Extreme Banana Nut Bread 'EBNB'

This is really good bread. but the cooking time is way to long. I only had to bake mine for 50 min. and it still was a little over cooked. 60 to 70 like the recipe states is way to long.

I was kind of disappointed in these because they are actually just cinnamon biscuits, not muffins. Good biscuits, bad muffins.

I heated this with a milk sauce to serve over rice. It was super delicious! I was skeptical about the raisins but they turned out to be the best part.

Definitely better the subsequent days after making. Only change I made was 1/2 oil and 1/2 sour cream.

The only thing I think it needed more of was shrimp and a little less soy sauce and no salt. Otherwise, it was great!

I love this recipe. Just make sure you start it ahead of time because it is a little time consuming. But the vinegar adds just the right tang to beets.

Gravy Baked Pork Chops

Reviewed: Oct. 11, 2009
I hate cooking pork because I always let it dry out, but this recipe keeps everything moist. I made it exactly to recipe the first time, and the gravy was a little bland. The second time around, I added a little parsley, onion powder, and garlic powder to the gravy. I also omitted the water and added only a splash of the milk, which it doesn't really need. It thins out in the oven. Much better!

Old Fashioned Coconut Cream Pie

Reviewed: Oct. 6, 2009
Great recipe! I tried using the coconut milk, but prefer to use cream. I use 1/3 cup corn starch instead of flour. Also, I put in 1 tsp. coconut extract. It sounds unusual, but we love to serve ours with a raspberry sauce and of course a dollop of real whipped cream. It is so yummy!

Hot German Potato Salad III

Reviewed: Sep. 12, 2009
This recipe is exactly like the one my mom used to use. I like mine to have a little more tang, so I added a little more vinegar the second time around. I also don't use the celery seed because I don't have it on hand and it doesn't make any difference at all. Also, the recipe doesn't mention it, but red potatoes work the best for the recipe.

I love this recipe! The only change I make is that I mix the sour cream into the tomato sauce. It just makes it a little easier for layering. Other than that, the recipe is perfect as is!

Asian Beef with Snow Peas

Reviewed: Sep. 12, 2009
This recipe is excellent and not too expensive to make. The last couple of times I made it, I added some water chestnuts and sprouts for a little extra umph, but the recipe is just fine without adding all of the extra stuff. By the way, I don't drink wine, so I don't have it on hand for such recipes. I just substituted for it with grape juice and it was still awesome. Maybe different than rice wine, but a great alternative for non-drinkers.

Cheesy Beans and Rice

Reviewed: Sep. 12, 2009
I've made this a few times now and really loved it. I made it to recipe the first time and liked it, but the next time I made it with white rice, a little ground beef, and added a little extra cheese for a little more flavor. Not as healthy, but a little better in my opinion.
