Sean's Falafel and Cucumber Sauce

Super easy and just as tasty! Like others, I baked instead of fried. Some of the best tzatziki sauce I've ever had! Served in a whole wheat pita with sauce, feta, lettuce, and tomatoes. Mmm!

Curried Coconut Chicken

We really enjoyed this. My 1 year old ate it really well. I followed the recipe exactly, except I forgot the sugar. Noticed it when Hubby was going back for seconds, so I added 1 Tbls then. Great either way. Didn't have any trouble with the sauce not thickening. I also ended up adding a cut up zuchinni with the chicken and chopped carrot - we love our veggies!

Big Al's K.C. Bar-B-Q Sauce

WOW! If you change the serving size to 18 you can use up one 8oz can of tomato sauce and you end up with about 2 cups of BBQ sauce.

Million Dollar Fudge

Okay, long story short, I overcooked the syrup mixture and the fudge turned out dry. I was about to toss it when I decided to experiment with trying to fix it. I cut/crumbled the dry fudge into a plastic mixing bowl and added one 14oz can sweetened condensed milk (NOT EVAPORATED MILK) and microwaved until warm, about 45 seconds. Then I stirred, and stirred and stirred until it looked creamy and smooth. Poured it into a 9x13 pan and held my breath. I can not believe that this actually worked. The end result is pretty good, though I believe some of the chocolatyness was lost in the rescue attempt, the texture is great. Beats throwing it out. I have made this recipe before as per the directions and it is a good one, just don't overcook the syrup!

Perfect Pumpkin Pie

Whit's Chicken Enchiladas

This is so good! I am officially tossing out my old recipe. We like red sauce so I added a small can of that over the top. Some people mentioned a problem with sogginess. The key is to bake uncovered until a medium golden brown. The leftovers (if there are any) are divine.

Indonesian Satay

Delicious and authentic. My family couldn't get enough. I was lazy, so I just used whole chicken tenders and marinated them longer (1 hour). This worked great.

BUSH'S® White Bean Hummus

Yum! I was looking for a way to use up some great northern beans and this was terrific. Even the kids loved it! I served it with warm pita bread. I used dried parsley, but next time I will use fresh. I can't wait to try it with the roasted red pepper variation.

I realize that I am the definate minority here, but these just didn't do it for me. I followed the directions exactly. Like many other reviews have stated, the butter was way too much. I would probably decrease the peanut butter as well. Just a matter of taste.

Salisbury Steak

My family really liked the steak part of the recipe, but the gravy wasn't exactly to our taste. We felt like the mustard powder was too strong. If I make this again, I think I'll use a different brown gravy recipe.

Buttery Soft Pretzels

What an awesome discovery! They turned out perfectly. I did have to add about 1/2 cup of water to the dough, but other than that I followed the recipe exactly. The kids loved to make the "snakes" and I twisted them into pretzel shapes. I baked them up on parchment paper so they wouldn't stick. Great recipe!

Pork Sausages with Caramelized Onion Sauce

This recipe was pretty good. Way too many onions for our family of six. I added pepper to the onions and once the sausages were browned I added them and the pan drippings to the onions and let them simmer together awhile. Served with mashed potatoes.

Buffalo Style Chicken Pizza

Overall, a pretty good quick and easy recipe. I think it is important to choose a dressing and hot sauce you love, because that is where most of the flavor comes from. I left out the butter because a few of the reviews mentioned greasiness. I felt like it needed some crunch, next time I will coat my baking pan with olive oil to crisp the bottom crust.

Raspberry Streusel Muffins

These were pretty good. Though I'm not sure they were worth the extra effort to make from scratch. I substituted 1 Tbl. of cornmeal for 1 Tbl. flour in the streusal topping. This gives a great texture to the streusel.

Quick and Easy Pizza Crust

This recipe is super easy and really tasty (not to mention fast). I always add a tablespoon or two of pizza seasoning to the crust, as it gives it an extra zip. This crust is equal to any of the double rise crusts I've tried and is ready in less than half the time!

Slow Cooker Chicken and Dumplings

What a pleasant surprise! I usually shy away form anything that starts out with "cream of whatever soup", but my entire family gobbled this up. I used the frozen chicken breasts that you can get at Costco. I am glad that I used water and not broth. I think the end result would have been too salty. I added three chopped carrots and a bit of garlic powder, parsley, pepper, and poultry seasoning. I only used one tube of biscuits and this was the right amount for us. I pressed the dough flat and cut into 6 pieces and it cooked perfectly in 1/2 and hour. This is so easy. Definately a keeper! Thanks!
