These turned out great. To save time, I bought the already shredded "Simply Potatoes" in the refrigerator section of the grocery store.

This was delicious! I used less potatoes as recommended by other reviews and I used regular bacon instead of bacon bits.

Famous Butter Chicken

Reviewed: Nov. 11, 2009
This was really good, even my picky 9 year old ate it! The only changes that I made was I added parmesan cheese to the cracker mix and I didn't have garlic salt so I added salt and garlic power. We only had chicken tenderloins so I adjusted the baking time.

Easy Pumpkin Muffins

Reviewed: Nov. 5, 2009
Great recipe, but I did alter it...I added two eggs, 1/3 cup melted butter, and my home-grown butternut squash (15 oz). Also, I skipped the cloves and added a tablespoon of ginger powder. These were so darn good that all 18 muffins were gone in 24 hours (I have teenagers who swim daily).

Definitely use the green food coloring and double the almond extract for better flavor. These were a BIG hit! I used pomagranate jelly to stick on the 'bloody nails' before baking. Big hit with the neighbor kids and Grandma, too!

Fresh Pumpkin Pie

I made this with one of my butternut squash and it was fantastico!! Hot out of the oven with vanilla ice cream made it heavenly. I must add that I do not use crust, I just spray the baking dish with pam and pour in the filling. Less calories, less work!! My family gobbled this one up!

Oven-Roasted Potatoes

I have been searching for an oven roasted potato recipe for a few years that didn't call for a packet of onion soup. :) This is our new favorite! Thanks. The only addition I made was some minced dried onion. Excellent!

Alfredo Blue

Reviewed: Oct. 26, 2009
This was good but a little too blue cheesy for my tastes. I'll probably make it again but just add a sprinkle of blue cheese to the sauce for a little flavor instead of the over powering blue cheese flavor this sauce had. I served it over artichoke raviolis from Trader Joe's.

Potato Pizza Casserole

Reviewed: Oct. 25, 2009
Delicious!! We couldn't find the cheese soup so instead we bought a box of velveeta mac n cheese and used the cheese sauce pouch. We also doubled up the sauce cause we like it saucy. Also, we cooked for 20-25 mins uncovered after removing the foil to make sure the potatos were cooked.

Zucchini Cobbler

Reviewed: Oct. 22, 2009
My family has been making this for years at Christmas but I have one big change to make to this recipe - for those that say its not quite right and doesnt taste like apple or its too bitter--When cooking the zucchini with the lemon juice, also ADD 1/2 cup of BROWN SUGAR. This takes away the tart, adds sweetness and makes the zucchini more closely resemble apples. The kids in our family have been fooled by this dessert for years thinking it was apple. Hope that helps!

Simple Baked Apples

Reviewed: Oct. 3, 2009
I didn't have walnuts or raisins and forgot (whoops!) to add the milk. After baking the apples for 45 minutes they still seemed firm to me, so I stirred them and put them back in for 5 minutes. I repeated that two more times and they were finally soft enough. These were awesome! So mildly sweet and perfectly tender. To those out there who found the sauce to be too rich I would suggest "forgetting" the milk. =)

Winter Minestra

I only used one can of beef broth and added a lot of garlic salt and about 1 tsp of Italian seasoning. I also omitted the bag of frozen veggies but took the advice of a prior reviewer and added about 1 c. of red wine. My husband loved it! Topped with aged parmesean and served with fresh beer bread!

Apple Cinnamon Oatmeal Bread

Reviewed: Sep. 8, 2009
A very good staple for making a healthy breakfast. I subbed 1/2 c. of baking Splenda for 1/2 of the sugar and 1/2 c. of flax seed for 1/2 c. of the flour. I also used sugar free applesauce and lower sugar apple cinnamon oatmeal. I made muffins with the batter instead of the loaf - 19 minutes at 375 degrees. My husband has already eaten two since they came out of the oven 20 minutes ago. I will absolutely be making these again!
