Quick Pumpkin Pudding

Really easy and satisfying: we used banana cream sugar fee pudding mix as it was on-hand and added chopped pecans for a crunchy topping: a great last minute dessert!

Hearty Ham Casserole

Reviewed: Jan. 21, 2008
This was an awesome way to get rid of some leftovers in the fridge. I used some leftover ham, cubed potatoes, carrots, celery. I did one small onion instead of what was suggested and did about 2tbls of fresh oregano, 2tbls of basil, 2tbls marjoram, and 2tbls parsley and I sauted that in with the onion, garlic and celery in the butter. Very tasty and flavorfull.

It was very good! I made them as gifts to friends for Christmas. But I did need to cook them for 15min. instead of 10min. But over all very yummy:)

Pan Fried Halibut Steak with Light Green Sauce

Reviewed: Dec. 4, 2007
With the exception of using chicken broth in place of wine and adding a tad more cream, this may have been one of the best fish dishes we have ever tasted. I would order this over and over in a restaurant.

Crumb Apple Pie

Reviewed: Dec. 4, 2007
I was so proud how well this pie turned out at Thanksgiving this year. I am a bit new to baking in general. I took picture of it I thought it looked so good! We served it along with some French Vanilla ice cream.

Quick Berry Sauce

Reviewed: Dec. 4, 2007
This topper went too well on top my vanilla bean cheesecake with chocolate crust. I made this more than once and the second time I strained the raspberries through a sieve until a fresh raspberry sauce was made. I also left out the other berries. It's a process to get this smooth sauce, but worth it.

Creamed Spinach

Reviewed: Dec. 4, 2007
This dish was way too yummy. I added a few extra indregients(cream and ricotta cheeses), topped with both shredded and grated parmesan cheese and baked it off in the oven until bubbly and golden. I also subtituted the whole milk with evaporated milk and used an extra 1/4 cup of it.

Flaky Food Processor Pie Crust

I was able to make this work actually pretty well, for both my pumpkin and apple pie, this year at Thanksgiving! I would maybe use a spice for flavoring next time though.

This was really delish! I doubled the recipe and added one pack of Mahatma Spanish Rice. Everyone in the house loved it and it was very comforting during a rainy night.
