Hamburger Potato Casserole

Definately fix up your hamburger meat to your preference, then follow the recipe. I do add a can of mushrooms and mix in and sautee the meat. I layer the dish with the soup mix then pot then cheese then soup mix, meat, etc...make sure you spread the soup mix out so it's moist and not dry when cooked. Otherwise it's easy and tasty!

Chicken Spinach Quiche

This was an easy recipe. I did cut the milk down to 1/2 C, did not use a crust and added fresh mushrooms. I also used fresh spinach and added 4 small, finely chopped cloves of garlic to the onions when I sauteed them. I wilted the spinach at the end of cooking the onion, garlic mixture. My kids loved it but i only gave it 4 stars because i've tasted other recipes I liked better. Still It was good. I am always looking for good quiche recipes to use here at Lotus Creek Bed and Breakfast here in Quitman, Georgia. My guests write that My Inn has the best breakfast they've ever had at a Bed and Breakfast.

Spinach Quiche

This was an easy recipe. I substituted fresh spinach and wilted it when I sauteed the onions and garlic. I added fresh mushrooms and added an extra egg. I also divided it between two pie crusts.. Next time I will make it without the crust to see how it holds up. My family loved it and I will definitely make this one again. I want to try it in large muffin tins so I can freeze individual servings to have at a moments notice.

Chicken Cordon Bleu II

This is really good but VERY VERY rich. I could barely finish one breast and sauce. Next time I'd serve it with a fresh salad to offset some of the heaviness of this dish.

Jalapeno Popper Spread

This is SUCH a hit whenever I take it to any event. I change just a couple of things, I add 2 small cans of the green chiles drained, and 3/4 of a can of jalapenos drained. I also include 3/4 a bag of parmesan cheese while mixing. After putting it in a dish, I sprinkle the remaining 1/4 cheese on top and pop it in a 350 degree oven for about 20 minutes or until it's bubbling. (So much better than the microwave in my opinion) :) Happy cooking!

Turkey in a Bag

The turkey was fantastic! AllI did was rub it down with butter,sage, salt & pepper and put some flour in the botom of the bag...cooked a 16lb. turkey for 4 hours. Very moist and great!!!

Special Deviled Eggs

This went over very well. I forgot to add the onion so they were a bit sweet, but everyone loved them regardless. I'm going to make some more to test the differences. I also suggest NOT using a pastry bag to fill these. I tried it a first but gave up after filling two. It's hard to fill the bag in the first place. Using a fork or spoon is much easier and makes it look better. The pastry bag gives it an odd, processed look. Otherwise, great recipe!

Raspberry and Apricot Rugelach

Fantastic! I altered it a bit to accommodate my guests. I made three different types: raspberry, blackberry, and apricot. I only used preserves in each of them, so no chopped apricots at all. Very easy and very tasty :)

Easy Corn Pudding

Followed the recipe exactly. used a 15 X 11 cookie sheet. sprayed the wax paper with pam...It was absolutely perfect. Easy and wonderful. don't be afraid. It is no problem to make.

Grandma Johnson's Scones

I made these scones today, they tasted great but they were not exactly what I was looking for. They were very light and fluffy. A little cake-like. I was hoping for a more dense and flaky scone. I followed the directions exactly and I think that this recipe just produces scones are just lighter and fluffier. Like I said they taste excellent, just not exactly what I was expecting or looking for. Also, the dough became hard to work with when it was time to cut and shape them. The dough was very sticky and a little too soft to really be able to cut into them. I read another review on another scone recipe and it said that after you add the wet to the dry ingredients to put the mixture in the freezer for a few minutes to get the butter to solidify a bit before cutting. I will try that next time, although I will probably try it with another recipe as I just want a more dense and flaky scone. Good recipe though.

Fruit Pizza II

This is a GREAT recipe and a crowd pleaser!! 5 Stars!! I did take the advise of previous reviewers and substituted one jar of marshmallow cream for the whipped topping. SOOooooo good!!! The finished product is so beautiful, when you serve it people are very impressed. The glaze makes the fruit perfect, especially for those strawberries or other fruit that may not be as sweet as you want them. Leftovers get a bit soggy but you'll be lucky if you even have any!! =) Will make many times!! Thanks Kay! =)

Greek Salad III

This salad is great! I omitted the garlic and the olives but I know the salad would be great with them too. Greeks do LOVE garlic! =) I didn't use the tomato basil feta, I used plain feta and a LOT OF IT! I think i used about 12 or 14oz of feta! I love feta and I like a lot of it in my Greek salad! Also I didnt crumble my feta, I cut it into about 1/2 in cubes. I like it this way so you can get a nice bite of feta. Great recipe and good for you too!! Thanks Lynn!

Spanakopita II

My fiance is Greek and he makes an awesome Spanakopita. I was visiting my mom and wanted to try to make some decent Spanakopita without his help. I found this recipe and it is extremely similar to his. Very authentic. I made these for a party and they turned out EXCELLENT!! I added extra feta. I prefer my Spanakopita with extra cheese! =) Also, the only thing that this recipe is missing is the fresh garlic. It's a must for any good Spanakopita. Chop, slice, or press a few cloves of garlic and add to the onions when you saute them. It makes for a much better flavor. Greeks LOVE garlic! Swap the vegetable oil for olive oil. Much better. Make sure you squeeze the spinach as dry as you possibly can. Too much moisture can cause mushiness. Make these changes and this is an awesome, authentic recipe that would make any Greek proud! Seven Layer Dip I

I have made different versions of this dip in the past and this one is EXCELLENT! It's a great dip but since it has the ground beef in this recipe it's more like a meal. You could definitely make it as a meal. It makes a lot too! Thanks so much for this recipe. I made it for a party and everyone loved it!! =)
