Easy Red Beans and Rice

Reviewed: Dec. 20, 2009
Great Recipe!! I added 1/2 t thyme, a dash of parsley, some celery salt, and 1/2 t cayenne pepper. I omitted the oregano and used mild italian sausage and stewed tomatoes. I used about twice the rice and it was just right. Make sure that you let the beans simmer for a while so they soak up the flavor. Add a little water if you want it a little more saucy.

Butter Cream Frosting II

Reviewed: Nov. 25, 2009
I halved the recipe and used it on 12 cupcakes and an 8" square dish and it was plenty. I used 1 tsp vanilla and added the milk slowly until I got the consistency I wanted. Very easy to make which was very good for me.

Fresh Ginger Cookies

Delicious!!! I have tried to make ginger/molasses cookies and they always end up flat, but these were perfect. Unfortunately I had to do without the molasses on my first batch and substituted brown sugar for the white sugar... still delicious and perfect.

These are great! I ran out of time so I refrigerated half of the dough. They were very crumbly and hard to bake the next day, but the rest of the cookies were fabulous.

Emily's Famous Marshmallows

Reviewed: Jun. 12, 2009
I think I messed them up. I poured the gelatin liquid into the syrup and didn't see any explosion... Maybe I poured them together too fast because sugar clumps formed on the corners of the pan. I ended up scooping out the sugar clumps and continuing anyways. It still tastes good like marshmallows even with this weird mistake. Was I supposed to pour the syrup into the gelatin instead?? Or maybe just pour the gelatin a lot slower. I'm going to try some other flavorings next time.

Fluffy Whole Wheat Biscuits

I didn't have whole wheat flour so I just used white and they came out nice. I was a little worried with how sticky my dough was, but with a floured surface and rolling pin they didn't stick at all.

Tender, and smelled great while cooking, but INCREDIBLY bland. I made a gravy from the juice/drippings which made it tolerable, but I will not make this again.

Butternut Squash Soup

Reviewed: Feb. 21, 2009
The soup was very good, but I thought it was a little heavy on the cream cheese. Next time we'll only use one brick. I used one butternut and one acorn squash and baked them first (I didn't notice they would be boiled in the recipe) and then blended them with the cream cheese and added that to the broth. It came out incredibly creamy.

Easy Batter Fruit Cobbler

Reviewed: Oct. 10, 2008
This was incredible and was so easy to make. The batter was so quick to prepare and wasn't too sweet. I used about a quart of home canned peaches (drained) and sprinkled a bit of cinnamon on top before baking. Very good! I make this again and again and it's a big hit. This last time I ran out of milk and just used water and it turned out good too.
