Easy and Delicious Chicken and Rice Casserole

This was awesome! Only changes were adding a little more rice and substituting chicken broth for the water. I think it really made the chicken moist. Yum!!

Butternut Squash Soup

This is better than most brands I have bought in the store. I know I am strange, but I decided to make this sweet and add brown sugar to it. I also left in the cayenne and it had a sweet/spicy taste that I love.

Cinnamon and Lime Chicken Fajitas

I really liked this. My hubby liked it too, but thought it was a little sweet, so I might cut down on the cinnamon next time. Great for a totally different fajita. Oh, I cut the raw chicken up and then added the spices, lime juice and jalapeno to marinade for a couple minutes. Then cooked in a skillet with onions and bell pepper until soft.

Festive Beef Tenderloin

This was so good. I have alot of Moose meat, so I used a Moose Tenderloin. I added garlic to the steak along with the pepper. I also didn't have regular horseradish so I used the Kraft Creamy Horseradish Sauce instead of Mayo and Horseradish. I was delishious. I think maybe next time I will use Ritz Crackers instead of Saltine Crackers. Other than that this is a top notch recipe....Thanks

Buttermilk Pancakes II

This was a delicious, light, fluffy mid-week breakfast treat. I did add a dash of vanilla to the batter, and warmed the dairy and egg to at least room temperature. Scaled the recipe for three servings and it was plenty for myself, a one year old and three year old with a few left over. This one is going into the pancake rotation for sure!

Gingersnap Dip

After reading reviews I increased the cinnamon and pie spice "to taste". I also added some "Waler's Vanilla Rum" and ZOWIE! IT SINGS!!! I used "Mother's Gingerbread Men" for the ginger snaps. Cute!

Grandma's Green Bean Casserole

We really liked this for Thanksgiving. I also put some of the cheese into the bean mixture. Used french fried onions on top because the cracker mixture is so rich. Tasted great. Definately don't skip the onions in this, it makes a big difference.

Chili Dog Casserole II

This recipe is so fast, easy and tasty that it is a must on my list! My picky two year old ate an entire serving on her own, my husband had seconds! I addeed 1/4 of a large onion finely diced throughout the chili and inside the tortillas, also put down a layer of taco cheese inside each tortilla before wrapping the hot dog, yum-o! Thanks for a family-pleaser!

Ranch Bean Dip

This is one of my new comfort foods! I decreased the (light) sour cream a little bit and added some chopped green onions cause I love them so much. I didn't have ranch mix and i'm not really a fan of it, so I used half a packet of spicy taco mix and it was great!

Caramel Apple Pork Chops

After taking some of the suggestions, this was amazing. I browned the chops while cooking the apples et. all. I doubled everything but the apples. When the sauce was caramelizing, I dumped it all over the chops in the pan, covered in foil and baked 20 minutes, then 15 without the foil (I also sprinkled more brown sugar on top after uncovering). A few other things, I added a dash of ground cloved as well as use equal amounts of light and brown sugar. I just like the depth of the dark brown, but the taste of the light brown. New Favorite!

Bread Machine Pizza Dough

9/16/07: This is the first time I have ever been able to make a restaurant-style pizza at home. The whole family raved about it, and I am getting ready to use this dough to make another pizza for dinner tonight - second time in three days! I used a pinch of Italian Seasoning in the beer for extra flavor and baked on a pizza stone, which only took 15 minutes. Definitely do a light coating of grease to prevent sticking. Updated 8/25/09: This is still my standard, but I have switched from flat beer to milk. I found that beer can give the dough a bit of a bitter flavor, where the milk gives it a bit of sweet. I split the dough in half for a thin, crsipy crust (and save the other half in the fridge for pizza later in the week).

General Tsao's Chicken

This recipe was very good, my family devoured it and were begging from each other for more. 2 important things about this recipe, that I learned from the reviews are: 1. adding the cornstarch to the chicken is fine, but the cornstarch in the sauce mixture, you have to cut in half. 2. Cut down on the soy sauce and sugar. I also didn't have any chili peppers so I added chile in the jar, turned ourt great.

Easy Chocolate Ice Cream

This was easy and we all loved it. I will definitely make this again. It has the consistency of soft-serve. I read one of the reviews and lowered the temperature in the freezer. I gave it a 4 out of 5 because the taste of the syrup is very pronounced. You can tell it is made with syrup, and not baking chocolate or cocoa powder.

Tiramisu II

This recipe is amazing! I brewed 3/4 cup of super strong espresso, added 4 TBS of Kahlua and brushed half on each layer of ladyfingers with a pastry brush then let it sit for two days. I have never had such delicious tiramisu in my life!!!

Easy Apple Crisp
