Winter Squash Rolls

These were so good! My husband and his brother (who would not eat squash if they were starving) devoured these rolls. They each ate several the night I made them and got up and had them for breakfast too. When they were gone DH asked when I was going to make more. Of course I didn't tell him about the squash and my daughter said I shouldn't tell him ;) I steamed the squash in the steamer and left the dough pretty soft. great! thanks

World's Best Lasagna

This was terrific! I have made lasagna several times using just dry noodles but this time I soaked them in warm water and I like this way much better. I was a little worried about the fennel seed but decided to use it anyway and try it and it was good. I didn't have fresh parsley so I used dry, about 1 1/2 t. The only other changes I made were using 1 qt of my home-canned diced tomatoes instead of the crushed and some frozen tomato puree instead of the paste. Since the total amount of tomatoes had been increased I did heaping spoons when measuring the basil and italian seasoning. Thanks for the great recipe.

Wonderful Waffles

Great waffles, i gave them a 4 because I like more of a crispy waffle and these were crisp right when you took them out of the waffle iron but quickly went soft. The flavor was great! The only change I made was adding about 1/4 cup more buttermilk since the batter at that point was pretty stiff.

Banana Oat Muffins

Great texture and taste. I also added wheat flour, brown sugar, aplesauce and cinnamon. I omitted the white flour, white sugar and oil. I will try mini chocolate chips next time.

Pumpkin Roll I

I have been making this for awhile, but never got around to rating it! My family...and my in laws love this! People make orders in advance so that I can bring them to their parties! I feel a little guilty, cause it is SO easy to make! I also found that if you wrap the roll in foil when your done, and refridgerate it for an hour or so, it stays colder for a longer time! Thanks!!

New England Potato Soup

This was a big hit! Though a little sweet for my taste, next time I will reduce the sugar or maybe omit it. I put it all in the crockpot after adding the milk/flour mixture to the soup as I was waiting for company. I had to add a little more flour mixture to thicken it up a bit more and decided to add about a cup of shredded cheddar cheese to it. Good use of leftover ham.

Bread Bowls

Flavor is good and these were easy to make. I doubled the recipe and used 5 cups fresh-ground wheat flour and the rest white bread flour. I used 3 cups water and 1 cup milk as milk makes a "softer" bread. I followed some other suggestions and made 10 (5 per batch) bowls and they were a bit too big, I think 6 would be perfect instead of 8. I might try using all water and less shortening next time for a crispier bread.

Hot Bean Dip

I did spice it up a bit so I give the recipe (as written) a 4. I used 3 T taco seasoning (I buy it in bulk but I believe that 2 T should be a 1/2 pkg) and one large can of refried beans. I tasted it before cooking and decided to add about 3 T chopped, bottled hot peppers and 1 t salt. I do like things a little more spicy but with a few changes this was great! I love the creaminess and flavor the cream cheese and sour cream give to this dish. Thanks

Yummy Artichoke Dip

very good. I did make some changes so I rated it 4 stars as is. I used my home bottled hot peppers which are generally much hotter than canned peppers, I used about 6 oz. of them. I also substituted montery jack cheese for 1/2 cup of the cheese and only used about 1/2 cup mayo (that just sounded like way too much mayo to me. I don't think there is any way this is 32 servings, I'm pretty sure I could eat most of it myself!

French Breakfast Puffs

These were actually pretty good. A bit denser than I was hoping for. I made these for my bf only to find out that the only spice he had was pumpkin pie spice... Actually turned out really good in place of the nutmeg. Also used butter in place of shortening and 1 T less milk (again, bf didn't have any). There was way too much of the cinnamon/sugar/butter topping. I only used MAYBE half. A lot of waste.

Chicken Tetrazzini for a Crowd

This was great and pretty easy. Since my husband thinks that spaghetti noodles are only for spaghetti I decided to use rotini noodles instead. It worked great but I still like it better with spag. I also added a little onion and garlic and had no pimentos.
