Chocolate Thumbprints II

I made mine bigger than necessary. They spread out quite a bit when they cooked. Skipped the egg. Sounded like too much work for no reason I could figure. Someone says these aren't chocolaty enough, but I found them to be very chocolaty. Rolled them in red and green sugar and they turned out pretty for Christmas.

Melt - In - Your - Mouth Shortbread

Wow. These are amazing, and pretty easy to make. We sprinkled with colored sugars. Important to bake at 350, I think instead of 375, and you'll have to check often because they go from not done to done in a short period of time. How many minutes it takes depends on the pan, really. I used two different pans. In one pan it took 15, and the other it took only 10. Just keep an eye on those edges and take out as soon as they start to turn brown and you'll be fine. Also, whip that butter a LONG time. I think I let it go maybe 15 minutes on high. Once I added the other ingredients I think I let it go on high about 5 minutes after the initial minute on low. Everyone loved them.

Orange-Glazed Asparagus

Very good and very easy. But, it works just as well to just mix the oil and orange juice in and cook it until it glazes. I haven't had to remove the the veggies and then make the glaze. Just leave it all together. I also add a little ground ginger to it. Works well with broccoli too.

Chipotle Shrimp Tacos

This was great! I did cut the recipe in half, used 1 1/2 chipotles, and yes - it was pretty spicy (but just right). I used sliced avocado and a tiny bit of mexican cheese to top the soft tacos. Very good - will absolutely be making this again!

Grandmother's Buttermilk Cornbread

This comes out perfect every time I make it. I made it tonight to go with seafood gumbo for the company we had over and everyone raved about it. The pan was empty in less than five minutes. Like others, I preheat my cast iron skillet while I'm prepping the batter - it makes for a truly wonderful crust. Thank you so much, Bethany, for posting this wonderful recipe!

Pumpkin Muffins II

These were really, really tasty. I had to grind my own cloves and nutmeg, and contribute much of the flavor to the fresh spices. I used a 15 oz can of pumpkin puree since it's July and no pumpkins to be found in this town right now. I ended up with about 15 good size muffins that rose beautifully.

Pizza Dough III

Increase the flour to 2 1/2 cups and bake (with toppings on it) for 20 minutes at 400 and you'll be pleased with what you get. We also let it rise a little longer.

Tzatziki Sauce I

I thought this was great not too runny at all! I added a bit too much dill because i didnt use fresh i used dill weed and I did about a half a tbsp. Just a bit too much but still great. I had it on a homemade gyro and it added so much flavor AMAZING!!

Simple Beef Stroganoff

I also thought this was a good base recipe. I added onions, garlic and mushrooms and I thought it was a nice easy recipe. I wouldnt say it was anything great but it is a good one if you are in a hurry and need a nice filling meal!

Jalapeno Popper Wontons

I was being lazy and I didnt make these into wontons i made whats called rangoon cups. You just put the wonton wrappers into small muffin tin and spray with cooking spray then you place filling in the cups and bake. They were very good. I thought they were pretty hot but they were good! The saice helped with the heat!

World's Best Lasagna

This really was a great lasagna. My husband use to say the best lasa was stoffers but he said this is his new favorite. It was a hit! I loved the slices of mozz I might even add a little more next time

Buttermilk Honey Wheat Bread

I made eight large breadsticks out of this and they turned out perfectly. I'm picky about my wheat bread as I grew up on grocery store white, but this was wonderful. I could easily eat this everyday. Oh, and I had to "make" buttermilk by adding 1 1/2 T vinegar to the milk, but everything else was to the letter. Thank you!!
