Eggplant Au Gratin

Good, simple, and quick. I thought it would need herbs of some sort, or at least salt, but neither was needed. If you want to add something, you might try Italian seasoning or garlic. I used baby eggplants. Try not to get eggplants that are larger then the ramekin/dish you plan to layer them in. BF liked them. Would make again - it's just so easy.

Southern Candied Sweet Potatoes

Delicious all the way through! I substituted brown sugar for white and added a few splashes of spiced rum to deepen the flavors. Very easy to make.

Green Chicken Enchilada

Loved this basic recipe. I too like to chop chic breast, saute with onion & garlic + mex spices I put some of the sauce & cheese inside the tortilla and then pour over the green sauce & then sprinkle dried cilantro & paprika on for color. I make two 9x13's & freeze one. Why make the mess and not make 2 batches :-}

Greek Butter Cookies

We didn't alter a thing. This recipe is simple, quick AND delicious. My Canadian Greek friend, Maria, will be upset because these cookies taste exactly like hers. I made them for the neighborhood kids and then taught them how to make their own. They were highly impressed with this recipe and the fact that they too could make it. Thank you!

Mushroom Sauce Baked Pork Chops

OMG! This was good. I made a few small changes like adding fresh mushrooms, sliced, with the onions. Then I added 1/3 cup of sour cream for 1/3 cup of milk. The pork chops came out so tender and tasty and the potatoes were great. Since there are only two of us, I cooked three pork chops and made the entire portion of the sauce recipe. I also used a pork chop spice blend which is always good.

Easy Apple Crisp

I will definitely make this again but as one reviewer said with rolled oats. If you make the recipe as is, it's too "floury." It needs at least half as much flour and more sugar in the topping. With that, I think it would make 5 stars.

Spinach Stuffed Chicken Breasts

I went with what one review said and baked the chicken at 400 degrees; 15 min covered, 20 min uncovered, and 5 min on broil. The bacon was still a bit soggy (I would have liked it to be crispy) and the chicken was very dry. I'll cook the bacon separately next time. The filling for this is fantastic and I did add some chopped onions...delicious!

Campbell's® Slow Cooker Savory Pot Roast

This was very good however the meat was tough. I cooked on high for 4 1/2 hours. Not sure if I accidentally chose the wrong cut of roast or if it's the cooking time that created the tough texture. I did sear the outside of the meat on the stove as many others suggested and added Montreal Steak Seasoning.

Mint Chocolate Cookie Crunch

What a great idea! The texture and flavor combination do remind me of thin mints. I followed the advice of prior reviewers and used 2 tsp of the peppermint extract. I also used double stuffed Oreos which melted a little in the hot chocolate. YUMMY! I am going to bring them to our holiday office party tomorrow!

Downeast Maine Pumpkin Bread

Dont let it fool you-- this is cake not bread, esp with the 3 cups of sugar in it. It is really good- everyone liked it BUT I think I will do it again with 1 less cup of sugar. If that works I may cut the sugar even lower. Also it says it makes 3 3x7 loaves, I made 4 and they almost overflowed the pans, I may go for 5 next time. Did I say next time??- yes I will make this again.

Great punch! I couldn't find the juice either and ended up using Ocean Spray Cran-Raspberry and it turned out perfectly. For the second batch I omitted the jam, and it still tasted great!

Caramel Filled Chocolate Cookies

If you have not tried these, YOU MUST! I have made these for several Christmas's and this year they have been a HIT! I have been baking since I was a kid and I have NEVER recieved such positive feedback. My husband's work is still talking about them and it's been almost a week since I brought them in. I didn't change much, and I used rolo's. In fact the only change I made was not mixing walnuts in with sugar. I also sprinkled powdered sugar over them after they were done and BOY-O-BOY, I honestly didn't think you could make them any better! Thank you Lisa for such a WONDERFUL recipe!

Cardamom Granola Bars

I changed this review from a 4 to 5 stars; at first taste, after I put them in the fridge to cool was all-right, but a bit too hard and crumbly. After I wrapped in foil and left on the counter they softened up to a nice and chewy granola bar. My son loved them; I added dates, pecans, raisins and mini marshmallows! YUM!..

Slow Cooker Pork

I submitted the recipe a few years ago and THANK YOU for some of your suggestions. I cut down the water to about 1 cup, used the taco seasoning 1 from this site, and then shredded the meat in its liquid and let it sit on warm for an hour. Mmmmmmmmm!!!

Lori's Spicy Chipotle Lasagna

This was excellent! I didn't have chipotle chilis, just the sauce that they came in. I put in almost 2 TBS and it still wasn't very spicy, but it gave a wonderful flavor. The zucchini was a total hit with the family. I didn't have any sliced mozzarella so I used provolone instead. For some reason, I can't get the 3rd layer into the pan, so I only had two layers. The entire dish was a huge success. Thank you!

Mexican Chicken Kiev

This turned out great even though I couldn't get the huge breasts pounded out thin without tearing them. I followed a suggestion and just used a whole chile and stuffed it with the cheese "log". I wanted to keep it somewhat healthy, so I sprayed the chicken with butter flavored Pam instead of drizzling with butter. Also, I ran out of time so I only refrigerated the breasts while the oven heated. The chicken was moist and delicious! A tiny bit of the cheese oozed out, but it was great, too! Thank you for a wonderful dish@

Tom Ka Gai (Coconut Chicken Soup)

I added things like the other cooks. Added 2 tsp sugar, did half lemon half lime juice, used more cilantro and added during cooking, changed water for chicken broth. One change I will make next time is to reduce the fish sauce by 1 tbs. It was really salty and a little too pungent, although still delicious. This is as good a soup as you'd get in any restaurant.
