Slow Cooker Lemon Garlic Chicken II

This recipe was 5 stars when I made some minor adjustments and followed the advice of other reviewers. I added rosemary to the oregano rub mix because thats what we were in the mood for today. I also added chicken broth to cover while cooking and placed some mixed veggies in the bottom of the slow cooker before I put the chicken in. Sensational.

Quick Biscuits

This is a great, quick and easy recipe! Everyone really liked them and I loved how simple it was to prepare. I had to use a bit more cream then called for in the recipe and made them as drop biscuits since the dough is quite sticky. It isn't as flavorful as regular baking powder biscuits but the next time I need a really QUICK quick bread I'll be using this recipe.

Soft Giant Pretzels

These were great! The pretzels were soft, fluffy, puffy, with a slightly crisp outer crust. I love the fact that they don't require any rising time and are so easy to make. I just threw all the ingredients into my standing mixer with a dough hook and let it run for until the dough was smooth - about 5 minutes. Will definitely make again!

Quick and Easy Alfredo Sauce

This was pretty good, but definitely not the real thing. You can taste the difference between this one and the authentic Alfredo sauce and I prefer the latter by far. This would make a great white sauce for pizza though, but I wouldn't call it Alfredo sauce.

Satiny Chocolate Glaze

I used brown rice syrup instead of corn syrup but other then that I followed the recipe exactly. It was perfectly glossy and smooth and amazingly delicious. To keep the syrup from sticking to your measuring spoon grease it lightly with a bit of oil or butter. That way it'll just slide right out.

Lemon Pasta Sauce

The finished product of the written recipe was too bland for me, so I did some tweaking. This sauce will only be as good as your broth, so I'd recommend using chicken or beef stock. I made the recipe as written but used chicken stock instead of beef broth and all lemon zest. It was good, but was very mild in flavor and not enough lemon taste. I increased the zest and juice to taste and next time will probably thicken it slightly. I really like the idea though and will definitely be making this again with more "tweaks". :)

Creamy Hot Cocoa

This is a great, classic hot cocoa recipe. I agree with the other reviewers though who said that it was too sweet. I would probably start with 1/2 cup of sugar, and add more to taste if needed.

French Crepes

No complaints for this recipe, it came out perfect. I lightly oiled the pan with palm shortening and poured the batter in from the side of the pan (keeping it tilted). You then swirl the batter around until it covers the whole bottom of the pan. Sounds simple, but not quite so. This takes practice, practice, practice!

Banana Muffins with a Crunch

These muffins turned out moist, light and fluffy. My only complaint was that it was too sweet. 1 1/3 cups of sugar is plenty. That and the walnuts and banana chips were the only things I changed since we're not big on nuts in baked goods and I didn't have any of the chips on hand. I'll defiantly be making this again! It's a nice way to get rid of overripe bananas. :)

Mexican Rice II

This is a great authentic Mexican Rice recipe! A Mexican friend told me how her mother makes Mexican Rice, and this recipe is almost exactly the same, except for the chicken broth. Some use water or half broth and water, but that is just personal preference. I like it with broth, since it gives a fuller flavor. But either way, this is a really tasty rice!

Extreme Banana Nut Bread 'EBNB'

This was pretty good, but defiantly lacking in flavor. If I were to make this again I'd add vanilla extract and cinnamon. The directions are a little strange too. I suppose it would turn out okay if made as written but I creamed the butter and sugar until light and fluffy, added the eggs until well incorporated and stirred in the bananas (I didn't use nuts). Sift all the dry ingredients together, and add it in about 3 batches to the banana mixture. It came out fluffy and moist with a crusty top but not very flavorful.

Southern Fried Chicken

Just about everything was great! The chicken was crisp, moist, had no problems sticking to the pan, the coating stuck to the chicken and it looked absolutely mouthwatering. My only problem was that the spices were too bland, so the next time I make this I'll definitely have to up the amount. As usual, I did NOT use vegetable oil but coconut oil, this time halved with palm shortening.

Aracely's Flan

This is almost exactly the way my mom's family would make flan when she was growing up! We call it Leche Flan in the Philippines, and usually 1 teaspoon of vanilla extract is added. No big deal though, I just added that and steamed it as the recipe says. I used a large pot that would hold the pie plate and filled it with boiling water about halfway up. The flan was fabulous. Rich and creamy...everything a flan should be!

Scrumptious Salisbury Steak in Mushroom Gravy

At first I was pretty skeptical about this...it sounded....strange. My mom wanted to try it out tho so we had it for dinner one night and it was actually pretty good! It's tasty and the mushrooms drowning in their rich, creamy gravy is the perfect thing to top them with. Everyone liked it and I've made it several times now. I followed the recipe almost exactly the first time but used fresh mushrooms. This recipe makes way too much gravy, so now I make half the amount (with the same amount of fresh mushrooms) and half the amount of milk with chicken or beef stock. With those modifications, this makes a 5 star recipe.

Grandma Johnson's Scones

I followed the recipe exactly except for the raisins-added chocolate chips instead. Made them once without cream of tartar (didn't have any) and didn't miss it. I now usually add some vanilla extract but this is an excellent recipe just as is! The key is to handle the dough as little as possible and to have the butter very cold. Our guests loved it! It tastes like a chocolate chip cookie...almost.

Baked Lemon Chicken with Mushroom Sauce

We all really enjoyed this dish. The first time I made it I followed the recipe almost exactly except I used 1 whole cut up chicken. It was good but needed more spices. The next time I made it I used 2 lemons, garlic, salt & freshly ground pepper, poultry seasoning, and topped the chicken pieces with either coconut oil or a slice of butter (sometimes both). The mushroom sauce needs no tweaking and it's simply delicious with the chicken!

Polly Welby's Excellent Chocolate Mousse

As written, this recipe is only 3 stars for me. With bittersweet chocolate it turned out too rich and a little on the bitter side. To get the mousse as fluffy as possible, fold the whipped cream into the chocolate a little at a time, not the other way around. Even then though the mousse wasn't as light as traditional ones are. If you make this it's best to eat it right away! If you chill it for more then 15 minutes you'll end up with a block of crumbly chocolate, which isn't all that nice. For a good eggless mousse use semisweet chocolate and a bit of vanilla. But really, I prefer the real thing.

This is by far the best homemade BBQ sauce I've ever had! The first time I made it it was way too sweet for us, so I cut back a lot on the sugar the next time I made it. Also, I didn't use any liquid smoke. But this is the REAL thing, like the kind you get in the restaurants. Some may want to increase the spices, but for me it was just cutting back on the sugar. Soooo tasty...
