After taking some of the suggestions, this was amazing.
I browned the chops while cooking the apples et. all. I doubled everything but the apples. When the sauce was caramelizing, I dumped it all over the chops in the pan, covered in foil and baked 20 minutes, then 15 without the foil (I also sprinkled more brown sugar on top after uncovering).
A few other things, I added a dash of ground cloved as well as use equal amounts of light and brown sugar. I just like the depth of the dark brown, but the taste of the light brown. New Favorite!
