Buttermilk Pie IV

This was pretty dang good. I had never had it before, and it tastes of a combination of caramel and toffee with a texture between cheesecake and pudding - it is firm, but creamy. If you have ever cooked butter on the stove and tasted the change, it is similar. I used a store-bought crust - be sure to use deep dish, or else you'll have leftover filling. Everyone at work, to my surprise, raved over this. And it is VERY easy. I will definitely have to make it again.

Magic Peanut Butter Middles

You present a gourmet cookie, without the effort or time typically required. It is SO easy! Tip: I doubled the recipe, but did not double the eggs or butter - healthier, and just as tasty. Everyone raved over these, and I normally dislike the chocolate/peanut-butter combo. Will make again.

Flax and Sunflower Seed Bread

This was quite good, despite 2 mistakes that I made. Out of habit, I added 2 1/2 teaspoons of yeast - it still turned out, although quite tall, lol. Second, I didn't add the sunflower seeds at the appropriate tine, so I just sprinkled them on top, which made it quite presentable. Next time, I'll include it in the dough and save a tablespoon or two for "garnish."

Beet Salad with Goat Cheese

I really enjoyed this salad, and I am more of a hot food/soup/stew kind of gal. I didn't have orange juice so I made it with fresh tangerines. I cut the amount of oil down to approximately 1 tablespoon and used Feta. I used a few drizzles of all natural uncooked honey. The salad was delicious, and it was great having some fresh cubed beets around the kitchen while to snack on while the rest of dinner was being prepared.

Carrot Cake III

I have made this cake 3 times now, and it is a hit every time. I usually add raisins and walnuts (per my boyfriends request), but it very tasty with out them as well. The frosting is heavenly, and I love it warmed up for breakfast! Thanks for sharing this delight:)

Plum Cake

Great recipe! My husband and toddler both loved it. It'd be great with vanilla ice-cream because it isn't too sweet. I used an electric hand mixer to beat the eggs (very easy) and baked it a regular 9 in round cake pan. I also made the following changes: -1/2 white flour, 1/2 whole wheat -added 1.5 tsp of vanilla -a couple pinches of salt -1/2 cup apple puree -half of the butter the recipe called for -soak plums in some cinnamon, manischewitz (any sweet wine would work), and cinnamon -sprinkled with a a bit of sugar at the end for sparkles sake

Grocery Store Frosting

I liked this a lot. It tasted good, was easy to make, and is perfect for cupcakes and cakes. The shortening is used in frostings for it to hold its shape at room temperature and to make it non-perishable and thus have no need to keep in the fridge. I halved the recipe (tip: 1 pound of confectioner sugar = ~3 cups) and still had extra frosting leftover after frosting 24 cupcakes. I put the extra frosting into a spritz cooking maker and made "flowers" on top of each cupcake (I posted a photo if you want to see). Top with red sprinkles and a silver ball sprinkle, and your result is quite presentable. Easy, basic frosting.

Very flavorful and have the right texture. Only complaint is the garbanzo beans didn't thoroughly cook, and in general are harder than the other bean types. This resulted in semi-hard beans admist otherwise "al dente" beans. Some may like this, but if not, you may want to pre-microwave your garbanzo beans.

Minestrone Soup I

Outstanding! As recommended by others, I doubled the tomato paste and used spinach rather than cabbage. I also threw in some green beans and extra pasta, and used Better than Bouillion rather than veggie stock. A keeper for sure!

Chicken Tortilla Soup V

Very flavorful and relatively simple. I pre-boiled the chicken thighs with their skin on, then removed the chicken skin for my chicken and used the broth for that called for in the recipe. I also added more garlic. My family is a baby about spicy foods, so I omitted the cumin, used 1/8-1/4 chili powder, and 1/2-3/4 onion. Topped with gouda cheese. Don't forget the lemon juice, especially to minimize the kick. My mom was surprised that she liked it. Would make again.

Oh, this one is insanely good. I've tried it with more vinegar and less vinegar and I have to say, the original recipe works for me. Serve with some garlic crusty bread -- bon appetit!

Stuffed Peppers My Way

One of my old standbys. After reading the other reviews, I've reduced the roasting time for the peppers to 15 minutes and also cut the amount of feta. No salt needed here -- the feta will do the trick. I also like to use different-colored peppers for visual appeal. Enjoy!

Liked this one! Fun to cook and even more fun to eat. We modified it by using far less salt (a dash rather than a tablespoon) as well as a lot less oil. It's slightly too spicy -- I'd turn down the heat the next time. But was definitely well received around here!

Great. I used omitted the strawberries because they were out of season, and just added more kiwi. The bananas are clutch - don't omit them. Very good..I used sliced canned pineapple, low fat vanilla pudding mix, and low fat frozen whipped topping. Couldn't even tell - would make again. June 3, 2009: Second time around, just as good. Easy and delicious.

Oatmeal Applesauce Bread

I made these as rolls instead of as a loaf. Amazing! They were soft, light brown colored, and had a slight oaty taste. My mom loved them. I would make them again. I think I subbed the dry milk powder for 3 tablespoons of milk without any problems.

My Mom thought they tasted professional - the type you would package and give as gifts. They were very professional looking and presentable. I prefer softer cookies. You can definitely taste the coffee flavor.
