Microwave Bread and Butter Pickles

I followed the recipe as written, using Splenda instead of sugar. The cucumbers and onions came out yellow, which was ok, except it did not look like the picture. The cucumber itself was soft and limp, but the ONIONS were delicious. This is my new pickled onion recipe.

Country Apple Dumplings

These were wonderful. My taste-testers didn't have enough thumbs to point up. I used diet 7-up, which tasted fine, but I think that in the future I will remove the cooked dumplings and thicken the sauce a bit before serving. What I especially liked that although some of the dough ripped a little, it didn't matter.

This was delicious!! I made it as posted with three exceptions: I use "Better Than Bullion" as opposed to beef bullion or beef broth, added a clove of minced garlic and all I had in the house was Colby cheese. This goes in the permanent file!

Gazpacho

This tasted fine after I adjusted the seasonings. I thought it was a little bland, so I added a lot more herbs. It tasted better, but the red color definitely took on a brownish cast. The onion was a little overpowering, in both flavor and texture, so I will use less next time. I will keep this on hand for snacking, it just wasn't wonderful.

Strawberry Vanilla Pancakes

This was a delicious recipe, I couldn't get the pancakes off the griddle and cooled fast enough for my family! Changes made: soured the milk with lemon juice, 2 TBS applesauce for the oil, reduced salt to 1/4 tsp, increased brown sugar to 3 TBS and added a dash of cinnamon. I let the batter sit for about 5 minutes and it thickened up nicely.

Good Dog Cookies

My dogs love these cookies. The changes I made were Chicken Bouillon instead of beef (didn't have any beef). 4 Baby carotts chopped finely (for veggies). 1/4 cup bacon drippings and 1/4 cup canola oil for the vegetable oil (for flavor). A dash of garlic (helps with mosquitos). The always want at least 2 each time.....
