Banana Banana Bread

Baking is not my strong suit, and this came out great for me. I used half spelt flour, and evaporated cane juice with a tablespoon of molasses, and the flavor and texture were wonderful. Because of the spelt flour, it did come out slightly more crumbly than a typical banana bread, but it still worked out great in this recipe. A definite keeper!

Apple-Cheddar Tossed Salad

This was a nice, simple salad, but the dressing as written would have been waaaay too sweet for my taste--and too much. I used half the dressing (with olive oil), which was just right, and less than half the honey, and I still thought it was too sweet. It blended fine with the salad (to which I added salt and more cheese to balance the sweetness), but the dressing by itself just tasted like honey to me--pretty bland for all the ingredients that went into it. Next time, I'll double the spices, vinegar, and lemon.

Spicy Cilantro Dressing

This is a nice, tangy dressing with a kick. I used only one jalapeno because I didn't use the mayo or sour cream, which would have cooled the heat--instead, I blended in half an avocado and then added olive oil until I got the right consistency. I think next time I'll use about half the Worcestershire; it was a bit strong in my version.

Oven Fried Sesame Potatoes

These were delish! Hubby especially loved them. I used olive oil and a lot more sesame seeds, then I turned the oven to broil for the last few minutes to brown the seeds. Great comfort food and so easy--a definite keeper!

Quinoa with Asian Flavors

This is a nicely flavored quinoa, but I like to have some variation in texture, so I added arame (seaweed) and avocado, which for me would make this 5 stars. I also used veg broth instead of chicken. Nice, easy recipe!

Zucchini Wrapped in Tortillas

This was good, but I thought the cinnamon, clove, and ginger were too strong for the delicate flavor of zucchini. I served it with spinach leaves on grilled naan bread, and it made a nice sandwich. Next time, I'll make it with just the cumin and mustard seed, and serve it on the naan bread, but with hummus. Thanks for the inspiration!

Mock Tuna Salad

I enjoyed this; hubby thought it was just OK (but he'd eat it if I made it again). It tasted more like tuna salad before I put it on the bread, but it's still a great sandwich filling. I added some kelp flakes to give it a bit of a "sea" taste. I'll definitely keep this.

Gulliver's Cream Corn

Amazing recipe. We followed it to a tee and it was outstanding. We used fresh milk and cream from the dairy and it was more like a main dish or dessert. To call it a "side dish" was an insult. People should follow the recipe before rating it, when you change it, add other ingredients and measurements, it is not the same recipe! I never add MSG and it is fabulous!

Zucchini and Onion Pancake

We really enjoyed the flavor of this. I didn't expect to get true "pancakes," so I just sauteed everything together in a big bunch and got it nice and browned. I used grapeseed oil instead of butter, and fresh oregano. Add some grated potatoes and this would make a delicious hash.

Spicy Strawberry Salad

Great salad, and so easy! I prefer dried fruit in salads, so I dehydrated the strawberries, and they were a perfect complement. I also subbed agave for sugar and used fresh garlic. This would also be great with spinach, and maybe some green onions or shallot. A new favorite!

Taco Rice

This was good and very simple. I made it with quinoa, fresh tomatoes pureed with tomato paste, and my own taco seasoning (green and red chili powder, cumin, garlic). Instead of cheese and sour cream, I mixed in fresh guac, and I added a splash of red wine vinegar and some roasted green chiles, which gave it a nice kick. This would be great in a burrito.

Rainbow Trout with Yogurt Sauce

This is delicious and so fast and easy! I used Greek yogurt for a thicker, tangier sauce, added a touch of garlic, and I was generous with the lemon pepper on the trout. The light sauce really complements the flavor of the trout, and I'm sure it would work with other light fish (catfish, tilapia, etc.). A definite keeper!

Pasta with Mushroom and Zucchini Sauce

This had a unique flavor and was very easy to prepare. I used the same ingredients (except I subbed a mix of almond milk and coconut milk for the cream, and I used spelt flour), but my process was different. I sauteed the veggies before pureeing them, and I pureed only about 3/4 of the mixture. It was much more thick than saucy, so I think next time I'll puree half, add some veg broth, and omit the flour. I also added fresh oregano and thyme--yum! I'll definitely make this again.

Spicy Southwest Chopped Salad with Salsa Verde

This salad was delicious! I used raw corn, omitted the chicken and the beans, and tossed the veggies with the salsa verde (which is what I'm assuming you're supposed to do, but the directions leave you hanging). Great flavor, nice texture, and very pretty--good for a party. If you've never had cotija, it's a very dry, mild, salty cheese; it reminds me of cheese curd. If you can find it, use it (but I wouldn't sub anything else)--it really adds to this salad.

Basil-Lime Sorbet

This is a nice, light dessert. The basil is noticeable but subtle. I used agave and water rather than simple syrup. This would also be delicious with fresh mint instead of basil, or orange and basil (with much less sugar, of course)--or lemon, honey, and mint! This is a great base for experimentation.

Black Bean, Corn, and Tomato Salad with Feta Cheese

This is a good combination of flavors with a nice, zippy dressing. I used half the lime juice and oil, and subbed roasted Hatch green chiles for the jalapeno. The feta is a great touch, and I like that the beans aren't the main feature.

Hot Banana Salsa

I served this with homemade cilantro-lime flax crackers, and it was a nice change. I pulsed it in the food processor to a chunky consistency. The market was out of habaneros, so I used a jalapeno and some roasted green chile, but it wasn't hot enough for me. You'll definitely need the habanero if you want this salsa hot. I thought the banana blended right in; it was the ginger that stood out.

Killer Artichokes

Oh my GOSH!! These were better than any artichoke that I have ever eaten. I used a lot more shallot and garlic so it was very thick butter. It was incredible!!! UPDATE: last time I added a pinch of smoked sea salt. I forgot it this time and it was "missing" something. If you get the chance to add a sea salt, it enriches it!
