Brooke's Best Bombshell Brownies

This was good. I used mini choc chips since I didn't have the reguar size. I think I overcooked it, which affected the texture a bit. They were good, but not super special.

Gramma Bertha's Banana Cake

My bf really liked this. I made it in two 9-inch rounds. The centers didn't cook as well as i'd prefer, which is probaby why the recipe recommends a bundt pan. I screwed up at first...I forgot to put flour in the batter!! I cooked it for ten min before I realized it, scooped the batter back in a bowl, added flour and recooked it. That also could have contributed to the soggy center. =) Fortunately, even with the huge mistake, my bf loved it. lol

Broccoli Chicken Casserole I

I think this is a great little meal. Cooked up some chicken tenderloins in a skillet with chicken broth and some seasoning, cooked the stuffing, and like other ratings suggested I just mixed it all with the soup (I used one can cream of chicken and one can cream of broccoli). I nixed the mayo, and was (OOOPS) out of milk, so I added a little chicken broth and water to thin the mixture up. I added some basil, onion powder, garlic sat, and italian seasoning, and loaded with cheddar cheese. Baked until bubbly..and parfait! Excellent, tastes wonderful. With the modifications this is a GREAT recipe, thanks!

Iced Pumpkin Cookies

HOLY COW these are AMAZING. Probably the best and most moist cookie Ive ever made. Next time I'll prob add more of the spices for a bit more punch, or try some chocolate chips, but leaving it just as it is with the icing is superb.

Tomato Bacon Grilled Cheese

I made several variations of this. I prefer them with pepperjack cheese. My boyfriend and I preferred the sandwiches open faced - bread, cheese, bacon and tomato. Very good recipe as is, but if you want to be creative with the concept it tastes good as well. I also made them with pepperoni slices in the middle, but it wasn't our favorite.

Vegan Split Pea Soup I

Quite tasty prepared as is, which is what I did. My daugher sprinkled on about a tablespoon of homemade bacon bits that I always keep in the freezer, and she said that pushes up the rating to five starts. For me however, I was aiming for a vegetarian dish. Will make again. :)

I loved this. The vinaigrette was really good. I added tomatoes, extra hard-boiled eggs and extra bell pepper. (I only made 4 servings bc there were only 2 people eating it, but didn't want to waste the bell pepper.)

Baked Spaghetti Squash Lasagna Style

Really good. I added some crushed red pepper flakes and spinach. I omitted the olives bc I can't stand them. My bf wasn't fond of the squash because it is crunchy, but he loved the sauce. It was a beautiful presentation. The sauce didn't make enough for the amount of squash so I put half of the squash in a container for future use. In the future I will double the amount of sauce.

Ham Broccoli Braid

This was really good!! I used cheddar cheese and honey mustard because I didn't have swiss and dijon. I might use pepperjack cheese next time. I added twice the amount of broccoli as well, because the filling didn't seem like enough for the braid. My boyfriend didn't like it though, probably because of the mustard.

Garden Stuffed Baked Potatoes

This was very good. I used fat-free ranch. I accidentally forgot the last two steps...I didn't coat them in vegetable oil or add salt/pepper/parsley. I'm sure that would make the recipe even better. I added some cheddar and and bacon bits because I love cheese and bacon. =D
