Chicken and Sliders

I LOVE sliders. In our family however, we make it with pork. We buy a fairly inexpensive pork roast and "stew" it like you do a chicken, with onions, celery and chicken broth. Then, make the sliders and continue as with the chicken recipe. It is SO yummy!!!!!!

Golden Pork Chops

This was really good. Like other reviewers, I fried the pork chops in a hot skillet sprayed with cooking spray for a couple of minutes. Then, I fried the onions, mushrooms, and added a couple cloves of minced garlic. I only had one can of golden mushroom and one can of garlic mushroom, so I mixed these toghether and poured over the chops topped with the fried onions, mushrooms and garlic. I think I'll try cooking it on the stove the whole time instead of baking it to see if it will come out more juicy and tender than it did in the oven. The gravy was excellent over mashed potatoes. Very tasty! Update: It comes out better when you use thick-cut bone-in pork chops instead of boneless. The boneless ones came out dry for me.

Cheese Fondue

Okay, I made this tonight because I wanted to go to the Melting Pot, but we wanted to save some money. I was all excited about this recipe, and I followed the recipe exactly, with the exception of adding the nutmeg because it sounded weird to me. My fondue turned into a big glob and I was so upset after spending so much money on cheese. My husband came in and added more wine and lemon juice to it after I had added quite a bit, and then he added some water and some velveeta and that was the trick! Also, we added 1/2 tsp. garlic powder and only 1/4 tsp. salt, but I don't think it needed any salt at all. It was great with lightly toasted Italian bread cubes, veggies and a granny smith apple. We had a wonderful Melting Pot experience after all! :o)

Creamy Macaroni and Cheese

This was really good. I only had one can of evaporated milk, so after dumping out the can of milk, I poured skim milk into the can to take the place of the other can of milk. I boiled my macaroni for only 6 minutes, and that was long enough. I only had 8 oz. of sharp cheddar, so I used some mozerella cheese along with that. Also, I used about a tsp. of dry ground mustard instead of prepared mustard, and it gave it a little too much of a mustardy flavor (my fault). At the end, I felt like this dish was a little too bland (probably because I used mozerella) so I stirred in a little cayenne pepper, which added a little something to it. Next time I need to try it with the whole amount of cheddar and it would probably be better.

Baked Orange Roughy Italian-Style

This is a delicious way to prepare orange roughy! It's quick and easy. I did cut the salt in half, though, which I'm glad I did because 1/4 tsp. was plenty for us. Highly recommended!

Hamburger Soup III

I made this soup a couple of days ago, and we really liked it a lot. It's even better after a day or two in the fridge. The only things I did differently is added a clove of garlic while the hamburger and onion was cooking, I added an extra can of beef broth to make it more soupy because I was afraid that the macaroni would soak up all the broth, I added 3 shakes of worcestershire sauce, some black pepper, and then I didn't add the macaroni until the very end so it wouldn't get mushy or soak up all the broth. Thanks for a great recipe!

Blueberry Cream Dessert

I would give this more stars if I could! It's absolutely delicious! I went ahead and used two pkgs. of cream cheese since other reviewers said it wasn't enough of a cream cheese layer. To this I added the called-for amounts of eggs and vanilla, and I used 3/4 cup sugar instead of the remaining 1/2 cup and it was perfect. Thanks for a great recipe I'll be making often!

Pistachio Eclair Dessert

I'm sure this would have turned out better if I would've remembered to fold the cool whip into it. For some reason I forgot that step, and was wondering why there wasn't much filling to spread onto the graham crackers. So it ended up just being pudding between graham crackers, with frosting on the top, but it tastes ok. Next time I'll have to remember the cool whip! :o)

Spinach Caprese Salad

Delicious salad that I eat all the time. It's the exact same one on the South Beach Diet. I think it's best when you use equal amounts of balsamic vinegar and olive oil and sprinkle on a little salt & pepper. Highly recommended if you like spinach!

Marinated Barbequed Vegetables

The first time I made this, I made it exactly like the recipe says to make it, but it wasn't enough marinade and we didn't care for the eggplant. The way I make it now is I use one zuchini, one yellow squash, one red pepper and baby portabellas, and I double the marinade. The last time I made it, I added a couple of dashes of cayenne pepper and some chopped fresh cilantro to the marinade, and after taking the vegetables out of it to put on the skewers, I threw some fresh shrimp into the marinade while I grilled the vegetables, and then grilled the shrimp and it was great! This is our new favorite way to have vegies and shrimp! Also, like other reviewers said, it is best to marinate in a large ziplock bag so you can flip it over to marinate really good, and dry basil works great in place of fresh.

Coconut Cream Cake

MMMMM I made this cake for company last weekend and it was a huge hit! It would have turned out even better, though, if I would've poured half the milk over the cake while it was still warm instead of letting it cool completely and then pouring the rest on after a few minutes. With doing it like this, it didn't soak in as good as it could've. It still tasted so good and was so moist the first day, but then it started getting kind of dry since I didn't let it soak in properly. This cake had such a wonderful coconut flavor and the toasted coconut on the top really made it perfect! Thanks for such a wonderful recipe!

Fluffy Pineapple Torte

I made this for company last weekend and it was a big hit! I followed the directions exactly, and I was a little worried about it "setting up" right because it looked really liquidy, but it set up perfectly. I think it would be even better with some crushed nuts in the crust. Thanks for the great recipe!

Caribbean Sweet Potato Salad

I cooked the two kinds of potatoes separately, and this worked out well. I cut fresh sweet corn from the cob instead of using frozen. I seeded and diced up the cucumber, and I didn't add the peanuts because I didn't have any. This is delicious and it had plenty of sauce, the only thing I would change is to just use all sweet potatoes instead of half white and half sweet. It was very fresh-tasting, even the next day, and it's healthy. Served with the Jamaican Jerked Chicken and Mango Salsa from this site. Very nice meal on a summer day!

Jamaican Jerked Chicken

This came out a little dry for me, but that was my fault because I used chicken breasts cut into strips, and I over-cooked it just a tad. Next time I'll add more jalapeno and maybe marinate a little longer, and of course not cook as long. The flavor was really good, but not as spicy as I was expecting. I even used a serano pepper. I liked the lime and all the sweet spices in it. Good flavor!

Mango Salsa

This recipe is the best! I'd never had mango salsa before, and I must say this is a favorite for me now. I wouldn't change a thing about this recipe because it's perfect! I do use mango from a jar to make it easier. I served it with the Jamaican Jerked Chicken and caribbean sweet potato salad recipes from this site and it goes perfectly together.

Pineapple Upside-Down Cake II

This was my first time ever making pineapple upside-down cake, and thanks to this recipe, it turned out great! I cut back on the butter for the topping by half, and I went ahead and melted it in the hot oven right in the pan, and then I went ahead and mixed the brown sugar into the melted butter. I used canned pineapple rings and put marachino cherries in the middles of the pineapple rings. Then I sprinkled a little bit of chopped pecans over that. I cut back on the salt just a tiny bit because I didn't have unsalted butter and didn't want it to come out too salty. Instead of milk, I used 3/4 cup of the reserved pineapple juice, which gave the cake wonderful flavor. I beat the batter real well between each step and the batter came out real nice. Oh, also I used cake four instead of all-purpose. Lastly, I only had an 8" round pan and I had a little extra batter, so I went ahead and prepared three custard cups just like the pan, and poured the rest of the batter in those. The cake was done in about 43 minutes, and the custard cups were done in about 32 minutes. I'm glad I put the custard cups in the other cake pan I had, because the the sugary, buttery topping came up out of the sides a little bit. This is so good! I can't wait to eat more of it! :o)

Beer Butt Chicken

Now I didn't change a thing and I loved this recipe. It can be a bit tricky to get off the can without spilling everything all over so I'll use the idea to spray the can with non-stick spray before cooking. However, the flavor and moistness of this chicken is unsurpassed and I've tried SO many recipes hoping to get THIS result. It really is DELICIOUS!!!
