Special Buttercream Frosting

This was pretty good frosting. My mother-in-law pointed out the fact that it didn't taste like butter and I should've used butter flavored shortening... but all in all I thought it was tasty and it got compliments from other guests.

Marble Cake I

I really wanted to like this cake... However, it was very dense, it did not rise and the flavor just wasn't there. Needless to say, I could not serve this cake to my party guests in good conscience. I was forced to make my "go to" Black Magic cake, from this site. Everyone loves that cake...

Banana Muffins II

I was looking for a good, basic banana muffin base recipe, and this was the winner. The muffins were just right when I made them according to directions, without changing a thing. They were even tastier the second time around, when I added cinnamon, walnuts, and 1/3 cup of mini chocolate chips/white chocolate chips.

Oatmeal Peanut Butter Cookies III

Spectacular! I followed the recipe exactly, except for subbing lowfat milk for the whipping cream (next time will use cream). My three young children and I are in cookie bliss eating these homemade "Do-si-dos!"

Berry Lemon Mousse Parfait

I was looking for a healthy summertime dessert, so I used low-fat whipped topping and a bit less sugar. Even with less sugar, my husband and I thought this was way too sugary! Next time I will not add any sugar to the fruit and only about half the specified amount to the whipped cream mixture, the fresh fruit has plenty of natural sugar. Also, I halved the amount of lemon juice and we found the flavor (besides the sugar) to be perfect. With a few modifications this could be a great dessert!

Spinach Stuffed Chicken Breast

This was very good. I did take the advice of one reviewer and soaked the chicken in buttermilk for a couple hours before cooking; this made it very moist. Next time I will add some crushed red peppers and diced onion to the stuffing for an extra kick.

Bananas Foster II

This was really tasty! My husband and I found it too sugary the first time I made it so I used only 1/2 cup of brown sugar the next time I prepared this. It was much better the second time. Also, I cut the bananas into rounds to make it easier to eat, which is important because you have to eat it fast before the ice cream melts.

Creamy Pesto Shrimp

This recipe was pretty good. I will make it again with a few adjustments. I will add a couple cloves of garlic; there wasn't enough for my taste, even with the pesto. Also, I added tomatoes this time and I will also throw in some mushrooms and scallions next time as well.

Guacamole

I took this guacamole to a party yesterday and it was a hit! The only change I made was I only used 1 tsp. of salt while preparing, then added a little bit more to taste after the recipe was together. I just didn't want the salt to overpower the other flavors. PERFECT!

Lime Chicken Soft Tacos

My husband and I both really liked this recipe. I sprayed the pan with non-fat cooking spray before cooking the chicken so it wouldn't stick. The recipe says to cook it for 20 minutes, but mine was done after about 10 minutes. The only other change I made was adding some cheddar cheese in with the Monterey jack and topped off the finished tacos with some Tapatio..yum! Next time I will use fresh cilantro instead of oregano and add some jalepenos or green chilis for a little kick.

Mom's Country Gravy

I finally tried this recipe. I didn't like how it was way too runny for my taste the first time around, so instead of oil..I used butter instead the second time. Some good things to add in to the gravy are to add sausage, bacon (chopped fine), green&red bell peppers (chopped fine), red onion, 2 hard-boiled eggs (chopped fine), velvetta cheese and spice it with oregano, black pepper and garlic powder (about a teaspoon each on the black pepper and oregano, and 2 tablespoonfuls of garlic powder does the trick, although I like a lot of garlic..so you may want to adjust it to your own taste). Also, double the amount of gravy you make if you add all the extra ingrediants...so that there is enough gravy to go with it over the biscuits. Overall it's a good easy recipe though...and it is nice to do on a Saturday or Sunday morning when you can get the family together for breakfast alot easier.

Terrific Turkey Chili

This chili is a keeper! My husband went for seconds and asked if we can have the leftovers for dinner tonight. Changes I made: Added a couple large cloves of garlic, one can of black beans, used chicken stock instead of beef, and omitted the zucchini because my husband doesn't like it. Next time I will take the advice of other reviewers and also add a second can of pinto or kidney beans and some corn. Thanks for the recipe!

Chinese Restaurant Almond Cookies

These cookies have quickly become a favorite in our household. My three children love to help bake them (and eat them!). They are sweet and tasty and a refreshing change from the typical chocolate chip or peanut butter cookie.

Chicken Wild Rice Soup

This soup is absolutely delicious. I have made it four times now, three times exactly as stated, and once with leftover Christmas turkey instead of chicken. My husband and three children (all under the age of eight) love this soup, too. It is so good that I have added it to my menu for all major holidays. I wouldn't change a thing.

Blueberry Muffins I

These muffins were perfectly sweet and delicious! I am confused by all of the bland comments I read. Perhaps too many people in our junk food culture expect muffins to be cake-like and sugary, like the processed variety? These were just right, with no changes to the recipe, except perhaps extra blueberries. Fresh blueberries add the extra touch of sweetness we like.

Salisbury Steak

I thought it was a great base recipe. I used lipton onion soup mix instead of condensed but I made it with beef broth instead of water and then let it reduce by about a third. also I sauteed baby portabellas and let them cook in the reduction. then poured over the patties and cooked in the oven it was awesome.

Potato Soup IV

What a terrific recipe! I was searching for one that did not use potato flakes or cream soups to thicken, and this one was just right. I made very minor variations, like adding a little parsley and extra salt for flavor, and adding some grated carrots. I also used Yukon Gold instead of red potatoes and skipped the cheese, since I made it to accompany a main course. Yum...even the children enjoyed it!
