Garlic Chicken

This was pretty good for such a simple recipe. I followed the recipe very closely, except I used thin-sliced chicken breast filets, which cut cooking time down to about 25 minutes (plus a couple more minutes on broil for a golden-crisp finish). I also used Progresso Garlic Herb breadcrumbs instead of plain breadcrumbs, which really enhanced the flavor. I loved how quick and easy this was to make and the cooking aroma was lovely.

Roasted Duck

I pierced the skin of the duck to allow the fat to drain out and roasted it on a rack above a pan so it wouldn't be cooking in its grease. I also omitted the butter. It's amazing how much fat came out of the duck! The duck tasted good, the skin was crispy, but there was very little meat and despite draining out most of the fat, there was still a fairly thick subcutaneous layer remaining. I think there are slow roasting methods that eliminate that problem, but I didn't feel like spending 5+ hours doing that. The biggest problem I had with roasting a duck was the smell. I LOVE duck, but the smell of roasting duck in my apartment was nauseating. I was no longer hungry when it was finished and my living space smelled for days. I think the next time I have a hankering for duck, I'll go to a restaurant.

Cranberry Sauce

After-Thanksgiving Turkey Soup

This is a terrific base recipe that can be tweaked in many ways in order to suit a variety of tastes. It was my first time making turkey soup and I really enjoyed it. I used this recipe as a reference and then modified it to suit my own tastes. I scaled the recipe down a little, cut down on the butter and flour, reduced the amount of rice, replaced the half and half with cream, and added about 2 tsp. of salt. Other than modifying the amount of the ingredients used, I didn't try to deviate from the original ingredients. The soup had a great comfort-food sort of taste, similar to pot-pie filling. I think I may omit the rice next time. My sister commented that it gave the soup the consistency of rice porridge. It didn't hurt the taste, however. Another bonus to this recipe is that while cooking, it fills the house with the lovely aroma of roasting turkey. Yummy!

Chicken Pot Pie III

You will love this for substitution. Had a pound of steamed shrimp in the fridge (go figure). Cream of mushroom and cream of brochli, can of VegAll. Only used half the cream of broch as it was pungent. Added tarragon, garlic. Oh yea no pie crusts. Had a pkg of cresent rolls. Rolled those out sticking them together. Actually covered the bottom and top. It was great.

Italian Leafy Green Salad

This wonderful salad produced rave reviews for me on two occasions. I was not able to come up with the exact proportions of the leafy green mixture, but it didn't matter. I took the liberty of adding some toasted pine nuts and feta cheese just before serving, and it was a good touch!

Bacon for the Family or a Crowd

awesome, made for BLT's last night and my husband wanted to know how I got the bacon so flat! Perfect, did have to cook a bit longer then called for, but my oven tends to either be too hot or too cool. make sure you dont over lap the edges too much.

Garlic Chicken

Wonderful flavor! I did not have chicken breasts, and substituted bone-in chicken thighs. Because of the change in size, I browned the thighs before baking. It worked well. I would advise not placing any of the minced garlic in the baking dish, as it will burn. This recipe is a keeper!

Marmite Mince

Really simple and soooooooo good. I had my mince over mashed potatoes. I had seconds and one of my sisters had "fourths". I love Marmite and have been looking for recipes, this one is definitely a keeper.

Broccoli-Stuffed Sole
