Baked Ziti I

I thought this was good. I've seen this recipe on the back of a Ziti pasta box at the store. For some viewers comments about using Ricotta, we all add and take things away from a recipe to suit our liking. I personally make this dish and lasagna with fat free Cottage Cheese because Fat free tends to be dryer then 1/2 or full fat. If you taste plain cottage cheese vs. sour cream, they are very similiar in taste. This recipe is really good and personally don't like using ricotta because I think it's dry unless of course you are getting the freshly made Ricotta from a special food store. Thanks for sharing.

Crescent-Wrapped Brie

Exceptional. Worked perfectly and was yummy. Only donside is the little ducks I cut out sank intoi the rest of the dough a little bit and came out looking more like little blobs than ducks. Minor criticism - this was very good!

Blue Cheese and Dried Cranberry Tossed Salad

Very Very Good. Consider altering the ratio fo cheese and cranberries to romaine hearts, I halved the greens so as to get more blue cheese and cranberry goodness in each bite.

Mini Pizzas

These are addictive! My mom has my family hooked on these. Use Jimmy Dean sage sausage ('lite' if you're feel'in guilty LOL), add some chopped cilantro and chopped garlic to cooking mixture) This recipe accounts for about 3 added lbs this holiday!

Delicious Ham and Potato Soup

Excellent recipe of course... but I have to share my almost disaster story. Since I never measure anything I went to add the bouillon and realized that it was different in color and quite powdery. When I went to smell it I realized it was cumin(yikes). I think I put in close to 2 Tbl until I noticed and I'll tell you even by doing that, the soup was still amazing. It added smokiness but didn't even harms the soup whatsoever. Moral of the story....when you put seasonings into a jar labeled "Chicken Boullion" take the label off and write what spice it really is. Close call! Thanks for sharing this is a keeper.

Microwave Peanut Brittle

while the recipe is good, the microwave/timing aspect is way off for higher wattage ovens. I have 1100 watt oven. Following worked perfectly, too bad it took me 3 tries to get it right and I ran out of ingredients for a 4th batch. Therefore, only my 3rd batched tasted good. Also make sure you mis the sugar and syrup well before the 1st cooking. 1st cooked corn syrup/sugar mix 3 1/2 min, add nuts, cook 2 1/2 minutes more, add butter/vanilla, another 2 minutes. If mixture starts getting darker brown, take it out!! nothing worse than burnt pnut brittle. Also spray spoon and glass container spout with pam. have oven mitts handy too!

Wow, these were gobbled up in no time. The recipe made 32 cookies. Think I'll double the recipe next time. Besides being such a pretty cookie, they were absolutely a cinch to make. So thankful for this recipe!

Low Fat Chicken Tostadas

Good basic recipe and idea. I serve in baked 'tortilla' bowls. If you don't have a special pan, fold large tortillas over an oven proof bowl..spray both sides of the tortilla with Pam spray and bake at 325 for 10-15 minutes. Voila..edible bowl!

Nanny's Spaghetti Sauce

Easy and tastes great. I quadrupled the red pepper flakes becuase I like the heat. I added 1 lb of sweet pork sausage (out of the skins). I didn't have any red wine vineagar so I used white and it worked well.

Blackened Salmon Fillets

Im new to both eating and cooking Salmon and this was quite good! I followed suggestions and turned the heat down to medium as soon as I put the fish on the pan, cooking one side for 5 minutes and the other for 7, next time I'll do 7 minutes for each side. The only problem I had is that I made sure to cover the whole fish in seasonings...hella hot!! It was still tolerable but next time I'll use much less!

Cream Puff Cake

If I could give this cake 10 stars, I would!!! Wow....this is just like eating a real cream puff.......I topped mine with Hershey's Milk Chocolate Topping....everyone could not stop raving......It's going to be a Thanksgiving Dessert for sure.....This will be a family favorite and a must try for everyone....hint...when the puff was baking it really rose...I just pushed it down...don't freak out if this happens.

Too Much Chocolate Cake

This is a very good cake....made the recipe as written....it's really chocolaty, and very moist. I'm not into semi-sweet chocolate very much, but wanted to try the recipe as written, but next time, will substitute milk chocolate cake and milk chocolate chips into the recipe.

Pumpkin Chip Cookies

These were excellent!! I added 1/2 teaspoon of Nutmeg, 1/2 teaspoon of Ginger and a couple dashes of Pumpkin Pie Spice for extra flavor. I might even double the Ginger and Nutmeg next time and add a bit of cloves as Im looking for more of a pumpkin pie flavor. Though I like oatmeal cookies I was unsure of them but these are fabulous! Mine baked at 13 minutes, nice and golden. Great basic recipe!

Flatlander Chili

This is a keeper......it's a real good, basic chili recipe that you could enjoy as it is, or build on. I personally, would put half the amount of tomato juice, because it is a bit soup, or perhaps next time, I might just add more kidney beans....as far as seasoning, it would be considered a more mild chili, which would be perfect for those with young children. I did add a bit more cayenne for a little more spice.
