Simple White Cake

YUM! i made a dozen perfect cupcakes! great recipe! i only had self rising flour so i didnt use any baking soda....still came out great. perfect browning, perfect light cakes, moist. if you have a dense cake, you probably over mixed your batter...just mix it until combined and walk away! i will use this recipe forever!

White Chocolate Fruit Tart

wooo hoo!! what a great dessert! i got so many compliments when i brought this to a gathering after work...people even had thirds! the only thing i did different was that i added different fruit. you can get away with making half of the glaze, it made A LOT.

Zucchini Bread IV

i used this recipe for my first try at zucchini bread and it was great!! the only thing i did different is that i added more cinnmon...it made enough to share with co-workers and they all really enjoyed it. next time i'll try swapping out the oil for some apple sauce...but for the first go, i had to make the real thing. LOVED IT!

Aunt Kate's Green Beans in Tomatoes

It tasted like I heated up a couple of cans of vegetables. Oh yeah, I did. Although it's simple with is sometimes nice, I think recipes should involve a bit more than this one did.

Apricot Tea Cookies

We loved these cookies! I have made them with dried cherries and dried apricots. Both were yummy. I used plain yogurt instead of sour cream. It made no difference in flavor at all. I did need to add 2 Tbsp. of sour cream/yogurt instead of one to make the mixture form a ball.

Chicken-Fried Steak Strips

My first attempt at Chicken Fried Steak. I think it turned out really good. Used Cube Steak. Also, I think the recipe for the coating is plenty for a full pound of steak. I doubled it and had way too much.

Chicken Enchilada Soup III

Excellent recipe. I added a little more (an additional 1/2 tsp) of chili powder. Used the entire 10 oz. can of enchilada sauce. Used only chicken broth in place of the water, and added a dice jalapeno to the onion/garlic mixture. It was spicy - just how I like it. Great recipe.

Two Tier Strawberry Pie

I thought this was really good - however, maybe I did something wrong, but the cream cheese whipped cream mixture was not dense enough to support the berries. I think I will reverse the order next time, and put the berries in the base and top with the cream. The taste was excellent!

Chicken Tortilla Soup II

I thought this was great. I did make a couple changes. Cut the chicken broth down to 5 cups. I also added 2 fresh jalapenos to the onion/garlic/tortilla mixture, and cooked that a lot longer, until soft - then pureed it before adding the tomatoes. Got rave reviews! :)

Classic Bran Muffins

Really good and moist muffins. I used bran flakes cereal, omitted the raisens, added a teaspoon of cinnamon and upped the vanilla to 1 teaspoon. Everyone loves them.
