Linguine with White Clam Sauce II

This recipe was a bit bland as is. But we added some pesto sauce and coarse ground black pepper to jazz it up. The pesto sauce did not overpower the delicate flavors. It was a hit with our family.

Lite Carrot Cake

These were very yummy. I used whole wheat flour and applesauce instead of oil. More like muffins than cake with the whole wheat, but perfect for easter breakfast:)

Hazelnut Chicken in Prosciutto-Cream Sauce

How anyone can rank this recipe under 5 stars is beyond me. This recipe is a 10! There were no leftovers to my dismay, and I did brown and then bake my chicken. Hubby said THIS IS A KEEPER! I will probably hace to make it every week. This is a dish you will not get tired of.

Apple Strudel Muffins

Very yummy! I used whole wheat flour for the batter and the topping. Also added cinnamon, nutmeg and about 1/4 cup applesauce. Probably will put more applesauce next time for more moisture due to the wheat flour.

Thai Pork with Peanut Sauce

I changed this recipe to fit my busy life for the dy. I used pork loin and put all ingredients in a slow cooker for 4 hours on high and served over rice after pulling the loin apart. Very delicious!

Puff Pastry Roll

The Sauce was 5 stars! The chicken was 3 stars. I used ground turkey and after reading all the reviews and added garlic and some red pepper flakes. But it still lacked something. With the right seasoning this recipe would be sooo good!

Black Bean Chili

Well with the mixed reviews on spicyness this I was surprised. I had to add more jalepeno to increase it becuase I thought it needed more ummph! Also I added some steak because I am a mom of 4 boys who crave it. However for the vegetarians out there, use veggie broth and to thicken it instead of pureeing it You could add half a cup of wheat germ!

Spanakopita (Greek Spinach Pie)

Went over really well at a Greek-themed dinner party. I made the following adjustments: 20 oz spinach, cooked and drained, 4 eggs, 2 C feta, 1 C ricotta, 18 sheets phyllo. I used all 18 sheets, and sprayed them with cooking spray. When I made it the first time, before the party, the crust along the side was thick, and leaked a little. So, in a brilliant move, I laryered 9 sheets of phyllo into the pan, added the filling, then layered 9 more sheets on top. Then I FLIPPED OVER the baking dish. That way, I was able to fold over the top layers attractively. Then I slid the package back into the baking dish. It looked professionally done.

Lentils and Rice with Fried Onions (Mujadarrah)

This was perfect! My mother used to make this and I never thought I would figure out what it was. I used brown rice and 1/2 water, 1/2 chicken stock. Cooked for 40 minutes together and added more stock half way through.

Grilled Zucchini I

I have been making this for years and I have found you don't need the foil. I usually put the zucchini strips in a ziploc, add olive oil, and season with salt, pepper and usually some cayenne. Then just put them directly on the grill. They are even better if they get a little "burnt" looking.

Butternut Squash Soup

This is better than most brands I have bought in the store. I know I am strange, but I decided to make this sweet and add brown sugar to it. I also left in the cayenne and it had a sweet/spicy taste that I love.

Cinnamon and Lime Chicken Fajitas

I really liked this. My hubby liked it too, but thought it was a little sweet, so I might cut down on the cinnamon next time. Great for a totally different fajita. Oh, I cut the raw chicken up and then added the spices, lime juice and jalapeno to marinade for a couple minutes. Then cooked in a skillet with onions and bell pepper until soft.
