Juicy Roasted Chicken

Wonderful Banana Cake

I'm shocked at how fantastic this recipe is. I don't even like bananas or banana cake/bread much, but a friend of mine requested it for his birthday so I gave it a try. These are so tasty!!! Moist and yummy, not too sweet but sooo good!! I did adjust my baking temp a little lower, because my oven cooks hot. Just watch them carefully, they go from done to over done quicly.

Best Big, Fat, Chewy Chocolate Chip Cookie

This recipe is incredible. I have made many many different chocolate chip cookie recipes and this is by far my favorite.... for ease, for simple ingredients and for taste. My husband is a chocolate chip cookie fanatic and this is by far his favorite recipe. We have made this several times and always comes out great. The kids have so much fun rolling them out. Make SURE you chill the dough though, or it will be very very hard to roll!

Creamed Chipped Beef On Toast

Mini Cheesecakes I

All of my friends and family absolutely love this recipe! It is 20X better than anything store bought!! I've made it numerous times now, here are some tips: 1. Make sure cream cheese is at room temp!! 2. I crushed up graham crackers for the crust, added some butter and pressed into liners. 3. Beat ingredients until light and fluffy, a couple minutes. No reason it should not be smooth, if lumpy keep beating it will get there!

Double Layer Pumpkin Cheesecake

I made this for Thanksgiving 2007, for my husbands family, it was a hit! Instead of a regular cheesecake, i did cupcake tins. This way everyone got the perfect serving without going overboard!

Extremely delicious! I left out the cloves, since i didn't have any but i did add 1/4 tsp. extra cinnamon and baked 10 minutes. PERFECT!!! My taste buds are in heaven.

Sausage & White Bean Soup

Ok, my soup turned out awesome. Just made it! However I did make some additions and changes. I doubled the recipe so I would have left over’s for lunches throughout the week. Crumbled the sausage in the beginning and added about four cloves of garlic minced to the veggie mixture. Also used both fresh rosemary and thyme and did not add until I was ready to simmer with the chicken broth. Per a previous review I rinsed all the beans, and only used low sodium chicken broth. At the end I added several handfuls of fresh spinach and about 3/4 cup of cream. Yummy!!!! Top it off with fresh grated parmesan! I am giving this recipe a five even with all the additions because I think I would love it even with the simpler version.

Italian Butter

I made this tonight and my 12 year old daughter ate almost a whole loaf of bread by herself! Yikes! This was very good to say the least!!! The only change I made was added some fresh basil rather than dried. (I always have this on hand.) And I added some balsamic vinegar to the plate when I added the olive oil.

Penne a la Vodka I

Ok, I will give a five even with a few changes. I loved this sauce, however did end up using a bit more Vodka and adding additional garlic. I also used diced pancetta rather than regular bacon. I added the garlic after I had cooked the onions, ( to avoid burning it.) and along with the garlic added a few pinches of red pepper flakes. In addition I added about a quarter of a cup of fresh grated parmesan along with the cream and crushed tomatoes. ( Omitted the salt alltogether as did not seem to need it with the cheese.) Garnished with more shaved parmesan and lots of fresh basil. Yummy!!!

Chocolate Cookie Bark

This was fantastic, I used some milk chocolate, some white chocolate, and some dark chocolate. I left my cookie pieces a little too big so the end result was thicker, but everyone liked it. I mixed my peanutbutter into the white chocolate, and I put the pan outside. Since I live in Alaska the chocolate was hardened in just a few minutes so this recipe took almost no time at all. I put the pieces in christmas colored chinese take out style boxes and gave them as gifts. They were very pretty and a big hit!

Quick Chicken Zingarella

Everyone ate this all up! I cooked the mushrooms (8oz.), onions, and half of the garlic together. I took note in the reviews that it needed something more flavor wise, so I added kosher salt and thyme to the mushrooms. I cooked the chicken separately and I didn't bother salting it because the sauce has plenty of sodium in it, but i did add italian seasonings and the rest of the garlic. Once the chicken browned I combined everything and used a 1/2 cup of red wine and it was perfect. I didn't have any roasted cherry peppers on hand but will try next time or brown sugar, it was great without it.

Chicken-Stuffed Shells with Sherry Sauce

This was so good. I did some things different though. I boiled my chicken breast in lightly salted water with a bay leaf and a crushed garlic clove. Once it cooled completly I cut up the chicken in a fine dice. I also chopped up the mushrooms into smaller pieces. I added 2 cups of ricotta cheese and 1 tsp. of italian seasonings to the chicken/cheese mixture. Once it was combined well I put it in a pastry bag and used it to fill up the shells, much easier this way. It filled up 20 jumbo shells. I noticed that a lot of the shells broke, so I am glad that I cooked more than 8 oz. I would have like more sauce so maybe the addition of a cup of chicken broth would do the trick. Also, for the blandness, these stuffed shells taste great with a little spaghetti sauce drizzled on top.
