I often deconstruct recipes to get to the heart of what is important. Some steps are critical and some are not. Also, if a recipe is to complicated or has too many ingredients I think you can almost guarantee on losing the essence of the food. My husband teases me that I can taste a food and determine what is in it. I can't help evaluating the food at resturants and I can't stand fast food. If I have something good at a resturant, I will come home and try to make it. I like to experiment with a recipe or idea until I get it perfect. In the meantime, my family probably gets tired of the experiments, but they are patient with me.

Broccoli Chicken Divan

Great recipe! I cooked according to recipe but I would change some things next time. I would substitute the milk with sour cream. It turned out kind-of watery. I froze half and just cooked other half and it turned out great.

Red and Sweet Potato Salad

It was just potato salad. I accidentally bought white flesh sweet potatoes so it didn't look any different. I do enjoy the different flavor with the sweet potatoes and I enjoyed the vinegar mixture. I will make again, but it needs a little kick.

Spinach Manicotti

Great dish! Not your average manicotti. I was a little weary of the salsa but it turned out amazingly well. I follow the recipe with just a few slight changes. I used V8 vegetable juice instead of tomato juice, used dried chopped onions instead of powder, and used crushed croutons for breadcrumbs. I also doubled the sauce (don't double the V8 juice). TIP- To fill manicotti easily, fill up a freezer bag with filling and cut a small hole in the corner and squeeze in shells. Much easier than trying the other way. I froze half the recipe I hope it freezes well. I'll comment later.
