Christmas Breakfast Sausage Casserole

Recipe was definitely a good start, and then I followed other suggestions to finish it up. I used croutons instead of bread, and used half regular sausage and half spicy sausage. Now this is a family favorite!

Pollo Fajitas

Hamburger Pie

This was a good, warm meal for a rainy day. I used canned corn and frozen peas instead of green beans, and used one can of condensed soup and one can of diced tomatoes. I just spread the mashed potatoes over the top, and switched the oven to broil for the last minute to kind of crisp them up. All in all, a good recipe to keep on hand!

To Die For Blueberry Muffins

Better than any muffins you'll find in a store, these were DELICIOUS! Only change I made was using white AND brown sugar for the topping. Absolutely perfect, definitely a keeper!

Slow Cooker Chicken and Dumplings

This was a good start! I followed some of the other reviews and used 1 can cream of chicken, 1 can cream of celery (one of them low sodium). Then I added 2 cans chicken broth to thin it out a bit. I added about a tablespoon of garlic powder and a small handful of minced onion. After cooking just the chicken for about 5 hours on high, I added a frozen bag of mixed vegetables and a bag of egg noodles. I cooked biscuits separately in the oven, and then tore them up and put them in the bottom of the bowl before covering with the slow cooker mix. It was delicious! The biscuits weren't too gooey, they were just right. Definitely a keeper.

Light, Crisp Waffles

I've been trying to find a waffle recipe that turns out at least decent. I came across this one on my search for a waffle that was low calorie (Most are 400+ per servings yikes!) and these are AMAZING! So, easy to make and turn out great! Love them I made them 2 days in a row due to making far too much batter, the day before, because I was planning on having a few friends over for breakfast and they couldn't make it. My boyfriend doesn't generally like eating the same thing two days in a row, and he was excited about having these waffles on the second day just as much as the first. Awesome!

Sour Cream Lemon Pie

I followed this recipe to a T and it's great! I do personally like a bit more "lemony-ness" and "sour creamy-ness" though. I loved the consistency and goodness of this pie so much I made it a second time around and added just a 1/4 more lemon juice and a 1/2 cup more sour cream to suit my tastes. This is a perfect recipe and I would eat it again even without my personal changes.(And again, and again...and again!!!)

Chiles Rellenos Pie

I think this recipe was quite good. To save time I used canned whole chiles minus stems and seeds. I used chopped rotisserie chicken and did not use the salsa on top but served it on the side along with refried beans and warm tortillas.(Salsa verde was a wonderful choice for this recipe) My finicky husband liked it too and even had seconds! After 16 years he still has some surprises up his sleeve.

Salmon Patties I

I liked this recipe. If you are looking for spice, this isn't it. I had lots of avocado sause left and it didn't turn brown after a few days in the refrigerator. I did use my food chopper as the blender didn't work for me. I added some lime juice to sause.
