Roasted Pork Loin

Beer Bread I

I LOVE this bread. So easy to make and I always get positive reviews/recipe requests. I am still working on getting it to rise a bit more- I have tried letting it sit out 30 minutes before baking, which helps, but still working on it. (Also using the self-rising flour "cheat" as described by other reviewers.)

Key Lime Pie VII

I have made this several times with key limes and once by mixing lemon/lime juice in a pinch. Always a hit. The only bad part is juicing all the tiny limes. :)

Easy Spicy Roasted Potatoes

Delish!!! I used the taco seasoning since I didnt have the chili... VERY good! I actually preferred the onions more than the potatoes, they cooked to perfection and taste marvelous! I am definitely keeping this recipe and making it for guests next time and not just myself. yummy!

Chocolate Covered Strawberries

Sooo AWESOME and SUPER easy!! I melted my chocolate chips at half power , stopping and stirring about 1 1/2 min. until all chips are melted. then stirred in the shortening. I used the store brand and the turned out awesome!! White chocolate burns really easy, I would use half power and stir every 45 seconds until melted and add shortening.

Classic American-Style Potato Salad

Great potato salad. I'm teaching myself to cook thibg other than using the microwave. I overcooked the potatoes slightly, I might have have got the wrong parsly I got the kind they us as a garnish. I couldn't find scallions at the store, some one told me ther were green onions. I think it turned out pretty good.

Szechwan Shrimp

I double/tripled the recipe like said, and i was bummed to learn about all the chopping of garlic I had to do. I despise chopping garlic, so, I might have not cut up enough green onion and garlic, but I didnt notice it. I thought it was okay the night i made it, but i just reheated it up. SO MUCH BETTER! yummy! i will try this again, and try to make it hotter. i like it more spicy!

Thai Red Chicken Curry

Wow, I made this a bit ago and I was AMAZED how good it was, I made it for myself since my boyfriend isn't a big fan, and I was raving about what a great cook I was, mostly to myself, so thank you for making me one. haha. This is GREAT tasting, I added much more red curry paste then stated, but i love it spicy. Served over rice and saved for later, even though the leftovers aren't as tasty as first day, maybe the coconut milk solidifies again? Anyways, Thanks for my NEW favorite curry recipes!

Sweet-Potato Muffins

I made these, substituting only the oil for apple sauce and using whole wheat. I don't know but they are interesting, its just the taste of allspice is SO overpowering! I will definetly skip this next time if i make these again. My blender wouldnt grate the sweet potatoes that were softer, so I eventually just mashed them and hoped for the best. There are chunks of them in there and it's fine. Now, I just have to wait for a second party to try and critique. Interesting recipe, but maybe my skills as a cook are lacking.

Cowboy Casserole

I thought this was yummy and a great addition to my ground beef repertoire. I added some extra seasoning/bbq sauce to perk up the baked beans and substituted turkey bacon and homemade cheddar biscuits for the canned. I am excited to take this recipe camping when summer rolls around.
