Layered Mexican Dip

If you use Greek-style plain yogurt, it is really good. Thicker and creamier, not runny like traditional yogurts.

Cedar Planked Salmon

Used the cedar planks we got at Costco; the marinade for the salmon is awesome. Didn't have green onion on hand, so used finely chopped red onion. It was simple and absolutely the only marinade & method of cooking I will use for salmon, in warm weather that is! Great for company.

Cinnamon Sugar Tortilla Delight

Very good. If you spread the tortilla with "Nutella", a hazelnut/cocoa delight, it is super good as a variation. Also, the spread is low fat

Rhubarb and Strawberry Pie

I fixed this pie exactly as the recipe stated...it turned out perfectly. I chopped the fresh rhubarb into a small dice. I let the strawberries & rhubarb "sit" in the flour & sugar mixture for 30 min. before putting in the crust. I also let it sit in the turned off oven after baking for about 30 min., then let it sit on a rack overnight. Just juicy enough, not runny at all.This pie was wolfed down at the Memorial day barbeque I went to yesterday and everyone loved it.

Black Pepper Cookies

I have made these at Christmas many times; they are a German recipe, called Pfefferneuse(sp?). I rolled out the dough and cut them into Christmas cookie shapes, then made a decorator frosting and just piped the white frosting around the edges of the cookie just to emphasize the shape and add a bit of sweetness. Always a big hit! A great spicy cookie.

Chicken Quesadillas

I skipped the step of putting the chicken pieces on a baking sheet & broiling...not sure why that would be necessary. I stir fried the chicken in the hot oil just until not pink, added the vegetables and continued to cook until the vegetables were softened, then proceeded with rest of recipe. I also made my own fajita seasoning, which I found online, not this site. Definitely use SMOKED paprika, it is worth tracking down (found mine at Marshall's!)lends a nice, subtle smokey flavor. Overall a DELICIOUS RECIPE.

Chocolate Cherry Cake I

I first had this cake years and years ago at a Tupperware party (I think...some kind of home party anyway) and just loved it. I am glad to find the recipe here as I misplaced the recipe and couldn't remember exactly how to make it. The boiled frosting poured over the cake is delicious, at least in my opinion!! A very moist easy cake to make.

Don't most people know that mayonaise and miracle whip are not the same thing? Just wanted to add that as someone mentioned to not use miracle whip but use best foods....they are not interchangeable at all, unless you like it more sweet and tart by using miracle whip.

Enchiladas

This is such a great recipe to expand on, I LOVED the idea of adding cream of chicken soup and yogurt (or sour cream in my case) to the filling which is why I chose this one to try. I used 1 pound of ground beef to which I added 2 cloves of garlic and minced onion along with the green onion and taco seasoning, and 1 small can green chiles since I didn't have any jalapenos, which was plenty for the 7 flour tortillas I used instead of corn (I also added about 3 oz. cream cheese to the meat mixture, just for a bit more richness). Make sure you oil your baking pan before putting your enchiladas in, it will make serving and clean-up SO much easier. My husband loved it which makes it a keeper, thanks for sharing this.

I had a jar of home made apricot-pineapple preserves on hand, so I used that. It was dee-licious! I make my own taco seasoning (I believe there is one on this site too), which results in less salt and no preservatives added to your recipe. Will become a regular dish here. Thanks.

Easy Roast Leg of Lamb

Perfection! I have to comment on those who took the cook time so literally...the recipe comment says it requires "patience"...thus when it tells you what the internal temp. should be, then you simply must use a meat thermometer...experienced cooks know this. I use a meat thermometer for every kind or cut of meat I cook. I recommend a meat thermometer in every kitchen!

Sirloin Caesar Salad

What a great idea, I'd seen these salads on the menu at different restaurants but never thought to try it as I'm not a big red meat eater. My daughter, however, LOVES caesar salad so since boneless top sirloin was on sale at the store I decided to make this. I mixed up 1/2 cup Cardini's Caesar dressing with 1/8 cup each lemon juice and dijon mustard for the marinade only, marinated the meat all day and used the Cardini's dressing for the salad since I didn't want to change the taste of the dressing we're all used to. My husband grilled the steak to a perfect medium and along with freshly grated parmesan, my cheesy garlic bread and homemade french bread croutons, this was an easy, tasty, filling meal. The only change I'd make is to also marinate the meat overnight. Perfect for those lazy summer nights, we'll definitely have this one again!
