Not quite what I was expecting, but flavorful none the less. The only change I made was~I added extra pepper~and I like the extra little kick that gives.

Stuffed Green Peppers

Reviewed: Dec. 3, 2008
This stuffed pepper recipe was wonderful! I did make a few changes after reading other reviews, though. I used brown instead of white rice. I added a bag of frozen veggie meat crumbles, I used grated pepperjack cheese instead of swiss because we like our food to be a little spicy. Also, instead of using tomato sauce, I used a can of spaghetti sauce to add extra flavor. The only things I'd do differently next time is to add more cheese than I did and either use bigger peppers or an extra one because I had a bit of filling left over. These were great and my husband even loved them!

This was such an awesome pork roast. Easy and very flavorful. My husband loved it. I purchased a bottle of Pomegrante Chipole Sauce and it went well with pork.

Vegetarian Tortilla Soup

Reviewed: Nov. 14, 2008
This was so good! I recently became a vegetarian, and I was craving tortilla soup that didn't have chicken in it and so I thought I would try this recipe. Like others, I used only 2T of cumin. Instead of the 3 cans of chili peppers, I used two cans of rotel with lime and cilantro. I also added a can of black beans along with the corn to add some protein. It came out a little spicy-hot with the two cans of rotel, so maybe one would be better for people who don't want it so hot. We loved it though, and I'll definitely be making this again and again. Thanks for posting this!

Salisbury Steak

Reviewed: Oct. 13, 2008
I, too, believe it is unfair to rate a recipe you have not tried in its original form first. However, that being said, I will say that this is, for my family, a 5 star recipe. Salisbury steak as my dad makes it has always been my "most favorite meal" and I beg him to make it for me every chance I get. I tried this version (on my own, without that pesky begging business) and thought it was very, very tasty. I may post my dad's version and then everyone can rate that separately. (His is very close to a lot of the "fixes" many posters suggested) I will not go into how he does it differently here because it is a somewhat different recipe. I loved this one too and believe it is worth 5 stars!

Zucchini Casserole II

Reviewed: Sep. 16, 2008
DELICIOUS!!! My husband and I loved this recipe. Great way to use up the abudance of zuchini our garden has provided this year. I did take some other reviewers suggestions and made the following changes: Cruched up some buttery crackers on the bottom (so i'd have more topping). Microwaved the zucchinni with some garlic salt (about 7min). Sauted the onion and carrots. Used cream of chicken soup. A tiny bit of cheyenne pepper and finally added some cheese right before topping it off with the stuffing. PERFECTO! Definitely a keeper.

Asparagus, Feta and Couscous Salad

Reviewed: Sep. 15, 2008
This turned out really good, but I did a few things differently after reading other reviews. I grilled the asparagus, which gave it a very nice flavor. I added some sliced green onions. I only used about 4 oz. of feta, which I'm glad I did because I think the full amount would be too much. Also, instead of adding the vinegar and oil, I just drizzled on a little balsamic vinaigrette dressing instead. This was a very yummy dish! I'd definitely make this again and again.

Doggy Meatloaf with Vegetables

Reviewed: Sep. 13, 2008
Going by my dogs' reactions, this was a 5 star recipe! The only changes I made after reading other reviews was I boiled and mashed the potato and added it in the mix and I added cooked brown rice instead of the oats and wheat germ. I didn't cook the pieces of potato, carrots and celery around the sides. Also, I did mine in two regular-sized muffin tins sprayed with cooking spray for about 50 min. I'll be freezing all the extras. The dogs sure loved it!

Pizza Dip

Reviewed: Aug. 20, 2008
This dip is so good! I mixed in about 1 cup of sour cream with the pizza sauce, and then I added finely chopped green pepper, mushrooms and black olives. I also sprinkled on some Mrs. Dash extra spicy seasoning and it gave it extra flavor. I didn't add the pepperoni or the onion, but I think next time I'll try it with some onion.

This salad was great!!! I added some culiflowers and they came out really good. I just bought a bag of pre-cut broccoli and culiflowers. I like to get things done fast!!! I also bought a deli bag of cooked bacon pieces and put those in the salad. Pretty fast!!!!

Rainbow Pasta Salad I

Reviewed: Jul. 15, 2008
I put my own spin this recipe and everyone loved it. I followed the recipe except I used grilled red pepper, zuchini, and squash. I used one can of sliced black olives and about a cup of sliced grape tomatoes. Also, the dressing I used was red pepper vinaigrette with parmesan and I also added extra seasonings and more parmesan. I like that you can change this recipe around to your liking.

Cherry Pie IV

Reviewed: Jul. 9, 2008
I only gave this 4 stars because I didn't make the crust. The filling, though, was out of this world! I used 4 cups of tart cherries from a tree and it took me about an hour to pit them. I followed the rest of the recipe and it turned out great! The amount of sugar and the almond extract offset the tartness of the cherries and the juice jelled up nicely instead of being too liquidy. Next time, though, I'll double the filling because my pie plate is big. Thanks for the great recipe!
