Apricot Nectar Cake I

I was looking for a recipe to use some dried apricots that I had. I boiled them and then pureed them with the boiling liquid and that is what I used in place of the "nectar". I also added 1/4 cup of water to the mix. Easy recipe. Took to work. Everyone like the cake.

Healthy Banana Cookies

Healthful, yes. Tasty, maybe. The texture is not cookie-like or cake-like. Somewhat gummy. BUT, if you must watch your sugar intake, this is okay. I added nuts for crunch. Next time, I'll replace the oil with applesauce as suggested. It's better than no cookie! And, it's a better way to get in your oatmeal quota.

Beef Fajitas

I substituted the lemon juice with fresh lime juice and added a pinch of sugar and cumin. After cooking the meat, I cooked some thinly sliced onion and bellpeppers along with the green onions. Nice.

Cheesecake Supreme

Breaded Chicken Fingers

I'll give this a five for flavor but I opted to use the oven-bake method that other reviewer suggested. It lacked the crunch I love, but that's what I get for not frying. I adore fried foods, but I have to cut back (I already deep fried zucchini to go with this!) But the flavor was good and I'm sure the frying would have made them perfect.

The Best Zucchini Fritters Ever

These were very tasty but I did make considerable changes with the help of the other reviews: After grating the zucchini and putting it on a cheesecloth, I sprinkled lightly with salt and then wringed it out really well. I let it sit for a bit and wringed it out again. Then, I pureed onion and roasted garlic to add. Omitting the milk, added 1/2 cup cornmeal, 1/2 cup flour, 1/2 cup seasoned Italian breadcrumbs along with the cheese and herbs, etc. The eggs binded it enough so no other liquid was added. After shaping into thin patties, I coated them with cornmeal because I like crunch. Make sure the oil is super hot. They were very tasty and my husband who disdains zucchini ate several. Thanks for the basic recipe (Paula Deen has her own and I sorta melded both recipes into my version.)

Potato Latkes I

Yummy, but I did change a few things. Per others' suggestion, I cut down on the eggs. Then, I added garlic powder and sliced green onions. And I fried them in a super hot pan until very crispy. Everyone loved them! Sometimes, I like to add shredded Cheddar and crumbled bacon. Not true latkes that way but totally yummy. Unhealthy but ok if you just eat one!

Red Rice and Sausage

Hmmm...I was wary of the spaghetti sauce...but the result was good. I think the outcome depends largely on the type of sausage used. And I did not blend the mixture and bake it for an hour. Seemed unnecessary. Instead, I simmered the mixture--without the rice--for a half hour, then I served it over the rice, like red beans and rice. It was yummy. Oh, and I added a nice dose of my favorite hot sauce--Ring 'O Fire! It really gave it a nice, flavorful Louisiana kick.

Hot German Potato Salad III

Good basic recipe, but the amount of water is slightly too much. Even so, it tastes better if the water is replaced with apple juice! Also, scatter some sliced scallions on top for color and crunch.
