Slow-Cooker Chicken Tortilla Soup

This was an excelent soup. I think women like to say the name, men pretend like they dont know what it is, but when I make this everyone goes back for seconds..............Hmmmm. I'de bet if they re-named Quiche and started calling it scrambled egg pie more people around here would be eating it. I have made my own chips and used store bought, either works fine. I have used home made enchilada suace as well as store bought and the home made is better, if you have the time and ingredients and don't mind the extra mess. I have also added black beans with good results. I like to serve with sour cream and a lime wedge.

Delicious Ham and Potato Soup

Another good hearty winter food that will use up that left over ham. I like celery so I increase that and add a few baby carrots to sweeten and add color, corn will do the same thing. Everyone seems to like this one and can serve with biscuits and call it a meal - it is filling.

Boilermaker Tailgate Chili

I used to make chili that was a lot simpler (about 1/2 of the ingredients) and had a lot more tomatoes. This is now my favorite chili recepie, it has a lot of spice for some people but the next day the chili is great for everyone. The flavors need time to blend. I like spicy so I like it when fresh frome the stove top, some people may need a spoon full of sour cream in thier bowl or a tall glass of water, the flavor is so good though everyone eats it anyway with thier faces sweatting the first night. Would I cut down on the peppers or chili powder? NO. If you don't like spicy then think of it as "next day chili".

Ham and Bean Soup

This was a very good tasting soup and a good way to use leftover ham. I throw it in a slow cooker and go ride snowmachines all afternoon or cut fire wood, this is good hearty food to come home to in the winter & warm you up. Easily made. I like to mash 1/3 of the beans or run them through a food processor with a bit of the broth to achieve the rite consistency and flavor. vegi's are good so I increase the amounts of all. I have had to add a small amount of salt at times, depending on the ham......... wait till' the end for that decision.

Tomato and Mozzarella Bites

I love vineger or sauces with "zing". This appetizer looks great on just about any plate. TIP - grab the first couple of people that walk bye (kids will think it is fun) and get a mini-assembly line going, prep time is now just 5 minutes.

Cabbage Rolls II

This was my first attempt at making cabbage rolls. As it is, I give this recipe four stars. After reading some tips and a couple tweaks of my own it is a five star favorite that I will make again. I cut the pepper in half and doubled the onion and sauce like everyone sugested. I also added a nice handfull of sausage (1/3 - 1/2 lb.) 1/2 C of coarsly sliced mushrooms, 1/2 C of sliced zuchinni and 1/8 tsp. garlic powder. Wow, these things were the bomb and I wished I had more when they were gone! I will try puting the excess cabbage at the bottom of the dish next time. I had some left over meat mixture that I added a beaten egg to along with a big handfull of crushed ritz crackers, put into a bread pan and spread a mixture of ketchup and heinz 57 on top, called it meat loaf and baked it rite along with the cabbage rolls. Neither pan made it past the second night.

Spaghetti Sauce II

This was great. I used fresh oregano from my garden and bulk sausage made into meatballs. My kids & hubby loved it. Next time I'll triple the batch and freeze it for a busy night.

Bread and Butter Pickles II

These turned out very good. However, my batch was 7 pints and tripled the brine...too much - a double batch would have been just right. Also, I rinsed VERY thoroughly and the cukes still tasted really salty, but don't worry, they won't when they are done. Very time consuming to make, but worth it.

Baked Mac and Cheese for One

This is by far the best mac and cheese recipe I've found (and I've been looking for a long time)! I added a little bit of garlic powder along with the onion powder, but that is a personal preference of mine. As for the review stating that Kraft Macaroni and Cheese is the best...these types of dishes are not meant to recreate the blue box. If that's what you're after, just make a box. But if you are looking for a warm, creamy, cheesy and easy pasta dish this is one of the best! I too will have to figure out how to increase it to make it for more than just one! Yummy!

Fresh Dill Pasta Salad

I used fresh everything from my greenhouse (dill, cukes, tomatoes, onions) and made this for an annual BBQ at my home. FANTASTIC flavor. I used LOTS of bigger shrimp instead of canned ones. Also, the amount of dressing was perfect for a batch and a half (my box of pasta was 13oz).

Blueberry Buckle

Brought this to work and was gone instantly. Family loved it too. Don't overbake or it will dry out, and remember to add some pecans or walnuts to the topping for extra flavor and crunchiness. YUM!!!

Since serving this dish I have made copies of this recipe to pass out. It is very tasty and can be prepared ahead of time. I baked the dish about 50/55 minutes. Next time, I might add a tad more milk.

Awesome Slow Cooker Pot Roast

My family has used this recipe for years. We don't use any water, however. That would be an answer to some reviewers who thought the gravy wasn't thick enough. We also use this on skinless chicken legs or thighs. Excellent over rice. I would not recommend cooking this on high for only a few hours. It will still be good, but you're taking a tough piece of meat and only making it slightly tender. I always cook mine on low all day long.

Grandma Johnson's Scones

This is the first time I've ever made scones. I needed something to take to work for an early meeting and had everything on hand for these. I replaced the raisins with craisins and sliced almonds, added a couple drops of almond extract, and sprinkled course sugar on top before baking. These were gone within 30 minutes!!! I got compliments all day long and many asked when I was going to bring them again. What a great recipe!!!!! A definite keeper and I'm sure I'll make them many times over.

Grilled Flat Iron Steak with Blue Cheese-Chive Butter

First of all I have to say that I am not a Blue Cheese fan. That being said I thought that the butter would mellow the flavor a little and thought I would give this a shot. I did not care for the blue cheese butter at all. The marinade for the steak, however, was very good. It could use just a little bit more kick. Next time I will try using fresh herbs instead of dried, the flavor would be so much better.

Penne with Spicy Vodka Tomato Cream Sauce

This was very good. There are some things that I didn't like about it, though. I had cut way back on the amount of pasta and it was still too much. I wouldn't cook this again for myself and the kids, it doesn't reheat real well. If I'm having company, though...!
