I liked this a lot! I used salsa that I canned myself. If you think it's bland, you might want to try a different brand of salsa.

Szechwan Chicken

We liked this, but it was too salty. I would use the reduced sodium soy sauce. The spice was just right if you don't like things too spicy. If I weren't feeding it to kids, I'd probably up the red pepper a bit. I'd probably try it again with those changes.

Pumpkin Rice Pudding

First of all, I'm a big fan of both pumpkin pie and rice pudding. I don't think this tastes like pumpkin pie and I didn't love the pudding. I made it exactly as written(4 cups of milk is not too much when using the right rice), but something in the pumpkin layer seemed off. I think it could have used more sugar and spices. I would taste the pumpkin half before baking it, and add whatever you think it needs.

Avocado, Tomato and Mango Salsa

Baked Pesto Chicken

This is good, but I would suggest marinating the chicken for a few hours before baking. Also, we like using feta cheese instead. Much more flavorful that way.

Whole Wheat Sweet Potato Muffins

Way too sweet as written. I use 1/2 cup of honey instead of 1 cup. I also use plain yogurt, and they're still plenty sweet. I never bother with the topping.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

I love the idea of these. I followed the recipe exactly, but wasn't too impressed. They turned out fine, and the kids thought it was really cool, but I couldn't really even taste the cookie dough.

Spooky Witches Fingers

These ended up being a lot of work, but they looked really gross (in a good way). They taste good too, if you can manage to eat one. Before shaping them all, I did a trial run, and baked just a few, so that I could get the size and shape just right, becuase they do grow while baking.

Thai Cucumber Salad

This salad is great. It's a must with Thai or Indian food. I prefer to use only 1/3 cup sugar. I always add chopped onion and sometimes omit the jalapeno depending on who I'm serving it to. Also, I skip the first step, I just throw it all together and add about 1 tsp of salt instead of 1 Tbls. I like to use the dry roasted peanuts.

Wow, very yummy! I was about to make a tuna fish sandwich and decided to check this site first for a unique recipe, This one seemed easy enough it was too! I cut serving size down to 2 and used a 5 oz can of tuna, came out perfect!

Annie's Fruit Salsa and Cinnamon Chips

This would be 5 star without the sugar. It's plenty sweet when coupled with the sugar coated chips. The chips delicious even alone. I've made this a few times. It's easy to substitute whatever fruit is availiable. It's always a hit.

Chocolate Scotcheroos

I made these for a bake sell, and people kept buying more and ranting and raving about them. I did what one reviewer suggested and used 1 1/2 c. of peanut butter, and doubled the chocolate, so a full bag of semi sweet and a full bag of butterscotch chips. Only thing is if your a new cook like me, I had no idea chocolate burns in the microwave, i stuck it in the first time for 5 minutes it wasn't melted put another 5 min on it and it burned, i'd do 5 min, then check it every minute, or just use a sauce pan. Also something I may try with this later on is instead of butterscotch chips, get a bag of andes mint pieces u can find in the baking section, and add a bag of those with the semi sweet choc chips, for a mint chocolate peanut butter treat!

Curried Coconut Chicken

Yum! My husband rates this as one of his top favorite dishes, especially when served with Thai cucumber salad. I used 2 Tbs of curry powder, as called for, but added a bit of curry paste for additional heat and flavor. As another reviewer stated, 6 chicken breast halves is the perfect amount of meat for the sauce.

Creamy Chicken Peanut Soup

This is one of my favorite soups. Perfect flavor, very smooth. I used one full 16 oz can of extra cruncy peanut butter, 3 t. of curry powder, and cut up some precooked Tyson grilled chicken strips that you can get out of the meat section from your grocer. Feel free to double the curry if you like a stronger curry taste. I also added 1 can of coconut milk instead of the cream. Anyways with those changes the soup is definitely a 5 star recipe and makes a very tasty meal.
