Seafood Fettuccine

I made this last night. I didn't have scallops so I used only shrimp. It was very good. I added a little bit of cayenne pepper to give it a kick. Thanks for this good and easy recipe!!!!!

Roasted Butternut Squash Soup with Apples and Bacon

I loved this soup except for the fact the the recipe doesn't say when to add the squash! I also added some of the bacon and some half and half before I blended it. Topped each serving with sour cream and bacon crumbles! Yum!! Had lots of leftovers so I froze them in ice cube trays and popped them in to bags.

Easy Apple Crisp

MOUTH WATERING! This was the BEST apple crisp, ever. I did use some of the reviewers suggestions and added two extra apples, 2/3 cup of APPLE JUICE, not water. sprinkled the apples with nutmeg, allspice and cinnamon. Drizzled the apples with caramel ice cream topping. Reduced the sugar to 1/2 cup (with the apple juice and the caramel I probably could have reduced it to 1/3 or 1/4). baked it for about 45 min. Delish!

Cheesy Zucchini Casserole I

FABULOUS!! I loved this, hubby loved this, 18 month old loved this! Used some of the reviews to make this wonderful base recipe even better... used bottled minced garlic (2 tsp, we love garlic) an extra slice of bread, about a half cup more zucchini, 2 eggs, and I accidentally melted a half cup of butter, so I was naughty and added the whole thing :). I put 1/3 of the cheese mixed in the casserole sprinkled the rest on top. I added some Lawerys seasoning as well. Put in a 8x8 pan and cooked 20 minutes covered, 20 minutes uncovered. Perfection!

Black Bean And Corn Salad II

I absolutely loved this salad! I only had one can of black beans, so I also added a can of garbanzo beans. I only added half of a red bell pepper and added a finely diced jalapeno with the seeds removed. The last thing I did diffently is I added grape tomatoes cut in half instead of regular tomato. This salad is so light and refreshing, I'll definitely be making it again!

Coconut Cream Pound Cake

This is by far the BEST coconut pound cake recipe ever! It absolutely NEVER disappoints. The only change I made is to add about 1/2 teaspoon of almond extract to the batter. Otherwise, it is just fantastic!

Best Tuna Casserole

This was very good, but I did add about a half cup of sour cream and a little milk so it wouldn't be dry. Also, I added some garlic-pepper seasoning and a little cayenne pepper. I didn't have any potato chips, so I just used some plain dry bread crumbs. I think it would've been even better with the potato chips though.

Sloppy Joes II

Very good sloppy joes. I substituted one tsp of brown sugar for a tbsp of Sweet Baby Ray's bbq sauce. I also added fresh garlic with the onion and green pepper instead of garlic salt. They came together very well.

Pineapple Enchiladas

Like others suggested, I used 1 cup of sour cream and I added a can of diced green chilis for extra flavor. I drained the pineapple and and I used a mix of cheddar and Monterey Jack cheese, which gave it a nice flavor. I used corn tortillas and I fried them lightly in oil for 1 second and drained on paper towels, and then dipped them in the sauce. I uncovered it during the last 10 minutes of baking and this worked out great. We really enjoyed this dish!

Cheese Enchiladas

I find it's much easier to roll a corn tortilla when you lightly fry it in oil for a second on each side, Then drain it on paper towels. After they've cooled a little bit, then dip them in sauce. Also, me personally, I prefer the already-made enchilada sauce in the can. It already has flavor and you can get hot, medium or mild. You definitely need twice as much cheese and using fresh mushrooms is best. I used sliced green onions and added a can of diced green chilis. These enchiladas are amazing!

Shrimp Scampi

I sure liked this recipe. Especially I am watching my diet really close right now to lose weight...but I love pasta. I did not use Angel Hair Pasta. I used whole grain pasta that has 6 grams of fiber. Angel Hair pasta would have been too light for me..but I put a lot of green onions, garlic and parsley. Low sodium soup based sauce so it was not heavy like the cream sauce and better for you. I can eat this every day. Next day I still lost my weight.... So if you are on diet and still want to enjoy pasta this recipe is it. Thanks for the recipe.

Honey Baked Chicken II

FABULOUS! Made this with two large boneless, skinless chicken breast, cut into strips. Still used the same amount of butter in the sauce. Used spicy brown mustard. Also added (as per others suggestions)1/8 tsp cayenne pepper, one clove garlic and about 1/4 cup onions, thinly sliced. Baked 350, covered for 30 min. Then turned it up to about 410, uncovered and they were finished in 25 min. The extra sauce was great over some steamed white rice. Wonderful recipe.
