Artichoke & Spinach Dip Restaurant Style

Reviewed: Nov. 22, 2009
I had to laugh when I stumbled across this recipe and it's rave reviews. This is basically the same recipe Applebees uses for their Spinach & Artichoke Dip. I worked at one and watch the cooks prep this all the time. Of course it is awesome, everyday hundreds of people order it from us all across the USA. Ironically I was looking for a "fancier" dip recipe but apparently (from the the reviews) this is the way to go. So if you like the Spinach & Artichoke dip from Applebees then this is definitely the recipe for you!

Herbed Potato Soup

Reviewed: Nov. 19, 2009
Only 4 stars because I changed so much. I boiled 4 baker potatoes cubed w/skins in 5c. chicken broth. I sauteed 2 lg. red onions & 4 stalks of celery in 3/4c. butter, added 1/2c. flour, 2tsp of salt, thyme, & oregano, & 1/2 tsp. pepper. I cooked the rue for a couple of minutes & then added 2c. half& half, & 1c. milk. I let that simmer for 10 min. Then I added the cooked potatoes & broth. I ran the immersion blender through the soup for about 30 seconds, leaving some potato chunks. I ended up adding about 1 tsp of seasoning salt and then let the soup simmer for about an hour. My family though it was awesome. This recipe yielded enough for a family of three to eat as a main course with a couple of servings leftover.

Chicken and Corn Chowder

Reviewed: Nov. 16, 2009
was a really easy recipe to make and to adjust. I used fresh corn and added potatoes and chicken. Also, I used leftover ham lunchmeat instead of bacon and it was fabulous! I took it to work and everyone loved it. Make a large batch so I ended up freezing leftovers for future lunches!

A Jerky Chicken

Reviewed: Oct. 9, 2009
I marinated the chicken for 4 hours, grilled it, and then tossed it with a green salad. The flavor was good but not very strong. The extra sauce on the top of the chicken is really important if you really want to taste the marinate.

Spicy Baked Sweet Potato Fries

Reviewed: Oct. 9, 2009
I used actual sweet potatoes which are not orange(those are yams). I sprayed a stoneware cookie sheet with olive oil spray & sprinkled with taco seasoning. Pre-cooked the potatoes in the microwave for 5 min and the sliced uniformly. Laid out in a single layer on the sheet and sprayed with the olive oil and sprinkled them lightly with the seasoning. Baked at 400 for 25 min, then flipped and baked for another 20 min. They were slightly crunchy and pretty good. Next time I will broil them for a couple minutes for extra crispness.

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

Reviewed: Sep. 30, 2009
I used halibut and marinated it in the honey-cumin sauce. I grilled the fish instead of battering and frying it and used the leftover marinate to baste the fish as it cooked. My family loved it. The chipolte mayo was great and we didn't think it was too spicy.

Pesto Sauce

Reviewed: Sep. 29, 2009
This is the exact recipe my mom told me for making pesto. However, being a pesto snob and also being allergic to walnuts, we went more traditional and used pine nuts instead of walnuts. Makes a great freezer pesto, just leave about a half inch of room and then fill to with 1/4 inch of olive oil, or enough to cover the top of the pesto. Throw a lid of it and freeze.

Grilled Chicken Thighs Tandoori

Reviewed: Sep. 29, 2009
I made this last night and it was wonderful. I baked it since our BBQ broke the night before and it was wonderful. I had skinless thighs which produced little fat. We chopped up some tomatoes and added them to the last 5 minutes of cooking. It was wonderful. We served it over rice with peas. Very healthy and very yummy. Now I gave it 4 stars because I love hot spices, I might add cayenne next time to add a kick.

Steak Salad

Reviewed: Sep. 22, 2009
We had some steak, tomatoes, and lettuce and threw it together with the salad dressing from this recipe. Lacking red wine vinegar, we used apple cider ving. and it was wonderful. I liked it so much, I made it the next day for lunch. Definitely a keeper.

To Die For Blueberry Muffins

I followed the recipe exactly. I used a jumbo muffin tin and it yielded 4 huge muffins. I had to bake them for 30 minutes and they were perfect. I will be making them again and again.

Asian Salmon

Reviewed: Sep. 3, 2009
This was good, my 5 year old who automatically rejected it liked it once he tried it. I baked for 20 min and broiled for 7 and it was perfect. My only change next time is that I am going to take the leftover marinade and make a sauce to drizzle on top so that the flavor is more dominant, it is more like an accent the way it is. I will also cut down on oil, it definitely did not need 2TB. I made 4 small pieces and the marinate amount was perfect but I will double it when I make the sauce.

Better than Sex Cake IV

Reviewed: Aug. 26, 2009
I followed the recipe exactly other than leaving off the coconut. Maybe not better than sex but definitely really good. Next time I will try making them in cupcakes. Also I think Cool Whip would actually go better with this recipe than homemade whipped cream and save a step.

Bok Bok Popovers

Reviewed: Jul. 23, 2009
I chopped the chicken into bite-size pieces, cooked it with a little sesame oil and minced onion. I also added green chilies to the mixture. The first batch I made w/2 triangles but popovers came out huge, more like a hot pocket. I made the rest of the the batch with 1 triangle and they were plenty big. My husband really liked them, I will make this again. It is a little time consuming.

Taco Seasoning I

Reviewed: Jul. 23, 2009
This was great. I used it in a chicken tortilla soup I have made a ton of times and everyone wanted to know what I did to finally perfect the recipe. If I was going to use this seasoning to cook for my son then I would have made it a little spicier.

Mini Pineapple Upside-Down Cakes

Reviewed: Jul. 23, 2009
They were good, I left off the cherries and stuffed the middle of the pineapple rings with chopped up pineapple. They were simple, tasty, and quick. Don't forget to flip the pan over right away or else you don't get the yummy brown sugar sauce on top.

Plain Cake Doughnuts

Reviewed: Jul. 23, 2009
I made the dough the night before and used a 1oz cookie scoop to make doughnut holes per someone else's review. Well 1oz was WAY to big & in order to not end up w/ raw dough in the middle I had to burn the outside. I ended up make 1/2oz balls and even still the outside ended up very crunchy by the time the middle was cooked. I rolled them in cinnamon/sugar mix however they were sweet enough plain. If they weren't so done on the outside they would have been perfect. I will be trying other recipes before I come back to this one.

Erin's Indonesian Chicken

Reviewed: Jul. 22, 2009
I followed the sauce recipe exactly & cooked the chicken in sesame oil instead of olive oil. The sauce thickened up nicely however the finished product needs some serious help. The lemon juice was very prominent, I did use fresh squeezed & that might have been part of the issue. My husband thought it was ok but I thought it tasted like chicken/green beans dipped in peanut butter mixed with lemon juice, not flavors that go well together. It stuck to my tongue & I couldn't finish. Next time I will use more broth & less peanut butter to thin it out a little, leave out the lemon juice, and maybe replace it with coconut milk, I'm not sure but this recipe needs to be changed before I could eat it again.
