Spanish Chicken and Rice

This is delicious. My husband requested that I make this one over again, most times he puts up with me cooking random never tasted meals. I too put the chicken back in the pot with the rice as it finished steaming, not bothering too bake it in the oven. Less dishes is always a goal, and this worked wonderful for me. The seasonings are unique but tasted like a great home cooked meal, but turned up a notch.

Grandmother's Buttermilk Cornbread

This cornbread is nothing like Jiffy. If it is I have been making Jiffy wrong-unlike Jiffy this cornbread makes large fluffy pieces that are hearty but moist. Perfect with every meal, and very easy too make.

Best Ever Brisket

I was in love with this recipe one hour into cooking it, the smell in my house was any meat lovers dream. This tasted great, and was versatile to be used in many dishes. We had as is with sides the first night, simmered in BBQ sauce the next night for sandwiches, and even made quesadillas for lunch. Very easy too make, and delicious.

Chicken Enchiladas I

this recipie was much too much. i took out the water, bell pepper, and subbed the tomato sauce for a smaller can of mexican spicy tomatoe sauce. (in the yellow can) i think it was 7 or 8 oz. it was good, and grate for kids

Honey-Garlic Glazed Meatballs

These were great. We cooked the meatballs until they were crispy on the bottoms. (25 min.) This recipe was easy, and we plan on making a bunch up to freeze. Great Sunday dinner. The sauce is sweet, I did add some red chili flakes but didn't taste them.

Tasty Lentil Tacos

Easy Lemon Cake Cookies with Icing

Lemon Zucchini Bread

This is great. I swapped a few things, I swapped half the oil for applesauce, used orange peel (plan on trying lemon next.) Also, cut the sugar about a half a cup. Yummy. The citrus really showed this bread off to the max. I plan on making this again.

Spicy Baked Sweet Potato Fries

I decided to get these done a little faster, and make it easier to cut up. So I put the potatoes in the microwave for about 3-4 minutes so they were cooked a little bit. Than I cut them up in to fries. My cayenne was on the very top shelf, and I am short so it got left out. It could have used the spice, the Taco seasoning didn't come out for me. I did put some salt. My fries cooked for about 30 minutes and were quite crispy. I think pre-baking the sweet potatoes helped. These were really good, and will be made again.

Irresistible Irish Soda Bread

Very good, nice and moist! I tried this and Amazingly Easy Irish Soda Bread (another recipe on this site) at the same time. Personally I prefer it to this recipe, (it has more of a bread texture and this recipe is a bit sweeter and more cakey) but some of my family liked this recipe better, both are delicious! I used whole wheat, and it was wonderful! I did add rasins. Yummy!

Oil Pie Crust

Amazing!! When I make pies with it, everyone's favorite part is the crust! The best crust recipe ever!! I used whole wheat flour and it turned out great! I used sour milk with about 1/2 teaspoon of baking soda it place of milk and it still worked wonderfully!

Classic Peanut Butter Cookies

Great!! I used more flour and peanut butter as some other reviewers suggested. I took it to a church youth activity, everyone loved it!! I would say that if you add extra flour, add equal amounts of extra PB, otherwise it gets crumbly and hard to roll into cookies.

Roasted Red Pepper and Tomato Soup

This soup is delicious, but not necessarily worth the work. I used at least six big pots, pan, blenders, and cookie sheets to make this,. It takes around two hours to make from start to finish, and that's not wait time, you are working on it almost the entire time. The taste is good, but not necessarily worth it for a weeknight dinner, and a busy household. It is better then canned, but I'm going to search for a soup that's easier to make.

Orange Romaine Salad

This salad is very easy to make. I added grapes at the last minute because I thought it needed something a little extra. I also used red onions instead of green which worked well. The dressing was a little bland, I could barely taste the onion. I would recommend not being afraid of upping the ingredient you want to shine through whether that is the honey, onion, or pepper. Or adding more of all of the them wouldn't hurt this dressing.
