Spinach Enchiladas Verde

To those who had trouble with the tortillas tearing: Most enchilada recipes call for either heating the sauce and then dipping each tortilla into the sauce before filling to soften and/or you heating some vegetable oil in a skillet and dip the corn tortillas into the hot oil (don't let it begin to fry) to soften also. Or just use soft, flour tortillas.

Banana Cake VI

It is very wise to keep an oven thermometer in your oven at all times. Most ovens need their thermostat adjusted. My hubby does something behind the oven temp. knob, a screw or something....and has adjusted my temp. that way. The cake is awesome!!

Quick and Easy Pizza Crust

Impressive to say the very least! I followed instructions exactly EXCEPT that I added Italian spices to the pizza dough before mixing in my Kitchen Aid stand mixer. Excellent results, especially for being such a quick recipe. Will use "Jay's Signature Pizza Crust" from this site when I have a bit more time but this one during the week when the pizza bug hits. Thanks so much for sharing this, it is GREATLY appreciated!

I liked this; I did grind the bread pieces to make them into coarse crumbs. I also added about a cup of grated sharp cheese to the crumbs & butter....we love the extra cheese and it made a yummy topping. I'm not crazy about soup or onions in my mac & cheese.

Chocolate Cookie Cheesecake

I made this recipe two nights ago, unveiled the creation last night and tried it. I didn't have time to decorate it, so the picture is the "raw deal", but still nice. I have my grandmother's cheesecake recipe that has been in the family for years and next time I'll use that recipe instead. I did like the chocolate cookie crust and the ganache on the top. Next time I'll only put the cookie crust on the bottom of the pan rather than half-way up the sides and I won't make as much of the cheesecake filling as the cake is at least 4" high and very rich. Nice recipe and I will definitely try it again with the changes. Thanks for sharing!

Agedashi-esque Tofu

YUM! I used Mochiko (sweet rice flour) in place of corn starch, tastes exactly like the Agedashi appetizer that a trendy, super-expensive sushi restaurant in La Jolla USED to serve. My 2-year-old and I just macked away until the all of the tofu was gone! This is super easy, healthful, and so incredibly yummy, I will make this often.

Magic Peanut Butter Middles

I'm writing to rate the filling only, which is stellar. I used it between two layers of brownie batter, trying to get a "Reese's Peanut Butter Cup" type of effect with brownies. It turned out SOOOO good! Not sure if I'll actually try this with the cookie recipe because just spreading it out over the brownie layer and adding another on top was a lot of work but the result was fantastic so why mess with a good thing?!?

Double Chocolate Brownie Cake

Wow! This was a great big hit. As another reviewer's suggestion, I used the shiny chocolate glaze, which was perfect. I roasted pecans, chopped and sprinkled on top. Instead of using water in the cake mix, I used coffee and I also put a little instant coffee in the glaze. It was absolutely delicious. I brought some into work today and they all went crazy (even though it was almost 3 days old...it was still yummy). Thank you for this recipe!

Yes, very pancake-y. Just make the regular chocolate chip recipe(more satisfying) and ony eat 1 or 2 a day, not a half dozen, it pays to change my eating habits, not the food. I find that works for me.

Try pre cooking the bacon to avoid flareups and to get crispier...or use the already cooked bacon you can buy at the grocery...it works great.

Cedar Planked Salmon

Used the cedar planks we got at Costco; the marinade for the salmon is awesome. Didn't have green onion on hand, so used finely chopped red onion. It was simple and absolutely the only marinade & method of cooking I will use for salmon, in warm weather that is! Great for company.

Cinnamon Sugar Tortilla Delight

Very good. If you spread the tortilla with "Nutella", a hazelnut/cocoa delight, it is super good as a variation. Also, the spread is low fat
