the golden mushroom soup and water. I browned the beef with onions and then mixed half a pouch of liption onion soup mix with a beef bouillion. Added salt, pepper and garlic and cooked on high for about 5 hours. It was delish! Served with noodles. I also added sauteed mushrooms.
