Slow-Cooker Chicken Tortilla Soup

This was an excelent soup. I think women like to say the name, men pretend like they dont know what it is, but when I make this everyone goes back for seconds..............Hmmmm. I'de bet if they re-named Quiche and started calling it scrambled egg pie more people around here would be eating it. I have made my own chips and used store bought, either works fine. I have used home made enchilada suace as well as store bought and the home made is better, if you have the time and ingredients and don't mind the extra mess. I have also added black beans with good results. I like to serve with sour cream and a lime wedge.

Delicious Ham and Potato Soup

Another good hearty winter food that will use up that left over ham. I like celery so I increase that and add a few baby carrots to sweeten and add color, corn will do the same thing. Everyone seems to like this one and can serve with biscuits and call it a meal - it is filling.

Boilermaker Tailgate Chili

I used to make chili that was a lot simpler (about 1/2 of the ingredients) and had a lot more tomatoes. This is now my favorite chili recepie, it has a lot of spice for some people but the next day the chili is great for everyone. The flavors need time to blend. I like spicy so I like it when fresh frome the stove top, some people may need a spoon full of sour cream in thier bowl or a tall glass of water, the flavor is so good though everyone eats it anyway with thier faces sweatting the first night. Would I cut down on the peppers or chili powder? NO. If you don't like spicy then think of it as "next day chili".

Ham and Bean Soup

This was a very good tasting soup and a good way to use leftover ham. I throw it in a slow cooker and go ride snowmachines all afternoon or cut fire wood, this is good hearty food to come home to in the winter & warm you up. Easily made. I like to mash 1/3 of the beans or run them through a food processor with a bit of the broth to achieve the rite consistency and flavor. vegi's are good so I increase the amounts of all. I have had to add a small amount of salt at times, depending on the ham......... wait till' the end for that decision.

Tomato and Mozzarella Bites

I love vineger or sauces with "zing". This appetizer looks great on just about any plate. TIP - grab the first couple of people that walk bye (kids will think it is fun) and get a mini-assembly line going, prep time is now just 5 minutes.

Cabbage Rolls II

This was my first attempt at making cabbage rolls. As it is, I give this recipe four stars. After reading some tips and a couple tweaks of my own it is a five star favorite that I will make again. I cut the pepper in half and doubled the onion and sauce like everyone sugested. I also added a nice handfull of sausage (1/3 - 1/2 lb.) 1/2 C of coarsly sliced mushrooms, 1/2 C of sliced zuchinni and 1/8 tsp. garlic powder. Wow, these things were the bomb and I wished I had more when they were gone! I will try puting the excess cabbage at the bottom of the dish next time. I had some left over meat mixture that I added a beaten egg to along with a big handfull of crushed ritz crackers, put into a bread pan and spread a mixture of ketchup and heinz 57 on top, called it meat loaf and baked it rite along with the cabbage rolls. Neither pan made it past the second night.

Sun-Brewed Mint Tea

YUMMM!!! I found your recipe this morning and just happen to have a huge bunch of mint growing nicely in my green house. I made the tea, then added one lipton regular tea bag to it for a bit of caffein and taste. It is sooo good! Im sipping some right now! Thanks for sharing! :)

Slow Cooker Chicken Taco Soup

I LOOOVE IT!!! We are huge taco fans in general, this was a great switch up and I love that it can cook while me and my little people go play, and then when we get home its done and the house is smelling like a big taco! Wonderful! Thank you for sharing your redipe! I did add 2 whole tomatos (fresh) at the beggining, just to put a few more vites in there. Again thank you! Absolutly delish!!

Chicken Pot Pie IX

This was delicious!!! I have made it twice now and am addicted. I made it the other day while my daughter was napping and stuck it in the fridge until dinner. Pulled it out 1 hour before & popped it in the oven. One of my dinner guests said "This is the best pot pie I have ever had!" He then continued to eat 3 HUGE slices! Needless to say we didn't have leftovers. Next time I will make two!

Savory Crescent Chicken

This was ok but my husband didn't really care for the flavors. It was a little rich for us. I think I would definitely use less cream cheese or serve it sliced for appetizers instead of the main course.

Garlic Prime Rib

We love garlic but this was just too much for us. The garlic seems to be a little bitter after roasting. We cooked to 140 and it was still raw. Next time I will cook to recommended temp.

Cajun Chicken Pasta

We really liked this. I did have to make a few adjustments though. I don't like mushrooms and maybe reviewers said they added no flavor so I omitted them. I also thought the sauce was runny (I used the right cream) so I added a bit of flour. Also we threw in some snap peas that we had on hand. Gave it some nice color and additional flavor. Will definitely make this again. My 14 month old daughter even loved it.

Baked Ziti Casserole

We thought this was very tasty. I added spicy sausage to the sauce as well as some defrosted chopped spinach. I added fresh basil to the ricotta cheese mixture, and used an Italian 3 cheese mixture in place of parm cheese. I too used more sauce than the recipe calls for. Thanks for a great recipe!

Mediterranean Quinoa

I read suggestions an altered a little. I sauteed the veggies in olive oil, used 1 cup quinoa and 2 cups water - perfect!! I also threw some cheddar cheese and turkey ham in. My 9-month old daughter LOVED it and kept wanting more.

Quinoa Pilaf

This was really good, even my 9-month old daughter LOVED it. She just kept opening her mouth for more, which these days is pretty uncommon. I didn't add lemon or salt & pepper because I don't give my daughter salt and my husband is not a fan of lemon. What I did add though was some grated cheddar cheese, bell pepper and turkey ham - yum! Definitely will make again!

Smothered Green Beans

We thought this was great. As other reviewers suggested, I first steamed the beans for about 5 minutes. I also used chicken broth instead of water, and threw in some red pepper flakes. These were delicious!!!

Byrdhouse Marinated Tomatoes and Mushrooms

This recipe was wonderful! I was worried, because I'm not crazy about mushrooms in general, but they were delicious in this recipe. I ate it both plain and also served finely chopped over cheesy homemade focaccia bread, which I loved as well. I actually ate it for a few days in a row and didn't notice the tomatoes getting very soggy as another reviewer did, but my tomatoes were fresh from the farmers market.

Lemon-Butter Snow Peas

Fried Rice with Chicken

I just made this tonight for my boyfriend and I, and we loved it! I only used 1 slice of bacon so I added a little bit of oil before I scrambled the egg. In the name of sneaking in more veggies, I also added green onion, mushrooms, and chopped fresh snow peas plus plenty of cayenne pepper. It was delicious! Better even than the our favorite Chinese buffet, and there's even enough left for me to take to lunch tomorrow!
