Slow Cooker Chicken Parisienne

Reviewed: Oct. 9, 2006
This was extremely bland. I couldn't even eat it. My husband ate his plate, but only after he covered it in bbq sauce. The only reason I am giving this 2 stars is because the chicken came out really tender, and we were able to use it to make tostadas the next night.

Honey Wheat Bread I

Reviewed: Oct. 9, 2006
It's hard to rate a bread recipe, because a lot depends on how well you, as a cook, can bake bread. I'm not very good at it, but I am practicing, and this was a good recipe for a beginner. I wished I would have cooked mine longer, but that was the only thing wrong with it. It was a little dense for me, but probably because I used all purpose flour instead of bread flour. I will be trying this again to perfect my skills.

Green Beans with Cherry Tomatoes

Reviewed: Oct. 5, 2006
I probably would have given this recipe 4 stars, but I left out one (probably important) ingredient. I didn't have any basil, but besides that (and using grape tomatoes instead of cherry) I followed the recipe. I would make these again but I would leave out the sugar. Way too sweet. But it was a wonderful side dish. Very tasty, and if you cut back on the butter, a healthy and tasty way to eat your veggies!

Soy Ginger Salmon

Reviewed: Oct. 5, 2006
This was probably the best salmon I have ever made. I followed the recipe exactly, except for using the salmon filets from Costco. It was my first time broiling salmon, but it came out perfectly and it was so fast to make!! I thought the flavoring was perfect - enough to give it some extra kick, but not too much to over-power the salmon. Served it with the Green Beans with Cherry Tomatoes from allreicpes, and it was a wonderful, easy, fast dinner. This one is staying in my recipe box!!

Quiche Lorraine I

Reviewed: Sep. 25, 2006
I would give this 4 1/2 stars if I could...the leftovers were really good. I followed the advice of others and used 4 eggs and cut back on the milk. It was still really full - thank goodness I had a cookie sheet underneath or I would have had a huge mess!! I didn't have any swiss on hand, so I used up some cheddar and munster, which was really good. I would cut out the added salt next time - it was already quite salty from teh bacon and the cheese. I will definately make this again!

Spicy Italian Pork Cutlets

Reviewed: Sep. 11, 2006
I don't know if I did something wrong, but this took a long time to thicken up, so it ended up more of a tomato mush sauce. The taste was ok - I would give it 3 1/2 stars if I could. I probably won't make it again, but it was a nice change.

Dijon-Tarragon Cream Chicken

Reviewed: Sep. 8, 2006
I followed the advice of others, and doubled the sauce, which is a must. I also added mushrooms, and wished I would have added twice as many! I couldn't find any fresh tarragon, but read that it has an anise flavor, so I used fennel instead. It didn't really add anything, but it didn't take anything away, either. Served the chicken over fettucini noodles, and it made an easy weeknight dinner.

Asian Salmon

Reviewed: Sep. 8, 2006
I put this together to marinate in the morning, planning on cooking it that night. My husband had cravings for something else, so I ended up cooking it the next night. I was worried that it would be over-marinated, but I thought the flavor was perfect. I could still taste the salmon, but the marinade added a nice touch. I followed the recipe except for only doing half the amount of salmon but the full marinade. I did not make the rice, but the salmon was wonderful on it's own!

I must have done something wrong. I didn't marinate the fish, and maybe that was the problem.

Chicken and Red Wine Sauce

Reviewed: Aug. 9, 2006
I agree with others that this chicken was bit dry. I definately needed more sauce if you serve it over noodles like I did. I took the chicken out when it was done and tried to thicken the sauce, but for some reason, when I added a bit of flour, the flour would only clump up and not mix in. That was just an error on my part, I'm sure. I liked the flavor fine, but it was nothing spectacular. I know others complained of it being too sweet, but I actually added a little bit extra brown sugar and it was not too sweet for me.

Black Bean And Corn Salad II

Reviewed: Jul. 28, 2006
I really enjoyed this. It was great as a salad, but served it with fajitas, and it was great as a topping! Would also be wonderful as a dip with tortilla chips. I scaled this down to 3 servings, but it still made a ton.

Mom's Sour Cream Chicken

Reviewed: Jul. 28, 2006
I thought this was actually quite bland. My husband liked it, but I would not make it again. I ended up adding a lot of extra pepper, serving it over orzo and sprinkling parmesan cheese on top. It was edible, but nothing I would rave about. Definately tasted more like mustard chicken than sour cream chicken.

Burgundy Pork Tenderloin

Reviewed: Jul. 11, 2006
I was suprised at good this actually was. When I got it out of the oven, it did not look very appetizing, but looked much better when it was sliced. The gravy also did not look very appetizing because of the color, but once again, tasted quite good. I scaled the recipe down because my tenderloin was 1 1/2 lbs, but still used the whole gravy mix.

Chicken and Mushroom Saute

Reviewed: Jul. 10, 2006
The chicken is super moist and tender with this recipe. The only problem I had was thickening the sauce. I made it as directed the first time (except for adding fresh mushrooms instead of canned) and it never thickened. I threw it out and tried again with milk instead of water, which worked a little better, but not the "gravy" consistency I was looking for. But it still tasted excellent and we ate it all! Served it over fettucini we had left over in the fridge.

Bob's Mexican Stuffed Chicken

Reviewed: Jun. 21, 2006
I made this awhile ago, and forgot to rate it!! I thought this was just ok. I had a hard time "stuffing" the chicken, and had a lot of filling left over. Maybe I did something wrong, since no one else seems to have had that problem. It was good enough to eat, but not something that I will crave to make again.

Ginger Glazed Mahi Mahi

Reviewed: Jun. 8, 2006
I would rate this 4 1/2 stars if I could. It was very tasty! My husband is not a big ginger fan, so I was afraid he would hate it, but he absolutely loved it! I will definately make this again. Really easy and pretty fast. Not bad for a weeknight meal, but fancy enough to even make for company! I just used the frozen mahi mahi filets that you can get at Costco and it worked perfectly.

Sauteed Garlic Asparagus

Reviewed: Jun. 8, 2006
This was not as flavorful as I had hoped for. I only cooked mine for the 10 minutes it said in the recipe, but the asparagus was overcooked for my taste. It was extremely easy and fast, but quite plain to me.

Baked Ziti III

Reviewed: Jun. 1, 2006
This was really tasty and really easy. I did not add the parmesan or basil (I didn't have either on hand) but just added shredded mozzarella to the top. A really quick fix as well, besides the 30 minutes it takes to bake. Great for a weeknight.

Easy Decadent Truffles

Reviewed: Feb. 14, 2006
These taste amazing. They are very simple to make, although rolling them into balls is a little bit time consuming. I was hoping to get 60 out of the batch, but only ended up with about 45. I followed the advice of others and used 2 c. powdered sugar and 2 c. chocolate chips. I also used milk chocolate chips as I prefer the milk chocolate. I split it into 3 and did mint flavoring, rolled in powdered sugar, almond flavoring rolled in chopped almonds, and coconut flavoring rolled in coconut. I can't decide which is my favorite! I did have to leave it in the frige for an hour (I probably would have let it stay in there longer if I had the time.)

Beef and Bean Chimichangas

Reviewed: Feb. 14, 2006
I was hoping these would be a little bit crispier, but I guess frying is the only way to get the crispiness you expect from chimichangas. The taste was good, I followed the recipe except I omitted the green pepper because I did not have one, and I used pepper jack cheese to give it a little zing. The leftovers look a little soggy, but I will try one today for lunch to see how it is. Overall, a decent weeknight meal.
