Cherry Crisp

White Chili I

We liked this a lot. I did make some changes. I increased the oil to 3 T. I used the leftovers of some roasted rosemary chicken breasts we had earlier in the week and shredded them up. I used only 1 cup of chicken broth. I doubled all the spices except for the cumin and oregano. The oregano I left as is because we don't like a strong oregano flavor, and I tripled the amount of cumin. I also added a tablespoon of chili powder, and some celery seed, lime juice, and a few shakes of Frank's Red Hot. I used three cans of beans (not drained) -- two great northern, and one black. I pureed one can of the great northerns. I also added a can of drained corn. I put the whole thing in a slow cooker on high for a few hours, and served with sour cream and shredded cheese. We loved it, and used tortilla chips to scoop it with. And the kids didn't complain of it being too spicy, but it seemed just spicy enough to my husband and I. We'll be adding this to our rotation for sure.

Kay's Spaghetti and Lasagna Sauce

We made this for dinner tonight- it was delicious. We made it exactly as the recipe stated except we added one can of tomato paste to the tomato blender mixture. It was fantastic! I recommend doing everything the same but next time I think I will try putting it in the crock pot.

Microwave Baked Apples

Reduced the nutmeg to 1/2 t so the cinnamon would come through a bit more. Only had to microwave for 2 minutes. Used a granny smith apple and left the skin on. This is a good quick snack!

Super-Simple, Super-Spicy Mongolian Beef

Well this is super spicy with the full Tablespoon of red pepper flakes! I only used half the soy sauce and added broth for the rest. Used olive oil and onion powder in the marinade instead of sliced ones. I can't compare this to authentic mongolian beef because I think I have only ever had ot once but this was good and I'll make it again!

Really good! Makes a LOT so make sure you don't have leftovers because it doesn't keep more than a day or so in the fridge. We had so much I ended up wasting a ton of it :(. Used craisins and I liked that a lot too :)

Slow Cooker Stuffing

SOOOOOOOOOOOOOO good! Added a little more sage (I like it sagey!) and it tasted just as good if not (dare I say it) better than my mom's! Easier too! Even my husband ate it and he HATES traditional stuffing.

Whole Wheat Blueberry Pancakes

These are delicious. I subbed 1/4 cup of the whole wheat flour for white, because I have a couple of picky eaters. But to add to the health benefits I had taken away I added 2 tablespoons of wheat germ and a tablespoon of ground flax seed. I used 2 eggs, and a little more milk than the recipe called for since we like our pancakes a little thinner than that. Instead of artificial sweetener I used 2 T white sugar, and 1 T brown sugar. I also added 1/2 tsp cinnamon and 1/2 tsp vanilla, and put in a full cup of blueberries. These are delicious and really didn't even need syrup. I can see that they are also quite versatile and would be good with mashed banana, raspberries, mashed strawberries, chocolate chips, etc.

Slow Cooker Spicy Black-Eyed Peas

This was a great way to use up leftover Christmas ham. Stores around here don't carry dried black eyed peas, so I used one can of those, as well as a can of kidney beans. I decreased the water to 5 cups and used a can of chicken broth in place of the bouillon. I omitted the peppers and bacon, and increased the ham to 10 oz. I also omitted the cayenne pepper and decreased the black pepper to 1/2 tsp. I added a chopped carrot, a tablespoon of honey, and a can of diced tomatoes. Unlike others, I definitely thought this needed some salt. This will be a keeper in our house. We really enjoyed it.

Hummus III

this has a really good hummus taste that I am familiar with. Instead of paprika and parsely, I topped mine with fried chickpeas and red pepper flakes. I also left out the salt - didn't miss it at all!

Bananas Foster II

Hellooooo Everyone! This is so yummy. I thought it sounded a little wierd, but I was looking for an ultra-quick way to use up bananas. Gasp! I found a recipe that will be used over and over. This is easy enough for a quick late-night comfort snack, but nice enough for a formal sit - down dinner. Thanks for the great recipe! Yum.

General Tsao's Chicken

I only used cornstarch and egg to make the batter for the chicken. I used Splenda for the sugar and this worked out great. There is NO need for MSG (it's not good for you!!) The sauce was delicious and I love that it coated the chicken the same way as General Tso's chicken is at chinese restaurants. The only down side was that the coating on my chicken lost some of its crunch when I added the saice to the pan. And be careful your pan isn't too hot when you add the sauce to it!!!

Slow Cooker Spicy Black-Eyed Peas

So yummy! Taste's like something you would buy at a Southern restaurant. I made this in a pot on the stove. Did a quick soak on the beans, drained, then made the recipe in my pot and simmered for about 1 1/2-2 hours. The recipe is great as written, but a I added a drained can of diced tomatoes, a can of chiles, and some spicy sausage, the second time around, and it added just a little more kick.

Pot Stickers Traditional

I have to admit, I thought the filling was going to be bland but it really wasn't at all! I used chicken and powdered onion and ginger in the filling. Used wonton wrappers adn water around the egdes to seal. Crimped them with a fork just to be safe but had no problems with any opening. I used others suggestions and lightly browned them before adding water to the pan and steaming. Delicious! And the dipping sauce is really good. I didn't have chili oil so I used 1/2t srirachi chili sauce instead and it worked great!

Shortbread Cookies IV

The cookies have great taste but mine were very fragile. I cut them along the score lines after baking while they were still warm as the recipe suggested and most of them broke :( Next time I'd wait til they were mostly cool and see if that's any more successful.

Dog Food Dip

Who can wait a whole day for the flavors to meld? We can't. I started this 2 hours ago, and we're already chowing down. I used a 7-oz. can of mild green chilis and a T. of chili powder in place of the jalapenos. I had an uncooked boneless pork chop and an uncooked boneless chicken breast to use up, so I diced the meat and threw it in along with the ground beef, onion and (of course) a T. of garlic out of the jar. Put it all in the slow cooker. I also added part of a brick of cream cheese (again, cleaning out the fridge). The added chunks of meat really add to this dip, and I'll do it from now on. I generally don't mind store brands, but in this case, I highly recommend the Velveeta brand cheese, not a knock-off. My husband is barking for more.
