Stuffed Peppers My Way

Reviewed: Aug. 22, 2007
This was good, I would say 4 1/2. We had it with some chicken for dinner and for left overs we had it for breakfast with a fried egg on top, which I liked better.

Seafood Enchiladas

Reviewed: Aug. 22, 2007
This was pretty good. I followed the suggestions to make a rue with the sauce but I don't think that I will do that next time. I didn't have any crab meat so I just used all shrimp. I also used fat free half and half and lowfat sour cream to cut down on the fat. Even so it still seemed like a very filling meal. I also used fresh cilantro instead of parsley. It was a nice to change from the average enchilada.

Taiwanese Pork Chops

Reviewed: Aug. 10, 2007
This was good. I did a few things different. I didn't have any white wine on hand so I just used vinegar. I also didn't have a large enough bag so I put the marinade in a large glass pan and doubled the recipe because I had 8 thin sliced pork chops. I added 1TBS of vegetable oil so the marinade wasn't so thick. The pork chops alone were fairly salty, but not over powering. I made fried rice as a side and chopped up the porkchops and mixed it into the rice, it was great.

Bow Ties with Sausage, Tomatoes and Cream

Reviewed: Aug. 7, 2007
WOW! This was awesome. I loved this dish and so did my family. I did a few things different though. I used italian seasoned ground turkey to cut down on fat and I used canned diced tomatoes and added 1 TBS of italian seasonings to them. It turned out great and was a very filling dish. Thanks!

No Bake Chocolate Oat Bars

Reviewed: Jun. 21, 2007
These reminded my husband of a cookie his late mom used to make him. He was SO happy that we found a similar recipe. These are his new favorite :) In order to keep the oats from falling off, I cooked them much longer than the recipe calls for and I added a bit of milk. When the oats were nice and soft, I pressed the first half into the pan firmly, then after I added the chocolate I lightly pressed the oatmeal that goes on top into the chocolate. I had very minimal crumbling. Great quick recipe!

Salmon, Rice, and Fried Tomatoes

Reviewed: Mar. 17, 2007
This was very good. It really does need salt though, luckily I read the reviews before I made it and salted the dish as I cooked. I also made a butter sauce too for the rice, it was really good.

Peanut Butter Sheet Cake

Reviewed: Mar. 14, 2007
This was very good. I was a little a scared because the batter is very runny but it worked. I wanted to use other cake pans but with the consistancy of the batter I think that the pan the recipe calls for would work the best. I also frosted it with chocolate fudge frosting and it was great. Next time I want to make it with strawberry filling and wipped frosting to maybe mock the peanut butter and jelly sandwich! Thanks for the recipe.

Chocolate Fudge Buttercream Frosting

Reviewed: Mar. 14, 2007
I am giving this a 5 for it's flavor, it was rich and very chocolaty. But it was very runny if you follow the recipe exactly. Don't use this if you are decorating a cake, if you do add at least 2 more cups of powdered sugar.

Restaurant-Style Hashbrown Casserole

Reviewed: Mar. 14, 2007
This was a great side dish and the only reason I am giving it a 4 is because it was a little too greasey. I will make this again, I think that I may just omit the butter and use reduced fat cream of chicken or cream of mushroom and maybe some fat-free sour cream to make it creamier. I originally made it with cream of mushroom and it was really good and I didn't add any salt at all because there is enough salt in the soup and cheese.

Great frosting! The almond extract really sets this frosting apart from the others that I have tried. It worked great for piping and making roses. I will always use this recipe from now on, love it!

Cream Cheese Sugar Cookies

Reviewed: Feb. 13, 2007
This is such a TASTY cookie. I made sure my dough was chilled and I used lots of flour on the counter and the rolling pin and they rolled out fine for me. Careful not to overcook, they brown very very quickly. And I agree with a previous poster, when you roll them out make sure to air on the thick side. I do NOT like sugar cookies, but I was making these for my daughters class for valentines day and I at 2 with out frosting they are so tasty!

I like this recipe, very simple and looks very professional. Good for cookies that need to travel. I made mine a little too runny next time I'll go for a thicker consistancy

Boston Cream Pie II

Reviewed: Jan. 22, 2007
This was ok for us. The custard didn't have the flavor I was hoping for, and for all the work, I think I'll probably stick to the boston cream pie box mix that the super market sells. It's a zillion times easier and has better flavor.

Bacon Mushroom Chicken

Reviewed: Jan. 20, 2007
This was great, my husband loved it. I did a few things different though. I used boneless, skinless chicken breast and 5 slices of bacon instead of 3. Once I took the chicken out of the oven, I cut up the bacon and cooked it in the skillet until it was crispy. I removed the bacon and cooked a tablespoon of flour in the bacon grease and then added the jucies from the chicken and wisked it into the flour. Then I added the cream, which was about a half a cup. I also cut up the chicken into smaller pieces. It was good with spaghetti, we loved the smokey, bacon flavor. I would have liked more sauce so next time I think I will add some chicken broth. Thanks!

I have made this several times already. One thing that I did differently was instead of using onion powder I grated about 1-2 TBS of white onion into the topping mixture. It tasted great!

Cake Mix Cookies IV

Reviewed: Jul. 14, 2006
This recipe was fabulously easy. I used a white cake mix and a large bar of chocolate with almonds cut up into chunks. I made one batch with really small bite sized cookies for the kids, and another with big cookies for the adults. Both times the cookies rounded out beautifully and were just the right thickness. They are on the sweetside, I think next time I will try it with chocolate cake and white chocolate chips. After I baked the cookies, while they were still slightly warm I put them into a ziplock and they sayed perfectly moist and chewy. Wonderful! Could NOT be easier than this. The cookies LOOK very nice too!

Quick and Easy Brownies

Reviewed: Jul. 10, 2006
These smelled very yummy before I baked them, but for some reason they didn't bake the way they should have, and it took 45 minutes for the middle to finish cooking and the outside was a little burnt. They are also oily, but I wonder if that is because of the margerine I used. Either way I do not like the flavor or the consistency. I will keep looking for just the right brownie recipe.

Easy Dump Cake

I enjoyed this recipe. I used chocolate cake mix instead of yellow. It was sweet, dense and moist and needed no icing. My kids really enjoyed it. I didn't use the chocolate chips, but I think I will next time :)
