Chantal's New York Cheesecake

I made this exactly as stated, except that I topped it with blueberries (baked on). I cooked a 12 pkg of blueberries with 2tbsp flour and 4 tbsp cold water. I cooked it until it was thickened, about 10 minutes. It was wonderful...and perfectly cooked. My only problem was I didn't have a springform pan, so I used a cake pan and the crust ended up being soft and sticking to the bottom (although i greased it.)

Cabbage Roll Casserole

This is a yummy recipe. I compensated for the blandness by using 1 lb of hamburger and 1 lb of Italian sausage. I also sauteed the onions with a chopped red pepper, then added the meat to brown. I used a medium to med.-large red cabbage (because we prefer red cabbage) and brown rice. Mine boiled over in the oven so I would suggest you place a cookie sheet or jelly roll pan underneath while cooking. Everybody liked it at my house. Will make it again.

Honey-Poached Quince Pie

Absolutely delicious! I hadn't even heard of quince until a few days ago. I doubled the recipe and actually had enough sauce for 2 deep dish pies. I used Pillsbury pie crust and rubbed melted butter onto the top of the pie and generously sprinkled white sugar on it as well. The bake time was less for me, was ready about halfway through the 45 minute time. I highly recommend this recipe! Sweet/tart yumminess!

Pork and Green Chile Casserole

I had some peeled roasted green chile left over & didnt want it to go bad, so i gave this recipe a shot. Since i didnt have instant brown rice, i cooked some of the normal kind in a pressure cooker for 18 mins and added it to the casserole (nixing the additional water). The result was a very nice burrito stuffer.

Rasta Pasta

Spicy, flavorful pasta! I used the blackening spices as a dry-rub for grilling the chicken breasts on a George Foreman grill. I let the meat rest for ~10 mins while sautee'ing the vegetables, then i cut the chicken breast into bite-size pieces and added them to the vegetables. I had sun dried tomato pasta sauce on hand, and it seemed to go very well. This is a dish that is even better as leftovers.

Kona Chicken

Steak Pie

Going northern european style is great for the fall! I added 2 chopped parsnips, a chopped turnip, ~1 cup chopped carrots, and a roasted bulb of garlic with the onions, and 1/4 cup grenache/syrah once the vege's were tender. Spiced (to taste) with Bay leaf, herbs de provence, paprika, celery salt, tumeric, fresh ground mixed peppercorns & increased the worchestershire to 2 tsp. Next time i'll include a couple fingerling potatoes.

Chicken Salad Balsamic

Butternut Squash and Turkey Chili

I was very hesitant to add squash to chili, but i went for it (Acorn instead of Butternut). I forked the outside of the squash and baked for 15 mins at 400F before peeling and adding to pot. I replace the diced tomatoes & tomatoe sauce with 2 (10oz) cans of Spicy Rotel and a small can of tomato paste and 1 cup of broth. The recipe started out pretty bland, but was improved with additionalchili powder (total: 2 tblsp Chimayo Red + 2 tsp Pasilla)

WOW!!! sooo delicious! I had to tweek the ingredients according to what i had on me... I used 1 lb ground beef & 1 lb ground spicy sausage, 2 cans of tomato sauce, 2 jalapenos diced, and lots of cayenne pepper! my fiance is still raving about it! thanks for sharing=)
