Seven Minute Frosting II

With a yellow cake, the taste and texture are very nice. The icing has a mildly crispy meringue shell and adds moisture to the cake especially if kept unrefrigerated. The seven minutes the title purports is totally inaccurate. It took at LEAST 20 minutes with my hand mixer before the meringue got to the soft peak stage. As for the act of frosting, that can be a bit challenging. This icing is a bit thin for my liking. I ended up with icing all over my counter. This frosting is just not very effective for layered cakes, as it just oozes out from between the layers. This may have been avoided if allowed to completely dry before adding another layer. Try fresh berries instead. It takes quite a few (four or more) hours to completely set. I would have been building this cake for a few days had I gone by that method. The drying time (for lack of a better term) also prohibits stencils from being used effectively. To the credit of this icing, it DOES taste GREAT and contains much less fat and calories than a butter-cream type of frosting. Making this recipe is a challenging, but rewarding experience. Seven minute frosting complimented the yellow cake from King Arthur Four's Baker's Companion very nicely indeed.

YUM!!! I had to add more liquid as it cooked, but this soup is a pot of vegetable heaven on earth. Invite LOTS of people over to help you eat it!

Buttermilk Corn Bread

I really enjoyed this for my afternoon tea. I used margarine instead of vegetable oil. That makes an excellent tasting crust. Served with syrup and lavender tea. Bon apetit!

Angel Cookies I

I made this and it was SooOOOooo good. My kids helped me roll the dough into balls, and in the sugar, and we had a great time. Also, these cookies keep very well in the freezer. If you are thinking about substituting margarine for the butter that is called for in this recipe, DON'T. I tried making these for my sister in-law that has a milk alergy, but the turned out terribly when margarine was used (twice).

Cinnamon Popcorn

I loved it. It's lightly sweetened and very addicting. Perfect if you're looking for a crunchy corn that satisfies the sweet tooth without all the heavy caloric coating!

Zucchini Quiche

My pie tins are pretty shallow, so I was able to make two pies out of the filling ingredients. I made one just like the recipe said, but for the other, I put sliced tomatoes on top and sprinkled fresh grated parmesan cheese over. I liked them both, as did my family of six. Will definately make again!

Apple Curry Turkey Pita

My family has snubbed curry dishes in the past, but I thought I'd try this anyway (I'd eat it). Suprisingly, they all really liked it! The curry is mild, but flavorful, and it gives the sandwich a great color my kids loved: "How'd you do that?" (I should think of some funky name for the color of curry dishes...maybe they'd eat more.) Anyway, a fun and unique recipe--good way to mix up the blahs of leftover turkey!

Party Punch V

We served this at a luau for about 55 people. I chose this recipe because it looked very easy to make on location and I wasn't sure how much we'd need, even with the serving size suggestion. It ended up being about 6 oz. per person (half again of what the recipe suggests). I saw several people ladeling extra water into thier cups of punch; it is pretty rich. But I liked it and will make it again!
