Classic Bran Muffins

These are delicious! I followed the recipe almost exactly. I used powdered buttermilk instead of the regular kind. I added cinnamon, flax seeds, and blueberries(omitting the raisins). Simply delicious. Oh yeah, and I had run out of oil, so I used apple sauce. Wow, maybe I changed a lot more than I thought.

Double Layer Pumpkin Cheesecake

I love this filling in a gingersnap crust. I also use pumpkin pie filling instead of the individual spices. I drizzle with caramel ice cream topping an whipped cream, spinkled with toffee bits. Fabulous!

This is a fabulous starter recipe. I wanted more of a Thai flavor, so I used coconut milk in place of the cream, and added chopped cashews, cilantro, and a some fresh minced ginger.

Plum Quick Bread

I was looking for a recipe to use up some of my home canned plums (I have no idea why I canned like 20 jars of plums in the first place, what can you do with canned plums????). I pureed the plums in the blender, I have also used pureed apricots and bananas, all with excellent results.

Homemade Chocolate Sandwich Cookies

I use melted butter in place of the shortening, no need to use a pastry blender that way. Plus butter is better anyways! I've used other flavor cake mixes with good results as well.

Dutch Apple Pie

This is the ultimate lazy person's pie. I love pies but hate making crusts, so this is a nice alternative. I'll leave the home-made pie crusts for my mother on law, this is the pie I bring to all the family functions! I've made this pie with peach filling also.

Sour Cream Poppy Seed Cake

I add a tsp. of almond extract to the batter, and I glaze the cake with a quick powdered sugar glaze, then press sliced almonds all over the cake. The combination of orange and almond flavors are soooooo good.

Chocolate Earthquake Cake I

This recipe is better using a fudge cake mix rather than a german chocolate cake mix. I put the cream cheese filling in a gallon zip lock bag, snip the corner off, and pipe the filling all over the cake batter. It comes out more uniform this way.
