Ricotta Stuffed Zucchini

I love this recipe! I add a bit more parmesan cheese, and I also add chopped up sun-dried tomatoes, chopped up fresh basil leaves, and toasted pine nuts. YUM! I have used this filling to stuff hollowed out tomatoes and bell peppers as well.

Cottage Cheese Chicken Enchiladas

Original Irish Cream

Amish White Bread

Prosciutto and Parmesan Pinwheels

Instead of prociutto, I put down a layer of pepperoni, then sprinkle with grated parmesan cheese, then roll up and slice. Oh, and skip the mustard, it's weird. The dough is rich enough, you don't need to spread it with anything.

Rhubarb Dumplings

SOOOO GOOD!!!! I didn't have biscuits, so I used an 8oz can of reduced fat crescent rolls, other than that I kept it exactly as written. NOM NOM NOM NOM!!!! This one is awesome and it's definitely going in the recipe box. MAKE THIS! NOW!!!!! :)

Creamy Irish Potato Soup

My family of eight loves this tasty and economical soup, and we make it regularly. We sometimes add bacon bits to our individual bowls for extra flavor. (Note-- It's nearly impossible to make something that everyone in this family loves.) Thanks for the recipe!

Quick Chocolate Sandwich Cookies

These are absolutely incredible. I could eat the whole plate. They are amazing after letting them sit for a night. Like a lot of other people said, take them out sort of early. Before they look they are really done. And I ran out of the filling, so I would also making just a bit more than that. -----UPDATE-----I made more filling the second time and it was much much better. So, adjusted amounts for the filling were 10 oz cream cheese, 3 cups powdered sugar, 5 tbsp butter, and a little over a tsp of vanilla. Also, the first time I made it with 1 package devil's food and one package dark chocolate cake mix, and I liked that a little better.

Lime Chicken Soft Tacos

The mixture of red wine vinegar and lime juice is fabulous!! I also added cilantro instead of oregano and also cut the green onions and substituted them with a regular white onion. Still delicious!!! I will be making these again very soon :)!

Caramel Corn Snack Mix

So easy and so yummy!!! I can't get enough of this recipe. I baked the popcorn mix for only 20 minutes otherwise it was a little too crispy for me and tasted burnt. I brought it to a party alongside someone else's no bakes and my dish was empty by the end of the night while the no bakes were still there! I can't believe how easy this was! It's going to definitely be a favorite from now on :)!!!

Basic Ham and Bean Soup

I really liked this soup! It's different but good! I added some red potatoes and chicken broth per suggestions. And then I added a little cream to fool my husband into thinking it was more of a creamy soup. I also used canned beans to save time. It was better the next day! Very tasty and easy!

Slow Cooker Beef Stroganoff I

My husband really liked this but I was not a fan. The sides started burning about 2 hours into cooking, even on the lowest setting, not sure if it's my crock pots fault or not though. I don't plan on making this one again.

Cha Cha's White Chicken Chili

I left out the jalapenos and cut back on the cayenne as one user suggested and even then holy mother loving spicy!!! I figure it must have been the brand of the roasted green chiles I used, because wow, spicy! I ended up plopping in a few spoonfuls of reduced fat sour cream and then about 4 TBS of reduced fat cream cheese to cool it off, that helped a ton, but still incredibly spicy! However, EXCELLENT flavor! If you like spicy, this is the dish for you!
