Cowboy Jack's Beer Bread

Reviewed: Mar. 29, 2009
Not great for my first attempt at beer bread. I added salt and cut down a bit on the brown sugar but it was still a bit too sweet for my taste. Also, did not rise as much as I would have liked... I might try more baking powder next time around. And I might try half white flour half whole wheat flour next time around. Had to cut the butter a bit also, was way too much. This recipe was just ok but I think I'll look for a better one next time I have a hankering for some home baked beer bread.

Blackened Chicken

Reviewed: Mar. 19, 2009
This was pretty darn good. I doubled most of the spices, except for Cumin because it has such a strong flavor already. I also added 1/4 t of garlic powder. I used olive oil to coat the chicken then rubbed with spice mixture and cooked in heated pan sprayed with butter cooking spray. I just browned the chicken then placed in oven for 20 minutes. I let it rest for 10 minutes then served it with pasta and green beans. Delish!

Slow Cooker London Broil

Reviewed: Jan. 24, 2009
Well I had to make a few changes based on what I had on hand and I also followed some of the other reviewer's tips. I didn't have onion soup mix but I added a bunch of raw onions and spiced/floured the meat, I didn't have tomato soup either so added some watered down tomato puree which I flavored up a bit with some garlic, etc. I also added a splash of Worcestershire sauce, potatoes, carrots, mushrooms, and crushed garlic. I cooked on high for 5 hours and it came out great! Good easy low key recipe. I love slow cookers!

Rempel Family Meatloaf

Reviewed: Jan. 21, 2009
My boyfriend and I are some of those few people who like meatloaf... well he's not picky and I like being able to put dinner in the oven on a weeknight and forget about it for awhile. This was one of the best meatloaves we've tried though (I rarely remember to use the same recipe). I made some minor changes based on what I had on hand... I used italian style bread crumbs, left out ketchup (yuck) and used generic steak sauce and tobasco sauce. I did line the pan with bread like another reviewer said I was really happy with the great that got cut out of the final product (trying to eat healthy and all that). Also, I couldn't find my loaf pan so I used and 8x8... thinner but more crispy bits so it was all good!

Barbeque Pork Two Ways

Reviewed: Jan. 19, 2009
I've used this recipe before and I have to say my BF and I absolutely LOVE it! I find it's really versatile in that I can use half BBQ sauce if I have some on hand or I can go straight with the called ingredients. It's a really easy dish to make and I love how I can cook it all day while I'm at work in the crock pot OR if I need something on the fly I can just make it on the stove top! Tonight I'm going to try it in my pressure cooker (best Christmas gift ever, btw!) and I'm really excited that it'll cut the cooking time by 2/3s.

Ground Turkey Noodle Bake

Reviewed: Dec. 29, 2008
This was a good/easy dinner but it was nothing to write home about. I added more spices, more fresh garlic, and used a can of cream of mushroom soup to help flavor the noodles (as others suggested). We enjoyed it but I don't know that I'll make it again - I think I'd rather try something a little more exciting.

Greasy Chicken

Reviewed: Dec. 6, 2008
Tasty recipe but I made a few changes to cut down on the "grease" and fat. I used olive oil instead of butter and less Soy Sauce and I used the reduced sodium kind. Overall a good recipe though.

Baked Pork Chops I

Reviewed: Dec. 6, 2008
This is our favorite recipe ever!!! This is the BEST pork chops recipe I have ever tried. Yum Yum Yum! I've never been particularly fond of pork chops before but they're always on sale where I shop so I set out on a mission to find a recipe that my fiance and I would love and THIS IS IT! Hats off to the chef!

Slow-Cooked Chili

Reviewed: Nov. 20, 2008
Makes a wonderful chili! A few minor changes- I only made it for two people so I cut the recipe in half. It doesn't have an abundance of flavor on its own, so I added another clove of garlic, crushed red pepper, and a whole lot more chili powder (didnt measure, just dumped!). I seasoned the meat heavily when browning. I also added 8oz. of tomato sauce per the other reviews saying it wasnt moist enough, and I think that did the trick. It has a wonderful dark, rich color and the house fills with the smell. I will make this one again!

Winter Chicken Bake

Reviewed: Nov. 14, 2008
I'm confused. All the other reviews are stellar, but my socks weren't knocked off. It needs something-like a sauce. There is little to no moisture when its finished cooking, and makes the overall impression of the dish less appealing. I will make it again however. It was tasty, easy, and healthy. I think next time I will pour 1/2 C. apple cider over everything befor baking to create more of a juice/sauce.

Beer Butt Chicken

Reviewed: Aug. 4, 2008
I have been making this chicken for years. I rub the chicken with olive oil then use lemon pepper all over the out side. I also Put either garlic , an onion or I have even used an apple cut up in the top where the neck is. it gives it great flavor. I have used soda and even apple juice.(in a can) I'm not sure if the herbs in the beer make a different but i ALWAYS ADD A LITTLE Thyme AND GARLIC and season salt in the can. I think it is mainly the steaming of the substance in the can but who knows it is really a great way for making chicken. I have the stand that they make for it... much easier.

Awesome Roast Beef

Reviewed: Feb. 26, 2008
I've tried dozens of recipes for beef roast in the slow cooker before and none of them left the meat juicy enough. I've gotten recipes from family and friends and just anywhere I could find them and finally I have found one to stick with. It was awesome! My boyfriend loved it (he's a real meat and potatoes kind of guy). I added carrots, onion, and mushrooms at the beginning then when the roast was almost done I made a side of garlic mashed potatoes. We can't wait to eat the leftovers tonight!

Slow Cooker Cranberry Pork

Reviewed: Jan. 29, 2008
amazing. i read loads of reviews before i made this, and was a bit skeptical. but once it hit my lips...so good. i did make a few changes that were suggested by other readers: no onion, added 2 tbls cornstarch, salted/peppered and seared the loin prior to putting it the pot. my boyfriend said this was the best thing i have made for him recently, which says a lot. cooked for 4 hours on high, till 160, and it was perfect. moist, fell apart with the fork. just great. highly recommended. this one gets saved in the "make again" file!!

Sean's Falafel and Cucumber Sauce

Reviewed: Aug. 23, 2007
I've lost track of how many times I have made this dish. I love it! The only part I have changed is that I've increased the bread crumbs by quite a bit (usually around 1/2 to 1 cup more - eyeball it). Even the cucumber sauce is delicious. I can't say it enough - I love this recipe.

Bacon Cheddar Deviled Eggs

Made these for a get-together this past weekend and they were gobbled up in 2 minutes flat! I used bacon bits instead of frying up the bacon myself to save time and effort and no one noticed the difference. I'll definitely be making these again.
