Lemon Sugar Tea Cookies

Reviewed: May 30, 2005
Yummy!! They were nice and chewy on the inside and perfectly crispy on the outside. I did double the amount of lemon extract and still thought it could use a little more, other then that, they were perfect!

Tofu Parmigiana

Reviewed: May 14, 2005
This was so good. The whole family loved it! My husband told me it was great and told me to make it again, then I told him it was tofu and he changed his mind. He told me to wait until he was finished eating next time. LOL :) This was my first attempt at making tofu, but it tasted great and was not too complicated. After I sliced the tofu, I patted it between paper towels to remove some of the water and then baked it at 350 until just a little golden brown. I then dipped it in egg instead of water before putting it in the bread crumb mixture. Instead of the tomato sauce, I used spaghetti sauce. I was pleased with the results. The texture of the finished product was kinda like scrambled eggs.

Sweet and Sour Pork III

Reviewed: May 9, 2005
I only used this recipe for the sauce. I put it on some little smokies sausages and it was great! I have never attemped to make a sweet and sour sauce, but this was so easy and I had everything on hand that I needed. It turned out just like I wanted and the hubby LOVED it. The only thing that I did different was add more cornstarch as suggested. Thank you!

Fried Rice Restaurant Style

Reviewed: May 9, 2005
This is just what I was looking for. I did not use the sesame oil, because I did not have any on hand, and when I cooked my rice, I added 2 tablespoons butter and 1/2 teaspoon salt (I always do when making rice), I also added a little chopped onion that I cooked when I cooked my carrots. Turned out perfect. Thanks for sharing!

Nutty Crispy Sugar Cookies

Reviewed: Apr. 18, 2005
Okay, these cookies are sooo good! I just took my last batch out ot the oven and WOW! I read some of the comments about them being like a sandie and that is what sold me. I have looked over the recipe several times but didnt ever try it because of the nuts. I dont know why, because I love nuts, but for some reason they just didn't sound good. I halved the recipe and still got almost 4 dozen cookies. I forgot to add the nuts to the first half of the dough, but got them in the second half. I used almond, because that is what I had on hand and used half of the butter and replaced the other half with sour cream 'cause I had a little I needed to get rid of. They came out nice and crispy on the outside and tender on the inside (they still arent all the way cooled, so they may crisp up inside). They dont have chocolate in them, but the recipe is on its way to my recipe book.

Angel Chicken Pasta

The hubby loved this one. I only used 4 chicken breasts instead of the 6 and chopped them up after they were cooked. I also used regular cream of mushroom soup because that is what I had. The flavor was great!

We thought this was an okay recipe. I thought it had too much lime juice in it and it would have been better with fresh tomatoes instead of the canned ones.

Chicken Monterey

Reviewed: Feb. 17, 2005
This was a good recipe, but I didn't think it was great. I think I coated the chicken with too much flour. I had the chicken wet when I put it in the flour and patted it and topped it with as much flour as I could get on it. I thought that it would make the chicken with a crispy crust, but it just turned out kinda mushy. I will make it again, since the reason it turned out like it did was my fault. The flavor was good and we did enjoy it other than the mushy flour stuff.

Pound Cake III

I was not overly impressed by the results. The kids kept opening the oven so the middle sank. The top got a little over cooked and the bottom just right. I will try it again, but after the kids are in bed, and just half the recipe so I will be able to give it a 'real' try.

Just an average recipe. I used olive oil instead of canola, and left out the walnuts. Next time I will just use bran flakes instead of with rasins. The kids would not eat them, but I thought they were okay.

World's Best Lasagna

Yummy! I am not a big ricotta cheese fan, but it was not overpowering and the recipe was great. I also do not care for tomato paste and usually substitute it with tomato sauce, but I followed the recipe exactly (well, I was out of fennel, but other then that) and it turned out perfect. The kids loved it! We ate it atleast once a day for 4 day because it made so much, and the kids never complained! Thank you for sharing!

I thought this was great, but the hubby thought it was only so so. The only thing I would change, would be to add about an extra cup of beef broth. It came out very thick and more stew like. Good flavor.

White Cake Frosting I

Reviewed: Jan. 20, 2005
I was not impressed at all. I followed the directions exactly and found it to be VERY greasy. It did turn out a perfect white and was smooth, but other then that, it was not good. Would be great with butter or even half butter and half shortening, but with all shortening, it was not good.
