Raspberry Balsamic Dressing

I had an amazing raspberry dressing at this ridiculously expensive restaurant a few months ago and was looking to recreate it on my own. This one wasn't it. It was decent all by itself and a good alternative to bottled dressing (especially with a high quality balsamic). The second time around, I experimented. I added 1 cup vanilla yogurt (only because I didn't have plain), 1/2 cup raspberries and 2 teaspoons white sugar. AMAZING! Has that wonderful balsamic flavor but a creamy raspberry flavor as well.

Down Home Baked Beans

WOW WOW WOW is all I can say these were wonderful rich tasting great flavor and a bit spicey! I only used 1 cup of brown sugar because I used Bush's baked beans. :)

Funnel Cakes IV

I could use some education on how to make it look as pretty as the pictures. I tried the ketchup bottle and went in a circular motion but it ended up a little too doughy & pancakish. It tasted really good though so I still rated it a 5 b/c it's my fault it looked ugly!

This recipe was okay, but far from my favorite. It just seemed like it was missing something. It tasted good and the kids loved it on their waffles, but I think it will just be used as a standby until I find a better recipe

Chicken Enchilada Casserole II

Made this twice. The first time I followed the amounts given in the recipe but added in corn and black beans (instead of chili beans)to the chicken layer. My hubbie loved it and made me make it for a group dinner. When I did, I doubled the recipe but increased the chicken to the sour cream/salsa so it was not as soup like (and didn't look as gross when you scooped it out). I rec. making it that way... but just eyeball everything, don't worry too much about measuring (makes it much easier!). EVERYONE asked for the recipe... they loved it.

Southwest-Style Egg Rolls

These were relatively bland. To kick them up a notch, I doubled the cumin, added 1 tsp chipotle powder and 1 c chopped chicken, and used pepperjack cheese. That definitely did the trick and would have earned this recipe 5 stars to begin with. These are also good in tortillas as "burritos" and you can substitute kidney beans for the black beans without losing too much of the "southwest" flavor.

The Perfect Hot Artichoke and Spinach Dip

I needed something to take to a party and had crackers but no cream cheese. This was it! It was very good and made a lot which my family and I gobbled up. I still like the version with the cream cheese better but I guess this one is a little better for your health :)

Very good sausage, easy and good flavor. I added a little ground cayenne and by mistake added too much brown sugar. I'm sure I will like it better with the right amount of brown sugar. Thanks for a good recipe

Buttermilk Biscuits I

I used to bake biscuits for a fast food restaurant and I have some tips for those of you that have never made biscuits or that are struggling to get them right. 1. Never over-work your dough. Mix it only as much as you absolutely have to or it will be tough. 2. Don't add too much flour! flour can be affected greatly by the humidity in the air so what works today may not work tomorrow. Biscuit dough should NOT be easy to work with, it will be pretty sticky. If you add enough flour so that it is easy to work with your biscuits will be dry. 3. Your shortening should be left in small chunks (about the size of a pea) so that your biscuits will be flaky. You can substitute a little butter for part of the shortening to give a richer flavor but your biscuits won't raise as well. 4. Roll your biscuits to at least 1/2 in thickness (or more) to have nice high biscuits. When you cut them push straight down and straight back up. Twisting the cutter will cause your biscuits to raise unevenly. This is a good biscuit recipe, flaky and delicious but I'm still looking for the perfect flavor.

Oatmeal Chocolate Coconut Chewy

These cookies were perfect! I used all whole wheat flour (white wheat) and they were almost as good as the Kashi dark chocolate oatmeal cookies. Better because they were considerably cheaper. The recipe did make a very large batch and did not spread much when baked. I passed them out to the neighbors and got great reviews!

Portobello Mushroom Burgers

The mushrooms turned out very tasty. I served them on ciabatta buns with roasted red peppers and chipotle mayonnaise. Definitely worth making. Nice subtle mushroom flavor amid the spicyness of the peppers. The only issue I really had with the recipe was that I used a shallow tupperware that was just the size of two caps and used 1/2 the marinade. The mixture was too shallow to actually marinate the caps. I wound up spooning it over the mushrooms several times. Worth the effort though.

Cheese Sauce

It wasn't bad, but it wasn't like your typical nacho sauce. I wound up using pepper jack instead of cheddar so it had a little more spicyness to it. I added some chipotle powder too. I also heated the 1st measure of milk and cornstarch to help it thicken more. It was still really runny. Maybe if I used 1/2 as much milk...
