Mexican Corn on the Cob (Elote)

Surprisingly delicious. Even for those that are not regularly a fan of mayo. The cojita cheese was the ticket. I served these at a family dinner along with the Taquiera Style Tacos from this site. A fantastic combination. My brother in law is from Mexico and was so pleased with the corn. He had told us about the mayo with corn thing before and we all thought it sounded yucky. After reading the reviews I decided to give it a try. Wow, so glad I did! And my brother in law told me it was dead on to the way he ate it in Mexico. Awesome.

Taqueria Style Tacos - Carne Asada

Oh my! These are fantastic. I went to a mexican market and asked the butcher for his reccomendation on which cut of meat was best for Carne Asada. I don't speak spanish so I can't exactly tell you what I ended up with, but it was fantastic. If you have a market like this by you, it is totally worth the effort. I decreased the salt a bit after reading the reviews. I grilled these up and then sliced them to serve. Amazing! The relish is wonderful. The salsa is totally worth the effort. I only added one of the jalepenos to keep the heat down. Still a bit too hot for the kids though. The salsa makes a ton. (about a pint) I am going to store it so that I won't have to make it again next time. And I plan on making these again and again. My husband is already planning barbecues with friends, just as an excuse to have these again. I served it with the Mexican Corn on the Cob from this site. They compliment each other perfectly!

Fettuccine with Sweet Pepper-Cayenne Sauce

I used 1 red pepper and 1 green, but other than that, followed the recipe exactly. My husband and I both loved this recipe. I actually liked it even more the next day. My husband commented that it tasted like gourmet nachos... perhaps you could use a thicker version of the sauce as a dip! :)

Better Than Sex Cake II

I love this, its the only way I will eat chocolate cake!! My family has been making this for years! my dog even loves it (he jumped on the counter and ate the whole thing, we got scared and called the vet he is fine, just fat...er)

Too Much Chocolate Cake

This cake tasted very good. Really moist and tons of chocolate. I don't know if I did something wrong or if everyone else had the same problem but my batter overflowed in the oven ( I used a bundt pan) and then one side caved in after it was turned out onto the cake plate. I followed the recipe exactly so.... I will try again because it has great flavor, hopefully I will have better success.

Grilled Fish Tacos with Chipotle-Lime Dressing

I didn't get a chance to taste the fish as I made both this grilled recipe and panko breaded tilipia. The grilled was gone so fast! I was told it was great. The sauce was excellent! I couldn't find adobo sauce so I added tapatio hot sauce until it tasted spicy enough. Great recipe.

Black Bean And Corn Salad II

Kalua Pig in a Slow Cooker

Warm Greek Pita Sandwiches With Turkey and Cucumber-Yogurt Sauce

This recipe was just okay. Next time I would use less oregano and add a splash of lemon to brighten it up a bit. The sauce was, as my husband put it "dead on delicious" This is a good recipe to use up all your leftover turkey in a new and healthful way.

Whole Wheat Bread II

This recipe is awesome! I've made three batches in the past 24 hours and they've all turned out! I tweaked it by adding canola oil instead of crisco and my last batch I used honey instead of brown sugar and water. I've also been increasing the amount of wheat flour and decreasing the white flour just for the flavor. It hasn't affected the proofing and size of loaf. Not the "hard as a brick" wheat bread I'm used to making.

Pineapple Upside-Down Cake VII

This was amazing! I used an iron skillet and that made for an easy recipe. For some reason our cast iron was not big enough for the cake so I ended up making 6 cupcakes as well. I used a yellow cake mix and a fresh pineapple (cut into chunks) and I didn't use cherries cause I didn't have any. Came out easy and was really delicious.

Almond Crunch

I made four batches of this for christmas. I wanted to give it as gifts, but my family kept eating it all. I doubled the recipe and poured it into a large warmed jelly roll pan lined with parchment. I like it about 1/2 inch thick. No problems with sticking. I added crushed almond on top and 1/2 t. almond extract to the candy after I removed it from the heat. So fantastic. It will be a christmas tradition at our house.

Ciabatta Bread

I followed the recipe exactly. I also used a spatula as suggested and coated it with Pam. I also coated a metal spatula with Pam to cut it in half. I stretched the dough rather than shaped it. Spritzed it every three minutes for the first 9 minutes and it turned out PERFECT! Very chewy on the inside while being crisp on the outside. So good I had to make a second batch. Perfect again.

Bread Bowls

We really enjoyed these bread bowls but I thought that the outside should be a crispy instead of soft. I brushed the outside with egg white and reduced the sugar to 1/4 c. The flavor was great and we did not have any problems with them leaking. When I took out the "guts", I pressed the remaining insides to the edge to help reinforce the bowl. I served them with broccoli cheese soup which is thicker, don't think I would serve with a broth soup for fear of leaking.
