Eggplant Tomato Bake

I liked this recipe! I baked the pasta noodles in with the eggplant, tomatoes, and cheese. And used olive oil instead of peanut oil and added some garlic when I fried the egg plant. Loved the fried eggplant by itself! Definetly gonna use that as an appetizer in the near future. Thanks for sharing=)

Flavorful Flounder

Awesome recipe!!! the flavor was amazing and went wonderful with white wine. I didn't change the recipe at all and both my boyfriend and I were wowed by the outcome. making again soon for company. thanks for the recipe=)

Cake Mixes from Scratch and Variations

I made the yellow cake following the advice of other users. I increased the milk to 1 1/2 cups and used canola oil instead of shortening. it turned out moist and wonderful! I also frosted it with the Almost Professional Buttercream Icing from this site. It is great. I give it 5 stars with these modifications.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Great recipe - instead of starting out on the grill, i smoked the pork loin on Pecan at 235F for 1 hr, then moved over to the grill. I got a nice grilled glaze after about 8 mins on each side, after which i let them rest, wrapped in foil for 30 mins.

Avocado and Cilantro Soup

Basically i couldnt resist making this into guacamole - I doubled the cilantro, added some heavy cream and garlic salt as was suggested earlier, but when it cam to adding the stock I stopped at ~2 cups- i shouldnt have even added this much. It compromised the creaminess and avocado flavor.

Grilled Peanut Chicken

I thinned the marinade with 2 tblspoon water and was pretty liberal with the curry and cayenne. Prepared as kabobs with thigh meat, red and green bell peppers, onion, and hot peppers - these were the best kababs i've ever made!!

Old Bay® Crab Cakes

This is a very good start, but needed some additional spices to avoid blandness: i added 1/4 tsp dry mustard, 1 tsp dijon, 1/8 tsp fresh ground pepper, and a tablspoon of finely minced green onion. I also replaced the 2 slices of dried bread with ~1.25 cup of fine dried bread crumbs, which makes a nice consistency.

Grilled Mushroom Sandwich With Citrus Mayo

There are some good ideas in this recipe, including the citrus mayo, however it didnt impress. Next time i wont use balsamic vinegar in the marinade, and i'll try goat cheese to give it more of a kick.

Rich Chocolate Frosting

I cut this recipe in half and it was plenty to frost a two layer 9" cake. The frosting was really, really rich--duh, as indicated by the title. Next time, I may use this to just use in between layers, but to frost an entire cake with it was just a bit much. Also, it didn't seem to pipe very well, but I could have added to much milk. Still very, very good!

Fresh Strawberry Pie I

I took this pie to work and its was gone by the time I went home. But, personally, I think there was too much Jello. The pie reminded me a bit of a Jello fruit salad. So next time I'll just ease up on the "glaze" a little.
