Too Much Chocolate Cake

I made this into cupcakes for my son's 2nd birthday. They were a huge hit! So tasty, and super easy, too. I frosted them using the Cream Cheese frosting II recipe on this website. Thanks for sharing this recipe, it is truly a keeper!

Mexican Cookie Rings

Puff Pastry Salmon

This was very rich treat, a little heavy for a salmon dish. Next time I will use less puff pastry and pesto with larger pieces of salmon. Great flavor combination, though!

To Die For Blueberry Muffins

These muffins were amazing! To make sure that I didn't overmix the batter, I folded the wet ingredients into the dry ingredients using scraping motions along the wall of the bowl into the center. Using the same technique, I folded the blueberries in, being careful not to pop the fresh berries. I made 12 regular sized muffins, which looked very pretty. To make everything easier for yourself, just use the paper muffin cups instead of greasing the pans and still getting frustrated over getting them out. It looks prettier that way anyway.

Easy Lemon Cookies

Chocolate Marshmallow Puffs

Hard to work with. The dough was too crumbly and once cooked, the marshmallow oozed out of the cracks of the "crackle cooke" which is what it was - not a puff. I tore up big marshmallows to mini-marshmallow size. The tast is decent, so with the second batch I got a 9x9 pan, put half of the dough in the bottom, sprinkled marshmallows on top, and then pressed the remaining dough on top, and made marshmallow puff bars. :) It was MUCH easier and the results were just as good. I likely cooked it for ~20-25 minutes? I do not advise the ball route. All in all, probably won't make again, but thanks for putting it up!

Chicken Makhani (Indian Butter Chicken)

Really delicious. Served with brown rice and a nice cucumber salad, this was such a wonderful balance of sweet,salty,spicy and tart. I added about a tsp. of coriander. Used tomato sauce. Roasted some sweet potato along side. What a treat! Thanks for your contribution!

Berry Shortbread Dreams

Pretty good. Excellent taste. However, the dough is really crumbly and even after chilling, is hard to keep together. I had to add a touch of water. Also, I added 1/2 tsp of vanilla to the dough. Drizzle is lovely, but wait until the cookies fully cool or else the drizzle will meld with the jam and destroy its potential to be attractive. I also made these pretty large to have room for jam - had about 16, not 21.

Savory Crescent Chicken

Easy. Salt, peppered, and added paprika to the shredded cooked chicken before mixing with the rest of the called-for ingredients. Skipped the croutons and pimientos. Perfect for dinner parties - everyone gets their own! I thought there may be too much bread, though, and might roll out the dough a bit next time and make more "dumplings."

Pumpkin Cheesecake Dessert

I loved this, but no one in the family was quite taken by it. The pumpkin flavor overwhelms the cheesecake, so if you prefer the former over the latter, this is the cheesecake for you. Added extra cinnamon; the crust is amazing.
