Never Fail Pie Crust II

Reviewed: Oct. 27, 2008
If I could give this 10 stars, I would.....I've been baking for almost 30 years.....and had yet to find a GREAT pie crust recipe......This recipe was so good, that I tossed all my other crust recipes......It's perfect, holds up well to any type pie. Sometimes, if I don't have 2 cups butter flavored shortening, I use 1 cups buttered shortening, and 1 cup plain shortening. It comes together so nicely and rolls out so easily......Thank you Mary Roahrig!!!!!

World's Best Lasagna

Reviewed: Oct. 26, 2008
I have to say this was one of the best lasagna's I've made with one exception....there is way too much salt in the sauce recipe....Next time, I will but the Tablespoon of salt, to 1 teaspoon; otherwise, there is the right amount of flavor and the texture is right on.......

White Chocolate Covered Pretzels

Reviewed: Oct. 25, 2008
Well I made the mistake of trying to melt the chocolate in the microwave. Burnt!. Then used double boiler mechanism. Sprinkled orange/black sprinkles (Halloween). Dipped some rods in coconut, crushed pecans. Freeze for 15 minutes then take off wax paper and put in tupperware, store in fridge until ready to package/serve. Yumm-o

Raspberry and Almond Shortbread Thumbprints

Reviewed: Oct. 24, 2008
These were so very easy to make....the dough came together so easily......As I read some of the viewers comments about the dough being hard to work with I was very puzzled. I think the reason my dough came so easily together was because I used extra fine sugar....that's always a must in shortbread.......I made the cookie balls 1" round and yielded 31 cookies......very good, and a very pretty cookie at that!

Pumpkin Cookies V

Reviewed: Oct. 23, 2008
These cookies were DELICIOUS......plus it makes a huge batch. I didn't have 2 cups of shortening, so I used 1 cup shortening, and 2 cubes real butter....the frosting was so good, because it wasn't your typical plain white icing......The pumpkin cookie itself was good because I'm not into a real spicy cookie...it just tasted like a pumpkin cookie.....This will be a favorite of our family.

Nice flavor but too cake-y for my tastes. Try adding maple flavoring and raisens. And def. add the frosting.

Mouth-Watering Stuffed Mushrooms

Reviewed: Oct. 17, 2008
Really good. After reading people's comments about time consuming here's a little tip. Any time I stuff something whether it's eggs, jalsapenos etc. I mix everything in a food processor and then put it in a gallon size freezer bag, snip a corner of the bag and simply pipe it in. It's fast easy and less messy. Great recipe, thanks for sharing.

Tamale Casserole

Reviewed: Oct. 16, 2008
This was a good recipe. The canned tamales were pretty good, although I think using better quality (frozen) would improve the casserole. Also, The dish tends to be on the saltier side. I think I'll make this again, but might try pouring a box of jiffy cornbread mix on top to add a little sweet texture....just a thought......I would make this again. I served it with a homemade salsa on top and sour cream....

Good. Easy! For some reason I ended up with too much liquid and it overflowed the pir crust. I'd love to blame the recipie but it was probably operator error. Overall a quick and reasonable dish.

Grilled Tri-Tip with Oregon Herb Rub

Reviewed: Aug. 18, 2008
Amazing. I tripled it and made three on the BBQ. Awesome. Very salty, so you may not want to use all of the rub... but I personally thought it was perfect. In a party of 7 with one vegetarian 2 3/4 of the tri-tip was gone by the end of the night (6 lbs!)

Amazing Chicken

Reviewed: Jul. 24, 2008
Yummy! I used miracle whip instead of mayo, and it turned out great! The chicken was moist and tender, the whole family loved it! The only change I would make would be to add a little more seasoning to the bread crumbs. Will definitely make this again!

Mouth-Watering Stuffed Mushrooms

Reviewed: Jul. 6, 2008
It doesn't get much better than these. My kids loved them, my boyfriend who is not a huge mushroom fan loved them and so did I! I used light cream cheese. I didn't have quite enough parmesean so I added some shredded mozerella to make up for it. I also used all my cayenne on the red beans so I used chinese "rooster sauce" instead. I was surprised that it said to chop the mushroom stems but did it. I used my hand held food chopper and it worked great to mince them up finely and boy did they look and smell great when cooked with the oil and garlic! That alone would be great on pizza! Excellent recipe, will make these many times again.

Homemade Black Bean Veggie Burgers

Reviewed: Jul. 6, 2008
These were incredibly good. My boyfriend is a vegetarian and we have had store bought black bean burgers, but these were by far better. I used purple onion and cheese seasoned bread crumbs because that is what I had. I just added the crumbs until it was a good molding consistency. I also added brown rice which gave them a great chewy texture. These were fine placing directly on the grill and the cooked texture was was fabulous. My boyfriend was so very impressed and can't wait to make them again. I also loved that I made them large enough to go on the big wheat buns.
